This easy-on-the-pocket salad beautifully dresses up economical imitation crab. My husband's grandmother gladly shared the recipe. -Barb Stanton, Winona, Minnesota

1 package (16 ounces) medium shell pasta
1 package (16 ounces) imitation crabmeat, flaked
3 green onions, thinly sliced
1/2 cup chopped carrot
1/2 cup chopped cucumber
1/2 cup chopped green pepper
1 cup sour cream
1 cup mayonnaise
1/3 cup sugar
1 tablespoon seasoned salt
2 teaspoons cider vinegar
1-1/2 to 2 teaspoons pepper
Leaf lettuce, optional

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place in a large bowl; add crab, onions, carrot, cucumber and green pepper. Combine the sour cream, mayonnaise, sugar, seasoned salt, vinegar and pepper; pour over salad and toss to coat. Cover and chill for at least 2 hours. Serve in a lettuce-lined bowl if desired.

salt and pepper to taste

Steps:

  • In a large bowl, combine onion, green pepper, celery and imitation crab meat.
  • In a separate bowl, mix together sour cream, mayonnaise, salad dressing, lemon juice, oregano, salt and pepper.
  • Pour the dressing mixture into the crab/vegetable mixture and toss lightly to combine. Cover and chill at least 2 hours before serving.

1/2 cup baby greens
2 lavash crackers
4 ounces Crab Salad, recipe follows
2 tablespoons wasabi-flavored sour cream (about 1/2 teaspoon per 1/2 cup of sour cream)
2 tablespoons grilled scallion oil (3 grilled and pureed scallions per 1/2 cup of oil)
Fresh cilantro, for garnish
1 wonton wrapper, fried and seasoned with Cajun powder
1/2 cup soy or tamari sauce
1 1/2 cups rice wine vinegar
1 large clove garlic, diced
1 1/2 tablespoon diced ginger
1 large shallot, diced
16 ounces Dungeness crabmeat, picked over for shells
1 red pepper, diced
1 yellow pepper, diced
1 green pepper, diced
1 red onion, diced
6 tablespoons non-fat mayonnaise
1 tablespoon crab boil seasoning

Steps:

  • Toss greens with Ginger Soy Vinaigrette. On a plate, place the hearts of palm into a triangle shape and place greens in the middle of the triangle. Place lavash cracker on top of the hearts of palm and the greens. Spoon Crab Salad onto the lavash, then spoon the sauce around the plate and garnish with fresh cilantro and wonton crisp.
  • Combine garlic, ginger, and shallot in a pan and saute until caramelized. Deglaze the pan with soy/tamari and vinegar, then strain.
  • Combine all ingredients in a mixing bowl and mix until the salad is fully combined.

For salad:
1/2 seedless cucumber
1 pound king crab legs, thawed if frozen
1/2 pound Napa cabbage, cored and thinly sliced (4 cups)
1/3 cup torn basil leaves
1/3 cup torn mint leaves
1/3 cup torn cilantro leaves
Equipment:
an adjustable-blade slicer fitted with 1/4-inch julienne blade

Steps:

  • Make dressing:
  • Bring vinegar and sugar to a boil in a small nonreactive saucepan, stirring until sugar has dissolved. Remove from heat and stir in garlic, red-pepper flakes, and 1/4 teaspoon salt. Cool to room temperature
  • Make salad while dressing cools:
  • Using slicer, cut cucumber lengthwise into long julienne strips, slicing until you reach core, then rotate cucumber a quarter turn and continue slicing and rotating until left with nothing but core. Discard core and pat cucumber strips dry.
  • Cut through crab shells with kitchen shears. Remove and coarsely shred meat.
  • Toss crabmeat with cucumber, remaining ingredients, dressing, and salt to taste.

  • Put crab meat in a mixing bowl and stir until crab has shredded into small pieces.
  • Add cream cheese, mix until well combined.
  • Add the remaining ingredients, mix until well combined.
  • Place in fridge until cold.
