3 lbs chicken pieces (skinned)
2 tablespoons vegetable oil
salt
pepper
2 tablespoons vegetable oil
2/3 cup yellow onion (coarsely chopped)
2 teaspoons minced garlic
6 ounces no-added-salt tomato paste
1 1/4 cups cold water
2 teaspoons Worcestershire sauce
3 tablespoons dark brown sugar (firmly packed)
6 tablespoons fresh lemon juice
1 tablespoon tamarind paste
1 1/4 cups whole dried apricots

Steps:

  • Preheat oven to 350.
  • Heat oil in a large skillet over medium high heat. When the oil is very hot, add the chicken pieces and brown, cooking for 2 to 3 minutes on each side. Remove from skillet and set aside.
  • Heat oil in the same skillet over medium heat and cook the onions, stirring, until golden and soft, 3 to 4 minutes. Add the garlic and cook, stirring, until golden, an additional 1 minute. Do not burn it.
  • Combine the remaining sauce ingredients, except the apricots, in a medium-size bowl and pour into the skillet with the onions and garlic. Boil over high and then turn off the heat and set aside.
  • Arrange one layer of chicken in a small roasting pan (They should fit snugly). Cover the pieces with apricots. Pour the sauce over teh apricots and reserve 1/2 cup for later. Cover with aluminum foil or lid.
  • Bake for 1 hour.
  • Pour remaining 1/2 cup sauce over the chicken and continue to bake, covered, until the chicken is tender (30 minutes).

4 boneless skinless chicken breasts, cut into bite size pcs.
2 teaspoons oil
50 g dried figs
50 g dried apricots
1/4 cup chopped fresh carrot
3/4 cup pineapple juice
3/4 cup chicken stock
3 tablespoons French onion soup mix
salt
black pepper, to taste.
2 tablespoons parsley, for garnishing

Steps:

  • Heat oil in a wok.
  • Add chicken and brown it.
  • Add figs, apricots, pineapple nectar, stock, carrot and soup mix.
  • Mix well and cook on medium-high heat for 12 minutes.
  • Stir once after 6 minutes.
  • Add salt and pepper to this dish.
  • Garnish with parsley and serve.
  • Enjoy!

2 tablespoons olive oil
4 boneless skinless chicken breasts
salt and pepper
1 shallot
1/4 ounce fresh thyme sprig
4 tablespoons balsamic vinegar
2 tablespoons apricot jam
1/2 cup water
1 ounce chicken stock, concentrate cup
2 tablespoons butter

Steps:

  • Finely mince shallot.
  • Heat a large drizzle of olive oil in a non stick skillet over medium high heat. Pat chicken dry with paper towel, then season all over with salt and pepper.
  • Add to pan and cook until no longer pink in center 4-5 minutes per side. Remove from pan and set aside to rest.
  • To pan, add shallot, whole thyme sprigs and drizzle of olive oil over medium heat. Cook, tossing, until shallot is soft, 2-3 minutes. Stir in balsamic vinegar and apricot jam. Let simmer until syrupy, 1 minute. Stir in 1/2 cup water and stock concentrate. Simmer until thickened, about 3 minutes. Remove pan from heat and add 2 Tbsp. butter, gently swirl until melted. Serve this pan sauce drizzled over chicken.

Steps:

  • Place chicken in shallow baking dish.
  • Combine remaining ingredients; pour over chicken and let marinate in fridge for a minimum of 2 hours.(preferably longer or overnight)
  • Preheat oven to 350 degrees; bake for approximately 40 minutes or until done. Serve with rice.

1 teaspoon lemon juice
2 teaspoons soy sauce
3 lbs chicken pieces
1 cup dry breadcrumbs
1/4 cup butter, melted

Steps:

  • Preheat the oven to 350 degrees.
  • Combine the preserves, lemon juice and soy sauce in a shallow bowl.
  • Divide this mixture in half; reserve half to serve with the chicken.
  • Dip the chicken pieces in the preserves mixture; roll in bread crumbs.
  • Place the chicken in a baking dish.
  • Drizzle with melted butter and bake about 35-40 minutes, or until the chicken is done.
  • Heat the remaining preserves; serve with the chicken.
