ROASTED GARLIC IN THE MICROWAVE
Steps:
- Cut the top off the garlic so that the tops of the garlic are exposed in the cloves.
- Put it in a small shallow dish, cut side up.
- Add the water around the garlic.
- Generously drizzle olive oil over the top so that the garlic has been completely covered.
- Set the microwave to 40% power.
- Cook for 5 minutes.
- As soon as the garlic is done, remove it from the microwave.
- Using a potholder or towel, remove the garlic from the bowl and gently squeeze the garlic from the cloves into a clean bowl or plate.
- Use it immediately or store it in olive oil in a sealed container for up to a week.

- Heat the oven to 180C/160C fan/gas 4. Cut the top off the garlic bulb, exposing the tops of the garlic cloves. Put on a small square of foil, and rub with the olive oil. Season with salt and pepper. Scrunch up the foil to seal in the bulb.
- Roast for 25-30 mins until soft when pressed, and the papery casing is light golden. Leave to cool for a few minutes before squeezing the soft roasted garlic out of their shells. Alternatively, take off all the papery casing and remove the cloves individually.

Steps:
- Cut tips off whole garlic heads, keeping heads intact.
- Place all ingredients in a 4 cup glass measure.
- Cover tightly with microwave plastic wrap.
- Cook at 100% for 6 to 8 minutes, longer if bulbs are large.
- Remove from oven.
- Let stand, covered, for 10 minutes.
- Peel when cooled.
- Refrigerate any leftovers.

- Place the garlic in a microwave-safe bowl and add enough oil to cover (at least 3 tablespoons). Microwave for 1 minute, then stir. Repeat, stirring and microwaving in 30-second increments until the garlic begins to brown. Then repeat, stirring and microwaving in 15-second increments, until the garlic is a deep gold. (This could take between 2 and 4 minutes total, depending on your microwave.) In a sieve set over a bowl, drain the garlic, reserving the oil. Transfer the garlic to a plate lined with paper towels and season with a pinch each of salt and sugar. Set aside to cool.
