When we set out to make the "best" crab cakes, opinions in the test kitchen were strong and varied. But we could all agree on plenty of fresh, high-quality crabmeat with very little filler. After some tinkering, we created these decadent cakes-generously sized and highly seasoned-with plenty of lemon juice, fresh herbs and spices. The jumbo lump crabmeat is front and center, so splurge on the best and freshest you can find.

2 pounds fresh jumbo lump crabmeat, picked over for shells and cartilage
1 1/2 cups panko
1/2 cup mayonnaise
1/4 cup chopped chives
1 tablespoon Dijon mustard
2 teaspoons seafood seasoning, such as Old Bay
Kosher salt and freshly ground black pepper
Juice and zest of 1 lemon, plus more lemon wedges for serving
3 tablespoons unsalted butter
3 tablespoons olive oil
1 cup mayonnaise
1/2 cup chopped dill pickles (about 2 whole pickles)
1 tablespoon capers, chopped
1 tablespoon minced chives
Juice and zest of 1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • For the crab cakes: Gently fold together the crabmeat, breadcrumbs, mayonnaise, chives, Dijon mustard, seafood seasoning, 1 teaspoon kosher salt, 1 teaspoon freshly ground pepper and the juice and zest of one lemon in a large bowl. Refrigerate the crab mixture for 15 minutes to firm up; this allows the breadcrumbs to absorb some of the liquid, helping the crab cakes bind together.
  • Meanwhile, make the tartar sauce: Combine the mayonnaise, dill pickles, capers, chives, zest and juice of 1 lemon in a medium bowl and mix until combined. Season to taste with salt and pepper. Cover and refrigerate until ready to use.
  • Scoop heaping half cups of the crab mixture and pat into 2 1/2-inch wide patties. Lightly press them together so they do not fall apart while cooking. You should have 8 patties.
  • Heat 3 tablespoons unsalted butter and 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the crab cakes to the pan and cook until golden, about 2 minutes, then flip using a flat metal spatula. Continue to cook until lightly golden, about 1 1/2 minutes then transfer the pan to the oven. Cook until the crab cakes are completely heated through, about 10 minutes.
  • Serve the crab cakes with the tartar sauce and lemon wedges.

1 onion, finely minced
4 garlic cloves, finely minced
1 1/2 pounds jumbo lump crabmeat
1 1/2 cups fresh bread crumbs (made from 4 or 5 slices white bread with the crusts removed and processed in food processor)
2 tablespoons mayonnaise, plus more if needed
1 large egg white
1/2 lime, juiced
1/4 cup freshly chopped cilantro leaves, plus whole leaves, for garnish
Kosher salt and freshly cracked black pepper

1 recipe Garlic Aioli with Celery Root, for serving, recipe follows
Lemon wedges, for garnish
2 cloves garlic
1/2 cup sour cream
1 cup mayonnaise
1 tablespoon celery seed
1 lemon, juiced
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
About 2 cups shredded celery root, shredded using the grater attachment of a food processor or a mandoline
2 tablespoons freshly chopped chives

Steps:

  • Make the crab cakes first so they have time to firm up in the refrigerator before you cook them.
  • Heat a 2-count of olive oil in a frying pan over medium heat. Add the onion and garlic and cook for 5 to 7 minutes, until the onion gets kind of caramelized. Dump that into a bowl and fold in the crabmeat, bread crumbs, mayonnaise, egg white, lime juice, and cilantro, mixing just until well blended. Season with salt and pepper. Shape the mixture into 6 fat crab cakes. Put them on a plate, cover, and stick them in the refrigerator to chill.
  • To serve, heat a 3-count of olive oil in a large saute pan over medium heat. Add the crab cakes and cook for about 4 minutes each side until nice and crisp. Serve on torn butcher paper with fresh lemon wedges and Garlic Aioli with Celery Root.
  • Mince garlic and make into paste using the side of your knife. Hint: to make this go faster add a bit of salt to the garlic and continue mashing with the side of your knife.
  • Place the paste in a large bowl and add: the sour cream, mayonnaise, celery seed, lemon juice, and oil. Season well with salt and freshly ground black pepper. Fold in the shredded celery root and chives. Give it a final taste and adjust seasoning, if necessary.

2 potatoes
1 pound fresh Dungeness crabmeat

  • In a medium saucepan, boil potatoes in salted water to cover. Drain, and set aside.
  • In a medium saute pan, heat 2 tablespoons oil over medium heat. Add onion and pepper; cook and stir until tender.
  • Transfer potatoes to a large bowl, and mash well. Mix in cooked vegetables and crab meat. Season to taste with salt and pepper. Form into cakes about the size of hamburgers. Dip in beaten egg; roll in crumbs.
  • In a large, heavy skillet, heat oil over medium heat. Fry crab cakes in oil until golden brown, turning once.

Steps:

  • Place the 2 tablespoons butter, 2 tablespoons oil, onion, celery, red and yellow bell peppers, parsley, capers, hot pepper sauce, Worcestershire sauce, crab boil seasoning, salt, and pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature. In a large bowl, break the lump crabmeat into small pieces and toss with the bread crumbs, mayonnaise, mustard, and eggs. Add the cooked mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into bite-sized crab cakes.
  • Heat the butter and olive oil for frying over medium heat in a large saute pan. Add the crab cakes and fry for 4 to 5 minutes on each side, until browned. Drain on paper towels; keep them warm in a 250 degree oven and serve hot.

1/2 cup panko breadcrumbs
1/3 cup mayonnaise

1 teaspoon hot sauce, such as Tabasco
1 teaspoon Worcestershire sauce
1 large egg
4 tablespoons grapeseed oil
3/4 cup mayonnaise
1/4 cup buttermilk
1/4 cup sweet relish
2 tablespoons capers, chopped
Kosher salt and black pepper
1 tablespoon grapeseed oil
1 tablespoon chopped garlic
2 cups diced tomato
1 tablespoon chopped fresh tarragon
1 cup white balsamic vinegar

Steps:

  • For the crab cakes: Gently pick through the crab meat to remove any shell pieces. In a bowl, combine the crab and panko breadcrumbs and mix gently. In a separate bowl, add the mayonnaise, parsley, mustard, seafood seasoning, hot sauce, Worcestershire sauce and egg and whisk to combine.
  • Pour the crab cake base over the crab meat and mix gently by hand, trying to keep the pieces of crab together. Allow the crab cake mix to rest for 45 minutes in the refrigerator. Divide the crab cake mix into 12 portions and form into cakes.
  • Heat a skillet over high heat. Add 2 tablespoons of the oil and sear half of the crab cakes until golden brown, 2 to 3 minutes per side. Let the first batch rest while you cook the second batch with the remaining 2 tablespoons oil.
  • For the tartar sauce: Combine the mayonnaise, buttermilk, relish and capers in a bowl and whisk. Season with salt and pepper.
  • For the tomato relish: Heat the oil in a medium saucepan. Add the garlic and saute until softened, 1 to 2 minutes. Add the tomatoes and tarragon and cook until warmed through, 3 to 4 minutes. Add the vinegar and sugar and bring to a boil. Cook until the liquid is reduced to a syrup, 10 to 15 minutes. Season with salt and pepper.
  • For plating: Smear about 2 tablespoons of the tartar sauce on a plate. Shingle 2 crab cakes on top of the tartar sauce and then top the crab cakes with 2 tablespoons of the tomato relish. Repeat with the remaining crab cakes, tartar sauce and tomato relish.

  • Heat butter in a 12-inch heavy skillet over medium heat until foam subsides, then cook crab cakes, turning once, until golden brown, about 6 minutes total.

3 tablespoons diced red bell peppers

1 tablespoon dry sherry (optional)
1/4 cup heavy cream
1 large egg, beaten
1 pinch salt
1 pinch white pepper
1 dash Tabasco sauce
1 pinch celery salt
1/2 teaspoon paprika (preferably sweet Hungarian)
4 tablespoons butter or 4 tablespoons oil (or mixture of both)

Steps:

  • In bowl, mix together 3/4 cup of the panko, bell pepper, shallots, parsley, lemon juice, sherry, cream, egg, salt, pepper, Tabasco, celery salt and paprika.
  • Combine thoroughly.
  • Add crab and mix well.
  • Shape into 8 to 10 patties and coat with remaining panko.
  • Refrigerate until chilled, about 1 hour.
  • In skillet heat butter&/or oil over medium heat.
  • When nice and hot add crab cakes.
  • Sear until coating is golden brown and lightly crispy, about 3 to 4 minutes on each side.
  • Add more oil or butter as needed to the pan to prevent the cakes from sticking.

There's a local family-owned restaurant in town known for their crabcakes. My teenage niece said they were the only crabcakes she likes, until she tried these. These are even better.

1/3 cup red pepper, diced
1/3 cup celery, diced
1/3 cup yellow onion, diced

  • I've made the the day before and left in frig overnight.
  • Broil cakes for 3-4 minute.
  • or until browned.
  • Turn them over carefully.
  • I use a spatula and my fingers so they don't fall apart.
  • Broil other side for 3-4 minute.
  • I place them on a platter and garnish with parsley and lemon.
  • I serve cocktail sauce and tartar sauce with them.
  • I've also made the cakes much smaller and served them as appetizers.

She doesn't suggest any sauces to be served with this, as 'she likes them plain so you can taste the crab meat'. My first ever batch of crab cakes, from this recipe, were absolutely fantastic. Prep time includes sitting time.

1 lb crabmeat
4 -5 ounces white bread, grated
1 1/2 tablespoons chopped fresh herbs (I use parsley, chives, and a bit of cilantro)
1/2 teaspoon cayenne
1 tablespoon mayonnaise
1 tablespoon spicy horseradish mustard
1 egg
1 egg yolk
freshly cracked pepper
1/2 cup superfine cracker crumb
1/2 cup superfine breadcrumbs
2 tablespoons unsalted butter
1 lemon, cut into rings or wedges

Steps:

  • Place crab meat, bread, cayenne and herbs into bowl and combine.
  • In another bowl, whisk together the mayo, mustard, egg and additional yolk.
  • Season with pepper to taste.
  • Slowly pour dressing into the crab meat mixture, using a fork to gently lift and fluff the texture.
  • Use only enough liquid to cause the mixture to just cling together; don't overwork.
  • Form into cake about 3 inches in diameter and 3/4 inch high.
  • Lay onto plate, cover, and refrigerate for at least one hour, until firmed up.
  • To get superfine cracker crumbs and breadcrumbs, whir everything up in a food processor.
  • Before cooking, dip cakes into cracker crumbs to coat.
  • This prevents the crab meat edges from getting tough and chewy when sauteeing.
  • Heat butter in frying pan until foamy.
  • Add crab cakes, and let saute until browned on the bottom.
  • Turn them just once, and brown the other side.
  • Keep warm until all cakes have been sauteed.
  • Arrange on platter with wedges of lemon.
  • Please note that I served these on top of a bed of MEAN CHEF's Texas Caviar from the Cowgirl Hall of Fame Restaurant (#27742).
  • the flavors melded together perfectly, although you may want to make sure to not go overboard on the jalapenos, so as not to overwhelm the crabcake.

The crab cakes on the menu were from his Mom's recipe box. So very good...and the sauce below? Included as one that I use to compliment DuVall's crab cakes. 1/2 cup heavy cream
1/4 cup white wine, Riesling
2 -3 tablespoons lime juice

Steps:

  • In a large bowl, combine mayonnaise, onion, eggs, Worcestershire sauce, dry mustard, salt and cayenne.
  • Fold in crabmeat and 1/4 cup of cracker crumbs.
  • Shape mixture into 16 cakes about 1" thick. Coat crab cakes with remaining cracker crumbs and transfer to a baking sheet lined with waxed paper.
  • Refrigerate for at least 2 hours or overnight to "set" cakes.
  • *About 10 minutes before cooking cakes,* MAKE SAUCE.
  • Heat oil in small heavy sauce pan over medium-low heat.
  • Add chives and garlic; sauté until tender, about 3 minutes.
  • Add chili sauce and stir 1 minute. Immediately, add cream, wine and lime juice. Simmer until sauce is slightly thickened, about 5 minutes.
  • Remove from heat, cover and keep warm over hot water.
  • MAKE CRAB CAKES:(Handle crab cakes gently with wide-thin metal spatual, for best results).
  • When ready to serve:.
  • In cast iron skillet, melt 1 tablespoon of butter in 2 tablespoons of oil.
  • When foam subsides, add half crab cakes and cook over moderate heat until golden and crisp, 2-3 minutes per side.
  • Drain crab cakes on paper towels; then keep warm in a low oven.
  • Repeat with remaining 1 tablespoon of butter and 2 tablespoons of oil and cook the remaining crab cakes.
  • Serve with lemon wedges and Garlic-Chili Sauce.
