CRANBERRY BOG TURKEY BURGERS
This recipe came from an episode of Rachel Ray's "30 minute meals" with a few personal changes. They are very easy to make on the George Foreman grill.

- Preheat George Foreman grill or grill pan to medium high heat. Combine first seven incredients and form into 5 patties. If not using George Foreman, drizzle grill pan or brush grill with vegetable oil. Cook patties 5 to 6 minutes on each side. Microwave cranberries for topping with splenda and water in a covered dish for a 2 or 3 minutes on medium heat (until they have popped and the water has reduced. Cool mixture and stir into yogurt or mayonnaise.
- Rachel Ray suggests serving burgers on sourdough english muffins but they are fine on any kind of bread or just plain!

THANKSGIVING TURKEY BURGER WITH CRANBERRY-MAYO
Enjoy the flavors of TG in every bite of these yummy Thanksgiving Turkey Burgers! The creamy cranberry-mayonnaise is wonderful; if you desire a spicier/hotter version mix in a spoonful of chopped chipotle peppers to the sauce (adjust amount to your taste). Great!

- In a large bowl combine the ground turkey, prepared stuffing, cheese, dried cranberries, and egg (add salt and pepper, if needed). Mix thoroughly.
- Divide into four equal portions, and shape into four patties.
- Heat oil in a large frying pan over medium-high heat.
- Cook the patties until golden brown, about 5 minutes per side.
- In a small bowl, stir together the mustard, mayonnaise and cranberry sauce.
- Spread some cranberry mayonnaise mixture on the inside of the warmed buns.
- Assemble your burgers with the lettuce and top patties with additional cran-mayo, as desired.
- Enjoy! Goes nicely with a side salad or veggies and sweet-potato fries.

- Mix together the turkey, onion, sage, bread crumbs, cranberry sauce, and salt and pepper.
- Mix in egg white.
- Press into 4x4 inch rounds, about 3/4 inch thick.
- Chill the burgers for 30 minutes.
- Brush burgers with oil and place on grill or under preheated medium broiler.
- Cook for 10 minutes.
- Turn the burgers over and brush again with oil.
- Cook for another 12-15 minutes until cooked through.
- Fill the burger rolls with lettuce, tomato, and a burger, and top with cranberry sauce.

BUILD YOUR OWN CANADIAN CRANBERRY AND HERB TURKEY BURGERS!
Build your own burger - the recipe here is for a low-fat cranberry and herb turkey burger, with LOTS of options! Plump semi-dried Canadian cranberries and fresh chopped herbs are added to lean, low-fat turkey mince for a moist and flavourful burger, and without the guilt! I have offered the bacon, cheese, assorted condiments and the burger bun as an option; if you are REALLY watching your calories and fat intake, just go with the plain burger and a lovely crispy mixed salad on the side. Turkey mince can be a little bland, so the addition of the herbs and cranberries adds a real flavour injection. Try to use freshly chopped herbs for the best flavour, if you do use dried herbs, reduce the quantities by half, as dried herbs are more pungent than fresh. If you prefer a slightly sweeter taste, use Craisins, the sweetened dried cranberries that are available in North America and Canada; this recipe has been posted as a thank you to a Canadian friend on Recipezaar, who kindly sent me some Craisins, along with lots of other Canadian goodies! - If grilling the burgers, preheat grill to medium-high. (You can also pan-fry or barbeque these burgers.).
- Meanwhile, heat oil in a large frying pan/skillet over medium heat, or spray three or four sprays of low fat spray. Add the diced onion and cook, stirring, for about 5 minutes. Add the thyme, sage, salt and pepper; cook until fragrant, for about 30 seconds more.
- Transfer the mixture to a large mixing bowl and add the breadcrumbs and cranberries, stir to combine. Let the mixture cool for 5 minutes. Add the turkey mince and stir until combined; do not overmix. Form the mixture into 6 burgers/patties.
- To cook on the stovetop: Coat a large nonstick frying pan/skillet, preferably cast-iron, with cooking spray and set over medium-high heat for 2 minutes. Add the burgers/patties, reduce heat to medium, and cook for about 5 minutes. Turn and cook on the other side for about 2 minutes. Cover and continue to cook until lightly browned but still juicy (the juices should run clear, not pink), about 3 - 4 minutes more.
- To grill: Oil the grill rack and grill the burgers for 5 to 6 minutes per side, flipping gently to avoid breaking them.
- Serve the burgers immediately, inside a burger bun with the optionial extras and condiments as suggested. A mixed salad is also a great accompaniment.
- NB: If using the bacon or the cheese slices, grill or fry the bacon slices for about 2 to 3 minutes beforehand and then place the bacon or cheese slice on top of a cooked burger for the last 2 - 3 minutes of grilling or cooking time.

TARRAGON TURKEY BURGERS
I came up with this healthier alternative to burgers which highlights the flavor of fresh tarragon - the bread and milk "panade" helps keep the meat moist and flavorful so you can be sure to cook the lean turkey completely. These burgers are wonderful topped with fresh leafy lettuce and served on a soft roll (we loved Recipe #135870). A spoonful of bearnaise sauce (like Recipe #269347), while not doing much for the calorie-count, makes an amazing condiment!

TURKEY AND BEEF MEATLOAF
My intent was to make Cranberry Bog Turkey Burgers, ala Rachael Ray. Upon discovering that I had defrosted both beef and turkey rather than 2 pounds of turkey, I took her recipe and added my own twists to make a tender and moist meatloaf. The listed amounts of spices and herbs yield a mild flavor so if you like more punch, you'll want to increase them. For better slicing, let the loaves rest after baking or they will crumble under your knife. Mashed potatoes and cranberry sauce make great side dishes with this recipe.

- In a large bowl, mix the beef, turkey, poultry seasoning & parsley. Set aside.
- In a small bowl, slightly beat the eggs then stir in the milk. Submerge the bread cubes, mixing gently to break them up.
- In a medium fry pan, melt the butter then add the apple, onion & celery. Sprinkle with salt & saute until the onions are translucent.
- Stir apple, onion, celery mixture into the meats then add the bread, milk & eggs.
- Work the mixture gently (I use my hands) until well combined.
- Divide in half & shape 2 loaves in a 9X13" baking dish.
- Tent with foil and bake in a 350º oven for 45 minutes.
- Remove from oven, pour off juices and reserve.
- Return loaves to oven (minus their tent) for another 15 minutes or until juices run clear. Let rest for 5-10 minutes while you make the gravy.
- Gravy:.
- Strain reserved pan juices and if needed, add water to equal 1 cup.
- Pour drippings & water into the pan you used to saute the apples/onions/celery. Whisk in the flour.
- Cook and stir over medium low heat until gravy thickens. Stir in the ground thyme & cook for 2-3 minutes more. Salt and pepper to taste.
- Slice the loaves into portions, top with the gravy and serve.
