CRACKED WHEAT OAT BREAD
This is my family's favorite bread. Cracked wheat and oatmeal make it a delicious and hearty loaf that's great for any kind of sandwich.

Steps:
- Place water and cracked wheat in the pan of the bread machine; let soak for 1 hour.
- Place remaining ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start.

CRACKED WHEAT BREAD (FOR BREAD MACHINE)
This recipe was in the booklet that came with my bread machine 12 years ago. A delicious bread. Preparation time is hands-on time and does not include the time in the bread machine. Baking time is for if you bake in the oven.

Steps:
- Add ingredients to bread bucket in order recommended by the manufacturer.
- Select desired setting. I use the dough setting on my machine. Press "start".
- If you used a regular setting, remove the finished bread when it is finished baking.
- If you used the dough setting, dump the dough onto a floured countertop when the cycle is finished, knead a few times to remove air bubbles, shape into a loaf and place in greased loaf pan. Let rise until doubled or at least somewhat bigger, about 1 hour.
- Bake for 35 minutes in oven preheated to 400ºF.

- Combine the cracked wheat and boiling water and set aside until cooled and most of the water has been absorbed.
- In the bowl of a stand mixer or a large mixing bowl, combine the 1/2 cup of warm water with the yeast. Add 1/2 cup bread flour and mix to form a thick batter. Cover the bowl and let the batter rest for 30 minutes while the cracked wheat cools. With the mixer running on low, add the cooled cracked wheat along with the soaking water. Add the salt, honey and whole wheat flour. Mix to combine.
- If using a stand mixer, switch to the dough hook. Add the remaining bread flour, 1/4 cup at a time, until the dough gathers around the hook and cleans the sides of the bowl. If working by hand mix in as much flour as you can then turn the dough out onto a floured surface and finish kneading in the flour by hand. Knead the dough for 2-3 minutes. Form the dough into a smooth ball
- Place the dough into a lightly oiled bowl, turn once to coat the dough. Cover the bowl with plastic wrap and set aside in a warm place until doubled in volume, about 1 - 1 1/2 hours. At this point the dough can be refrigerated for up to 2 days.

- In a small saucepan, bring water to a boil. Pour boiling water over cracked wheat in a small bowl; stir. Let cool to 120 to 130 degrees F.
- Meanwhile, stir together 1 cup flour, sugar, yeast and salt in the bowl of a stand mixer. Add oil and cracked wheat mixture. Stir with paddle attachment on medium speed 4 minutes.
- Gradually add remaining flour. Knead with dough hook on low speed 5 to 7 minutes until dough is smooth and elastic. Transfer bread to a lightly oiled bowl; turn to coat. Cover and let rise in a warm place 1 hour until doubled.
- Punch down risen dough. On a lightly floured surface, roll out dough to a 14-by-7-inch rectangle. Roll up from the short end into a tight log; pinch seam to seal. Transfer log to a lightly greased 9-by-5-inch loaf pan. Cover and let rise 1 hour until doubled.
