  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

  • Boil cranberry juice in heavy large saucepan until reduced to 1 cup, about 50 minutes. Place cranberries in large bowl; pour hot reduced juice over. Stir to coat. Cool. (Can be made 3 days ahead. Cover and refrigerate. Remove from refrigerator 1 hour before serving.) Just before serving, stir grapes, lemon juice, and peel into cranberries.

  • Bring to a boil. Then, reduce heat and simmer for about 10-12 minutes, until thickened and cranberries have burst. The grapes may not burst entirely at this point.

1 cup red seedless grapes
2 bay leaves
1 pound cranberries, thawed if frozen
1 3/4 cups sugar
1/2 cup grape juice

  • Melt the butter in a medium saucepan over medium-high heat. Add the grapes and bay leaves and cook, stirring occasionally, until the grapes begin to split, 3 to 5 minutes. Add the cranberries and stir to coat. Add the sugar, grape juice, 1/2 cup water and a pinch of salt.
  • Bring the mixture to a boil, then reduce the heat to a simmer and cook, stirring occasionally, until the cranberries burst and the sauce thickens, about 20 minutes. (If the berries aren't bursting after 15 minutes, gently smash with a spatula.)

1 cup cranberry juice
1 cup pure maple syrup
3 tablespoons orange juice
1 tablespoon orange rind

Steps:

  • Wash the cranberries under cool water, then throw into a medium saucepan.
  • Pour in the cranberry juice and maple syrup. Add the orange juice and orange rind.
  • Stir together and turn the heat on high until it reaches a boil and the berries begin to pop.

1 medium orange, finely zested, divided

⅛ teaspoon cinnamon (such as Supreme Saigon®)

Steps:

  • Combine orange juice and both sugars in a saucepan over medium heat and allow the sugar to melt down. Add cranberries, 3/4 of the orange zest, and crystallized ginger.
  • Cook sauce, mashing down berries, over medium-low heat for 10 minutes.
  • Meanwhile, toast pecans in a small skillet over medium heat until fragrant, 2 to 3 minutes. Set aside.
  • Stir cinnamon and chopped pecans into the cranberry sauce until well combined. Transfer cranberry sauce to a serving dish and top with remaining orange zest.

1 (6 ounce) package of grape jello (any flavor will work great, so pick your favorite)
1 (16 ounce) pint of sour cream
3/4 cups water

  • Bring water to a boil. Stir in the jello until dissolved. Chill in fridge for 30 minutes. In a blender, blend cranberry sauce until smooth. Add to blender jello, and sour cream.   • In a medium bowl, mix cranberries and sugar. In the refrigerator, allow the mixture to stand 4 hours.
  • Place cranberry and sugar mixture in a colander. Place colander in a large bowl. Allow the mixture to drain 8 hours, or overnight.

1 (12 ounce) package fresh cranberries
3/4 cup ruby red grapefruit juice
1/4 cup lemon juice
1 tablespoon lemon zest
1 cup granulated sugar
1/4 teaspoon ground allspice

Steps:

  • Combine juices, sugar and allspice in pot over medium heat till sugar is dissolved.
  • Add lemon zest and cranberries.
  • Simmer till cranberries pop. (sometimes the harder berries don't want to pop so I'll give them a helping hand with side of wooden spoon just before I'm ready to take off stove.).
  • Stir frequently so sugars don't scald and burn in bottom of pot.
  • When all the berries are popped and sauce is nice and thick remove from heat and cool.
  • Refrigerate in nonreactive sealed container when cool.
  • Can be served hot or cold.
  • If you are canning them you need to keep them hot during the canning process. Refer to any canning cookbook for proper canning techniques.
