1 tablespoon olive oil
1 tablespoon butter
3 garlic cloves
1/2 teaspoon salt
1 1/2 cups long-grain white rice
2 1/4 cups reduced-sodium chicken broth
1 1/2 cups fresh peas or 1 1/2 cups thawed frozen peas
1/4 cup chopped flat leaf parsley
fresh ground black pepper

Steps:

  • Put olive oil and butter in a 10-in. frying pan over medium-high heat. Cook until butter melts.
  • Add garlic and salt and cook, stirring, until fragrant, 1 to minutes.
  • Add rice and cook, stirring, until rice is opaque.
  • Add broth, stir and turn heat to high. Bring to a boil, cover, reduce heat to low, and simmer undisturbed while rice absorbs liquid, about 15 minutes (then remove cover to check).
  • Remove cover, quickly add peas (leave peas on top, do not stir), and return cover. Take off heat and let sit 5 minutes. Remove cover, add parsley, and fluff with a fork. Serve hot, sprinkled with pepper to taste.

This is one of the first solid food entrees for many Italian children. It is one of my favorites and I continue to eat it today, at 35 years and counting!

1 quart chicken stock (recommended: Kitchen Basics brand) available in paper box containers on soup aisle
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 cloves garlic, chopped
1 rounded cup Arborio rice
Salt and pepper
1 cup frozen peas
1/2 cup grated Parmigiano-Reggiano or Romano cheese, a couple of handfuls

Steps:

  • Place chicken stock in a small pot and warm over low heat.
  • Heat a medium sized skillet over medium heat. Add extra-virgin olive oil 2 turns of the pan, and garlic. Saute garlic 1 minute, then add Arborio. Toast the Arborio rice 2 minutes, then ladle in 1/3 of the stock. Bring to a bubble. Stir rice occasionally, allowing the rice to get starchy and the stock to cook into the rice. Add more stock when rice starts to become dry. Continue stirring and ladling broth until rice is al dente, 22 minutes. Stir in peas and cheese and season with salt and pepper, to your taste. Serve immediately.

2 teaspoons chicken bouillon granules
1 tablespoon butter
1 cup uncooked long-grain white rice
2 tablespoons butter
1 (10 ounce) package frozen peas, thawed
3 tablespoons grated parmesan cheese
1 1/4 teaspoons salt
1/8 teaspoon pepper
4 slices bacon, cooked and crumbled

Steps:

  • In a saucepan add bouillon crystals and 1 Tbs butter to 2 cups water and bring to a boil.
  • Lower heat to low, stir in rice and simmer, covered, about 20 minutes.
  • Add 2 Tbs butter, peas, salt and pepper; if necessary, add a little more water.
  • Increase heat to medium and cook about 10 minutes until peas and rice are cooked and water is absorbed.
  • Add bacon, mix light and cook another minute or so just to heat through.

2 tablespoons extra-virgin olive oil
1 large clove garlic, finely chopped
1 small onion, finely chopped
1 cup arborio rice
Salt and pepper
1/2 cup dry white wine
3 to 4 cups chicken stock, 1 quart size box, available on soup aisle of the market
1/4 to 1/3 cup grated Parmigiano, a generous handful
2 tablespoons chopped flat-leaf parsley
1 cup tiny frozen peas

Steps:

  • Heat a medium skillet over medium high heat. Add extra-virgin olive oil and garlic and onion and saute, stirring constantly 2 to 3 minutes then add rice and season with a little salt and pepper. Cook another minute or so then add wine and let it completely absorb, 30 seconds. Add about 1 cup chicken stock and stir. Reduce heat a bit to medium. Stir often and continue adding a half cup of liquid each time liquid becomes completely absorbed. Cook 22 minutes, using as much stock as is necessary to result in creamy-consistency rice with a bite to it.
  • When rice is cooked to desired consistency, remove from heat and stir in cheese, parsley and peas and stir to combine and to heat peas through.

7 cups vegetable stock
3 tablespoons butter, divided
2 tablespoons extra-virgin olive oil, divided
1/3 cup minced onion
1/4 cup diced pancetta (about 2 ounces)
2 cups arborio rice (about 14 ounces)
4 cups shelled fresh or thawed frozen peas
1/2 cup finely grated Parmesan
2 tablespoons finely chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper

Steps:

  • Bring stock to a simmer in a small saucepan. Cover and keep warm. Melt 2 tablespoons butter with 1 tablespoon oil in a large heavy pot over medium heat. Add onion and sauté until soft (do not brown), about 5 minutes. Add pancetta and cook until light brown, about 3 minutes. Add rice and cook, stirring until coated, about 1 minute. Add 1 cup stock. Stir constantly with a wooden spoon until stock is almost absorbed, about 1 minute. Continue adding stock by the cupful in 5 more additions, stirring constantly and allowing stock to be absorbed between additions, until rice is almost tender. Add peas and remaining cup of stock and cook, stirring constantly, until the rice is creamy and tender but still firm to the bite, about 22 minutes total. Stir in 1/4 cup hot water if rice seems dry.
  • Remove pan from heat. Stir in the remaining 1 tablespoon butter, 1 tablespoon oil, Parmesan, and parsley. Season rice and peas with salt and pepper. Transfer to serving bowls or plates, and serve.

1/2 cup finely chopped celery, including leaves
salt
fresh ground black pepper
8 cups chicken stock or 8 cups canned low sodium chicken broth
1 cup arborio rice (or other Italian short-grain rice)
1/2 cup grated parmigiano-reggiano cheese

Steps:

  • Heat the olive oil and butter in a 4 to 5 quart pot over medium heat until the butter is foaming.
  • Stir in the onion and cook, stirring, until light golden, about 8 minutes.
  • Add in the garlic and cook until golden, 1-2 minutes.
  • Stir in the peas and celery; season the vegetables lightly with salt and pepper, and cook, stirring occasionally, until the peas are softened, about 5 minutes.
  • Add the chicken stock and bring to a boil over high heat.
  • Adjust heat to simmering and cook until the peas and other vegetables are very tender, about 20 minutes.
  • Stir in the rice and cook until tender, 12-14 minutes, stirring occasionally (for a firmer texture, cook the rice a few minutes less).
  • Remove the soup from the heat and check the seasonings, remembering the cheese will add a little saltiness.
  • Stir in grated cheese and serve immediately.

1 tablespoon olive oil
1 tablespoon unsalted butter
1/2 cup shallot, minced (or use mild onion)
1/2 cup celery, minced
2 tablespoons dry white wine
1 cup medium-grain risotto rice (superfino Arborio, Carnaroli, or Vialone nano)
2 tablespoons medium-grain risotto rice (superfino Arborio, Carnaroli, or Vialone nano)
3 cups meat stock or 3 cups vegetable stock
1 1/2 cups peas (fresh or frozen)
2 teaspoons unsalted butter
2 tablespoons heavy cream
1/4 cup parmesan cheese

Steps:

  • Set Rice Cooker for the quick cook or regular cycle.
  • Place the olive oil and butter in the rice cooker bowl.
  • When the butter melts, add the shallots and celery.
  • Cook, stirring a few times, until the shallots are softened but not browned, 2 to 3 minutes.
  • Add the wine and cook for a couple of minutes.
  • Add the rice and stir to coat the grains with the hot butter.
  • Cook, stirring occasionally, until the grains of rice are transparent except for a white spot on each, 3-5 minutes.
  • Add the stock and peas, if you are using fresh, mature peas; stir to combine.
  • Close the cover and reset for the Porridge cycle, or for the regular cycle and set a timer for 20 minutes.
  • When the machine switches to the Keep Warm cycle or the timer sounds, stir the rice with a wooden or plastic rice paddle or wooden spoon.
  • The rice should be only a bit liquid and the rice should be al dente, tender with just touch of tooth resistance.
  • If needed, cook for a few minutes longer.
  • This rice will hold on the Keep Warm cycle for up to 1 hour.
  • When ready to serve, add the peas, if you are using frozen or very tender fresh ones; stir just to combine.
  • Add the butter and close the lid or 2-3 minutes to allow to melt and the peas to heat through.
  • Stir in the cream, cheese and salt to taste.
  • Serve immediately.
