CORNMEAL FRIED FISH
Cornmeal Fried Fish, deliciously golden and crunchy on the outside, but soft on the inside, and with a cheeky touch of lemon, this is the best cornmeal-crusted cod you can have. Ready in no time, a great meal for little and big ones too. The cornmeal-crusted fish is shallow-fried for a nice golden crust, and can be served with more lemon juice or a scrumptious garlic sauce. Serve it hot with your favourite fries or a nice fresh salad, and you get the best meal for a hot summer's day.

Steps:
- In a large bow, combine the cornmeal, flour, salt and pepper.
- Coat the fish fillets in the cornmeal mixture, shaking off the excess cornmeal.
- Heat up the oil in a frying pan set over a medium heat, and fry each fillet for about 3-4 minutes on each side (skin down first), or until golden.
- Transfer to a plate lined with kitchen paper to soak up the excess oil.
- Serve hot with lemon juice drizzled over the fillets.

CORNMEAL-CRUSTED FISH STICKS
Cornmeal gives the coating great texture and crunch. Any firm white-fleshed fish can be substituted for the tilapia; we like cod, catfish, or haddock.

- Preheat oven to 250 degrees. Line a large rimmed baking sheet with foil; fit another with a wire rack. In a large bowl, whisk together egg whites, 2 teaspoons salt, and 1/4 teaspoon pepper; add fish, and toss to coat. In another large bowl, combine cornmeal and flour; season with salt and pepper.
- Working in batches, lift fish from egg-white mixture (letting excess drip off), and dredge in cornmeal mixture, patting to adhere; transfer to foil-lined sheet.
- In a large skillet, heat oil over medium-high. Working in batches, cook fish until golden brown and opaque throughout, 4 to 6 minutes, turning once (if fish is browning too quickly, reduce heat). Transfer to wire rack, and keep warm in oven while remaining fish cooks. Serve with ketchup.

CORNMEAL COATING
Steps:
- In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
- In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
- Fry cod fillets in hot oil until golden brown.

CORNMEAL-CRUSTED TROUT

- Melt 1/2 tablespoon butter in a skillet over medium heat. Add the shallot and cook, stirring occasionally, until just soft, about 3 minutes. Stir in the tomato, vinegar, 1/4 cup water, 1 tablespoon tarragon and 1/4 teaspoon each salt and pepper; bring to a simmer and cook until reduced by half, about 5 minutes. Remove from the heat.
- Place the green beans in a large microwave-safe bowl. Drizzle with 1 tablespoon water, cover with plastic wrap and microwave until crisp-tender, about 4 minutes. Season with salt and pepper; keep warm.
- Put the cornmeal in a shallow bowl. Dredge the fish in the cornmeal, shaking off the excess. Heat 1/2 tablespoon butter in a large nonstick skillet over medium-high heat. Working in batches, add the fish and cook until golden, turning once, about 5 minutes. (Add more butter between batches, if needed.) Transfer the fish to plates.
- Return the sauce to medium heat. Add the half-and-half, bring to a simmer and cook until slightly thickened, about 3 minutes. Stir in the remaining 1 tablespoon tarragon and 1/2 tablespoon butter and season with salt. Serve the fish with the green beans and top with the sauce.

- In a shallow dish, combine the flour, parmesan cheese, cornmeal, paprika, salt and pepper; set aside.
- In another shallow dish, beat egg white and milk.
- Dip fillets in milk mixture, then in flour mixture.

- Combine cornmeal, flour and salt on large plate. Brush catfish fillets with Tabasco sauce. Press fish into cornmeal mixture to coat well on both sides. Heat 1 tablespoon each of olive oil and butter in 12-inch skillet over medium heat. Add fillets and cook 4 minutes. With spatula, carefully turn fish. Add remaining oil and butter. Cook 4 minutes longer or until fish flakes easily when tested with a fork. Garnish with lemon wedges.

- In two shallow dishes, divide the flour and seasonings between the two. Beat the egg whites and place in another shallow dish. Season the fish with additional Mrs. Dash. Cut tilapia fillets into 1/2 inch strips. Dredge strips in flour mixture; dip in egg white and finally dip into the second flour mixture. Place the strip on a baking sheet , cover and place in the refrigerator so that the coating could adhere. Preheat the oven to 425 degrees. Remove the fish strips from the refrigerator and transfer to a baking sheet coated with cooking spray. Coat the top of the strips with cooking spray. Bake for 5 minutes. Remove the pan from the oven, turn the fish over, spray again, and return to the oven. Bake until crust is golden brown and the fish is cooked through, 5-6 minutes.

- Combine first 4 ingredients in a shallow bowl. Put egg whites in another shallow bowl. Dip each fish fillet in cornmeal mixture, then in egg whites, then again in cornmeal mixture. Place fillets on a plate; cover with plastic wrap and refrigerate 10 minutes. Heat oil in a large nonstick skillet. Add fillets and cook over medium-high heat, 2 to 3 minutes per side. Season to taste with salt and pepper. Serve with lemon wedges.

- Combine milk and eggs in a large bowl; stir with a whisk. Add fish, and toss gently to coat. Place panko, cornmeal, seasoned salt, and 1/4 teaspoon pepper in a large zip-top bag. Add fish to panko mixture; seal bag. Shake bag gently to coat fish.
- Heat a large nonstick skillet over medium-high heat. Add 1 tablespoon oil to pan; swirl to coat. Add half of fish; cook 4 minutes or until done, turning occasionally to brown all sides. Repeat procedure with remaining 1 tablespoon oil and remaining fish.
- For Homemade Tarter Sauce, combine yogurt, pickles, remaining 1/8 teaspoon salt, and remaining 1/8 teaspoon pepper in a small bowl. Serve sauce with fish.
