Cornmeal Fried Fish, deliciously golden and crunchy on the outside, but soft on the inside, and with a cheeky touch of lemon, this is the best cornmeal-crusted cod you can have. Ready in no time, a great meal for little and big ones too. The cornmeal-crusted fish is shallow-fried for a nice golden crust, and can be served with more lemon juice or a scrumptious garlic sauce. Serve it hot with your favourite fries or a nice fresh salad, and you get the best meal for a hot summer's day.

4 cod fillets
1/4 tsp salt
1/8 tsp black pepper
2 tbsp flour
1/2 cup cornmeal
1/4 cup vegetable oil for frying
juice from a lemon for drizzling over the fish

Steps:

  • In a large bow, combine the cornmeal, flour, salt and pepper.
  • Coat the fish fillets in the cornmeal mixture, shaking off the excess cornmeal.
  • Heat up the oil in a frying pan set over a medium heat, and fry each fillet for about 3-4 minutes on each side (skin down first), or until golden.
  • Transfer to a plate lined with kitchen paper to soak up the excess oil.
  • Serve hot with lemon juice drizzled over the fillets.

4 large egg whites
Coarse salt and ground pepper
1 pound skinless tilapia fillets, cut into 1-by-3-inch strips
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 cup vegetable oil
Ketchup, for serving

Steps:

  • Preheat oven to 250 degrees. Line a large rimmed baking sheet with foil; fit another with a wire rack. In a large bowl, whisk together egg whites, 2 teaspoons salt, and 1/4 teaspoon pepper; add fish, and toss to coat. In another large bowl, combine cornmeal and flour; season with salt and pepper.
  • Working in batches, lift fish from egg-white mixture (letting excess drip off), and dredge in cornmeal mixture, patting to adhere; transfer to foil-lined sheet.
  • In a large skillet, heat oil over medium-high. Working in batches, cook fish until golden brown and opaque throughout, 4 to 6 minutes, turning once (if fish is browning too quickly, reduce heat). Transfer to wire rack, and keep warm in oven while remaining fish cooks. Serve with ketchup.

Steps:

  • In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
  • In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
  • Fry cod fillets in hot oil until golden brown.

1 large shallot, finely chopped
1 small tomato, finely chopped
2 tablespoons white wine vinegar
2 tablespoons chopped fresh tarragon
Kosher salt and freshly ground pepper
8 ounces thin green beans or haricots verts
3/4 cup cornmeal
8 3-ounce trout fillets, pin bones removed
1/2 cup half-and-half

Steps:

  • Melt 1/2 tablespoon butter in a skillet over medium heat. Add the shallot and cook, stirring occasionally, until just soft, about 3 minutes. Stir in the tomato, vinegar, 1/4 cup water, 1 tablespoon tarragon and 1/4 teaspoon each salt and pepper; bring to a simmer and cook until reduced by half, about 5 minutes. Remove from the heat.
  • Place the green beans in a large microwave-safe bowl. Drizzle with 1 tablespoon water, cover with plastic wrap and microwave until crisp-tender, about 4 minutes. Season with salt and pepper; keep warm.
  • Put the cornmeal in a shallow bowl. Dredge the fish in the cornmeal, shaking off the excess. Heat 1/2 tablespoon butter in a large nonstick skillet over medium-high heat. Working in batches, add the fish and cook until golden, turning once, about 5 minutes. (Add more butter between batches, if needed.) Transfer the fish to plates.
  • Return the sauce to medium heat. Add the half-and-half, bring to a simmer and cook until slightly thickened, about 3 minutes. Stir in the remaining 1 tablespoon tarragon and 1/2 tablespoon butter and season with salt. Serve the fish with the green beans and top with the sauce.

1 lb. catfish fillets
1/2 to 1-1/2 tsp. original Tabasco brand pepper sauce
2 Tbs. olive oil, divided
2 Tbs. butter, divided
lemon wedges

Steps:

  • Combine cornmeal, flour and salt on large plate. Brush catfish fillets with Tabasco sauce. Press fish into cornmeal mixture to coat well on both sides. Heat 1 tablespoon each of olive oil and butter in 12-inch skillet over medium heat. Add fillets and cook 4 minutes. With spatula, carefully turn fish. Add remaining oil and butter. Cook 4 minutes longer or until fish flakes easily when tested with a fork. Garnish with lemon wedges.

6 tablespoons white whole wheat flour, divided in half
6 tablespoons cornmeal, divided in half
1/2 teaspoon coriander, divided in half
1/2 teaspoon cumin, divided in half
1/2 teaspoon cayenne pepper, divided in half
1/4 teaspoon Mrs. Dash table blend seasoning, divided in half
2 large egg whites
2 tilapia fillets or 8 ounces tilapia fillets
cooking spray

Steps:

  • In two shallow dishes, divide the flour and seasonings between the two. Beat the egg whites and place in another shallow dish. Season the fish with additional Mrs. Dash. Cut tilapia fillets into 1/2 inch strips. Dredge strips in flour mixture; dip in egg white and finally dip into the second flour mixture. Place the strip on a baking sheet , cover and place in the refrigerator so that the coating could adhere. Preheat the oven to 425 degrees. Remove the fish strips from the refrigerator and transfer to a baking sheet coated with cooking spray. Coat the top of the strips with cooking spray. Bake for 5 minutes. Remove the pan from the oven, turn the fish over, spray again, and return to the oven. Bake until crust is golden brown and the fish is cooked through, 5-6 minutes.
