CHEESY COUNTRY HAM GRIT BALLS

Number Of Ingredients 10

Canola oil, for frying
1/2 cup diced country ham
2 1/2 cups leftover cooked grits
1 cup grated smoked Gruyere cheese
1/2 cup all-purpose flour
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
3 large eggs, lightly beaten
1 cup panko breadcrumbs
Kosher salt

Steps:

  • Fill a large Dutch oven two-thirds full with oil and heat over medium-high heat to 360 degrees F.
  • Add 2 tablespoons oil to a large heavy-bottomed skillet over medium-high heat. Add the ham and cook just until browned, 4 to 5 minutes. Remove with a slotted spoon to a large bowl. Add the grits and cheese to the bowl and stir until combined. Using wet hands, scoop 1/4 cup of the grit mixture, roll it into a ball and place on a platter or large plate. Repeat until all the grit mixture is used.
  • Whisk together the flour, paprika and cayenne in a shallow bowl. In a separate shallow bowl, add the eggs. Add the panko to another separate shallow bowl. Dip each grit ball into the flour mixture and shake to remove any excess before dipping into the eggs and then into the panko, spinning to coat completely.
  • Add the grit balls to the Dutch oven in batches, frying until brown on all sides, about 5 minutes. Remove to a sheet pan lined with a wire rack and immediately sprinkle with salt.

1 package (2-1/2 ounces) thinly sliced deli ham, finely chopped
3 green onions, finely chopped
2 tablespoons Worcestershire sauce
1 cup finely chopped peanuts
Crackers and raw vegetables

Steps:

  • In a large bowl, combine the cream cheese, ham, onions and Worcestershire sauce. Shape into 3/4-in. balls. Roll in peanuts. Cover and refrigerate until serving. Serve with crackers and vegetables.

1/2 cup sour cream
2 tablespoons dry onion soup mix
1 cup finely chopped cooked ham
1 cup shredded swiss cheese or 1 cup cheddar cheese

  • In bowl beat cream cheese, sour cream and soup mix until smooth.
  • Stir in ham and cheese.
  • Form into a ball.
  • Refrigerate.
  • You may roll in chopped nuts before serving, if desired.

3 bunches green onions
2 (8 ounce) packages cream cheese (softened)
1 cup of chopped pecans

Steps:

  • Place the cream cheese in a medium mixing bowl.
  • Chop the ham and onions and mix well with the cream cheese.
  • Form into a ball and place on serving platter.
  • Pat on the pecans. Refrigerate until ready to serve. Goes best with Ritz crackers.

1 cup chopped pecans
1 slice Swiss cheese

Steps:

  • Place ham and onion in a food processor; pulse until finely chopped. Add cheddar cheese; pulse until blended. Add cream cheese; process until smooth., Shape cheese mixture into a football; press pecans into cheese mixture.
