Steps:

  • In a large saucepan combine evaporated milk, brown sugar, egg yolks, butter and vanilla. Cook over low heat, stirring constantly, until thick. Remove from heat and stir in pecans and coconut. Let cool to room temperature before spreading on cake.

Bon Appétit | December 1991 This moist Christmas cake takes its cues from the flavors and spices found in the classic Lebkuchen cookie. It's brushed with an orange-scented honey syrup, frosted with a creamy white chocolate icing and then surrounded by sliced almonds. I haven't made this yet but I love Lebkuchen cookies and this cake sounds wonderful.

1/2 cup honey
2/3 cup orange juice
3/4 cup unsalted butter, room temperature
3/4 cup firmly packed golden brown sugar
1 tablespoon vanilla extract
1 1/4 teaspoons ground cinnamon
3/4 teaspoon ground cloves
3/4 teaspoon ground nutmeg
3/4 teaspoon ground allspice
1/2 teaspoon salt
2 large eggs, room temperature
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
2/3 cup half-and-half
1 tablespoon lemon juice
2/3 cup dried currant
12 ounces imported white chocolate, chopped (such as Lindt)
1 cup unsalted butter, room temperature
12 ounces cream cheese, room temperature
3 cups toasted sliced almonds
orange slices or orange peel, ribbon

Steps:

  • For syrup:
  • Using vegetable peeler, remove peel (orange part only) from oranges in strips. Mince enough peel to measure 4 tablespoons. Mix honey, orange juice and 2 tablespoons orange peel (reserve remaining 2 tablespoons peel for cake) in heavy medium saucepan. Boil until reduced to 3/4 cup, about 10 minutes. Set honey syrup aside.
  • For cake:
  • Preheat oven to 350°F Butter 9-inch square baking pan with 2-inch-high sides. Line bottom with waxed paper. Butter paper. Dust pan with flour. Using electric mixer, beat first 8 ingredients in large bowl until fluffy. Mix in reserved 2 tablespoons minced orange peel. Add eggs 1 at a time, beating well after each addition. Sift flour, baking soda and baking powder into medium bowl. Mix half and half and lemon juice in small bowl. Beat dry ingredients alternately with half and half mixture into butter mixture, beginning and ending with dry ingredients. Mix in currants. Pour batter into prepared pan. Bake until toothpick inserted into center comes out clean, about 50 minutes. (Cake will not rise to top of pan.) Cool cake 20 minutes. Run small sharp knife around pan sides to loosen. Turn cake out onto rack; cool. Peel off paper. (Can be made 1 day ahead. Cover syrup and cake separately and let stand at room temperature.)
  • For frosting:
  • Melt chocolate in top of double boiler over simmering water, stirring occasionally until smooth. Cool to barely luke warm. Using electric mixer, beat butter and cream cheese until light. Add chocolate and 1/4 cup honey syrup and beat until smooth and light. Chill until thick enough to spread, stirring occasionally, about 20 minutes.
  • Cut cake horizontally in half. Place bottom layer cut side up on platter. Brush with 1/4 cup honey syrup. Spread 1 1/4 cups frosting over. Brush remaining 1/4 cup syrup over cut side of top cake layer. Place cake cut side down atop filled layer. Set aside 2/3 cup frosting for garnish. Spread remaining frosting over top and sides of cake. Press almonds around sides. Spoon remaining 2/3 cup frosting into pastry bag fitted with small star tip. Pipe frosting decoratively around top edge of cake. Chill cake until frosting sets, about 1 hour. Garnish with orange slices or orange peel ribbons. (Can be prepared 1 day ahead. Cover and chill. Let stand 2 hours at room temperature before serving.).

5 large eggs
1 1/4 cup packed brown sugar
1/4 cup honey
1 teaspoon quality pure vanilla extract
2 cups almond meal
2 cups hazelnut meal
1/4 teaspoon salt
1/2 teaspoon baking powder
3 teaspoons Lebkuchengewürz
Homemade Lebkuchengewürz (, (STRONGLY recommended), click link for recipe)
4 ounces candied lemon peel
4 ounces candied orange peel
1/4 cup all-purpose flour (to coat the candied peel) ((can substitute gluten free))
Homemade Lemon and Orange Peel (, click link (STRONGLY recommended instead of store-bought!))
Backoblaten (either 70mm or 90mm)
white communion wafers ((these can be substituted for Backoblaten))
Blanched whole almonds cut in half lengthwise
For the Chocolate Glaze:
3 ounces quality dark or milk chocolate
2 teaspoons coconut oil (or oil of choice - do not use butter)
Directions: Place chocolate and oil in a small bowl and microwave
For the Sugar Glaze:
1 cup sifted powdered sugar
3 tablespoons water or milk
Directions: Place sugar and water in a small bowl and stir until smooth.

Steps:

  • Preheat the oven to 300 degrees F.
  • Toss the candied lemon and orange peel with about 1/4 cup all-purpose flour to keep it from sticking together and then pulse in a food processor until finely minced. Set aside.
  • In a large mixing bowl, beat the eggs until foamy. Add the sugar, honey and vanilla extract and beat until combined.
  • Add the ground almonds and hazelnuts, salt, baking powder, Lebkuchengewürz, and candied lemon and orange peels and stir vigorously until thoroughly combined. (You can use a stand mixer fitted with the paddle attachment and beat for about 2 minutes). The mixture will be wet but if it is too thin to scoop onto the oblaten add some more almond or hazelnut meal.
  • Scoop the mixture onto the Backoblaten, smoothing down the top and leaving just a slight space around the edges. Set them on a lined cookie sheet.
  • Bake on the middle rack of the oven for 25-30 minutes. Remove the cookie sheet and allow to cool completely.
  • Once cooled, place a wire rack over a cookie sheet (to catch the drippings). Dip half the Lebkuchen in the chocolate glaze and half in the sugar glaze, letting the excess drip back into the bowl and then place the Lebkuchen on the wire rack. Arrange 3 almonds on each Lebkuchen while the glaze is still wet. Let the Lebkuchen dry completely until the glaze is hardened.
  • Keep stored in an airtight container. Will keep for several weeks and the flavor improves with time.
  • Makes about 35 if using 70mm Backoblaten and about 25 if using 90mm Backoblaten.

4 (1 ounce) squares white chocolate, chopped
2 ½ cups sifted cake flour
1 teaspoon baking powder
½ teaspoon salt
1 cup butter
2 cups white sugar
4 egg yolks
1 teaspoon vanilla extract
1 cup buttermilk
1 cup chopped pecans
1 cup flaked coconut
4 egg whites

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 (9 inch) pans. Sift together the flour, baking powder and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the yolks one at a time, then stir in the melted chocolate and vanilla. Beat in the flour mixture alternately with the buttermilk. Stir in the nuts and coconut.
  • In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain. Divide batter into prepared pans.
  • Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

This lebkuchen spiced and moist German Gingerbread cake is a variation of the classic Lebkuchen cookies. A traditional Lebkuchen cake, that is quick and easy to put together as a family holiday classic for Christmas.

4 eggs (medium size, at room temperature)
230 g sugar (8.1 oz)
2 tsp vanilla sugar
150 g unsalted butter (at room temperature)
350 g flour
2 teaspoon baking powder
1 pinch salt
30 g unsweetend cocoa
250 ml milk
150 g ground almonds
4 tsp gingerbread spice
150 g dark chocolate glaze
50 g whole almonds

Steps:

  • Preheat your oven to 180°C or 356°F top to bottom heat.
  • Line a baking tray (30 x 40 cm / 12 x 17 inches) (affiliate link) with baking parchment and grease the edges with butter.
  • Using a handmixer or stand mixer combine the eggs with the sugar, vanilla sugar, butter and mix until creamy. (This should take about 5 minutes)
  • Combine the flour, baking powder (affiliate link), cocoa in a bowl. Using a flour sieve, sieve the flour mixture into the dough. This will make your gingerbread cake light and fluffy, as it adds air to the dough. Pour in the milk and add the salt, lebkuchen spice / gingerbread spice and ground almonds. Mix until you achieve a smooth dough.
  • Pour or spread the dough with a pallet knife into the prepared baking tray. Bake in the oven for approximatley 25 minutes. Exact baking time varies by oven. To check if the dough is done, prick a skewer in the middle. If it comes out clean, it is done.
  • Leave to cool completley before decorating.
  • In the meantime place a little water (500 ml/ 16 fl oz) in a saucepan and add the raw almonds. Bring the water to a boil and cook the almonds for around 2 minutes before removing them with a sieve. Rinse in cold water. The skin of the almonds should now simply slip off.
  • Melt the dark chocolate glaze in a waterbath. Pour the melted chocolate over the cooled cake, and spread evenly with a pallet knife.
  • Before the glaze hardens, place the almonds in an X formation on the dark chocolate (see image). Leave to cool. Once the cake is cooled you can slice the cakes into rectangles or squares.
