Provided by Ina Garten

Categories     side-dish

Time 1h15m

Yield 1 loaf

Number Of Ingredients 9

4 cups all-purpose flour, plus extra for currants
4 tablespoons sugar
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
1 3/4 cups cold buttermilk, shaken
1 extra-large egg, lightly beaten
1 teaspoon grated orange zest
1 cup dried currants

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
  • Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
  • With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
  • Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. • Cool on a baking rack. Serve warm or at room temperature.

MAUD HERLIHY'S IRISH SODA BREAD

Maud Herlihy's Irish Soda Bread image

Maud Herlihy's Irish Soda Bread is a St. Patrick's Day classic. Bill Herlihy, the executive in charge of "The Martha Stewart Show," shares a recipe from his mother, Maud.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Yield Makes 1 loaf

Number Of Ingredients 11

3 1/2 cups all-purpose flour, plus more for work surface
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, cut into small cubes and frozen, plus more, softened, for skillet
1 (8-ounce) container sour cream
1 large egg
2 cups raisins
1 cup buttermilk
Caraway seeds (optional)

Steps:

  • Preheat oven to 375 degrees with a rack set in lower third of oven. Lightly butter a 10-inch round cast-iron skillet; set aside.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add butter, sour cream and egg; mix, using a pastry blender, until mixture resembles coarse crumbs. Stir in raisins, buttermilk, and caraway seeds, if using, and mix until a sticky dough forms.
  • Turn dough out onto a lightly floured work surface. Using a floured bench scraper, form into a round loaf; using a sharp knife score a large "X" in the center.
  • Place in prepared skillet and transfer to oven. Bake until loaf is golden brown and a toothpick inserted into the center comes out clean, about 1 hour. If top begins to brown too quickly, loosely cover with a piece of parchment paper-lined aluminum foil. Transfer to a wire rack to cool.

REAL IRISH SODA BREAD

Real Irish Soda Bread image

I have never found an Irish Soda Bread recipe (or commericially available loaf) that can hold a candle to this recipe. It is simple to make and you can also mix the dry ingredients, add a hang-tag listing the wet ingredients and baking instructions and you have an outrageously good gift. This is an absolutely authentic Irish recipe, and if you have never had a Soda Bread with fruit or caraway, it is probably due to the baker's preference to omit it, cost cutting measures or the way in which this recipe is prepared in a few regions of the country. Note: If you don't like caraway seeds, currants or raisins, don't add them. And don't overmix this dough. I blend wet and dry ingredients with a large spooon only until incorporated. Also, if like Pretty111, you provide a low-star review because you THINK the recipe isn't traditional, don't bother. This recipe is not listed as "traditional", just delicious. I think that if you do not try a recipe, you have some nerve giving it a low-star review. It is just unfair.

THE BEST IRISH SODA BREAD

The Best Irish Soda Bread image

We prefer the slightly sweet American version of this classic Irish quick bread, so we added dried currants and a small amount of sugar. Buttermilk and baking soda give the loaf plenty of lift and butter gives it a moist crumb.Yield: 1 loaf

Provided by Food Network Canada

Categories     bake,bread

Time 1h15m

Number Of Ingredients 10

3 ½ cups all-purpose flour, plus more for work surface (see Cook's Note)
3 tbsp sugar
1 tbsp baking soda
1 tsp kosher salt
4 tbsp (1/2 stick) cold unsalted butter cut into cubes
⅔ cup dried currants
1 tsp caraway seeds
1 ¼ cups buttermilk
1 large egg
Irish butter, for serving

Steps:

  • Preheat the oven to 375°F. Line an 8-inch round cake pan with a large sheet of parchment paper, pressing it into the edges of the pan and leaving an overhang on 2 sides (the extra parchment will help you unmold the loaf later).
  • Whisk the flour, sugar, baking soda and salt together in a large bowl. Add the butter cubes to the flour mixture and toss to combine. Use a pastry blender or your fingertips to cut or rub the butter into the flour until the mixture resembles coarse meal. Stir in the currants and caraway seeds.
  • Whisk the buttermilk and egg together in a separate bowl or liquid measuring cup. Make a well in the center of the dry ingredients and pour the buttermilk mixture into the center. Use a wooden spoon or rubber spatula to stir the mixture until it starts to come together in a shaggy mass.
  • Lightly dust a work surface with flour. Turn the dough mixture out onto the floured surface and knead a few times to bring it together. Shape it into a domed disk. Place the dough into the prepared cake pan and cut a cross about 1/2-inch deep into the surface of the dough with a sharp knife. Bake until the top is puffed and lightly browned and a cake tester comes out clean, 60 to 75 minutes. Remove from the oven and use the parchment overhang to lift the bread from the pan. Place on a wire rack to cool completely. Serve with good Irish butter.
