Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 21

5 tablespoons extra-virgin olive oil, divided
1 large shallot, finely chopped
12 button mushrooms, thinly sliced
8 tablespoons butter, divided
1 tablespoon all-purpose flour
1/2 cup dry white wine
1/2 cup chicken stock
1 cup cream
Freshly grated nutmeg, to taste
Salt and freshly ground black pepper
1 or 2 dashes hot sauce
8 slices prosciutto
1 clove garlic, grated
2 fresh thyme sprigs, leaves chopped
3 to 4 fresh basil leaves, chopped
1 baguette, split and halved
20 large sea scallops, trimmed of any connective tissue and patted dry
1 cup plain bread crumbs
1 clove garlic, cracked from skin
Handful parsley leaves, chopped
1 pound triple washed spinach, stems removed

Steps:

  • Place oven rack at center of oven and preheat broiler.
  • Heat 2 tablespoons extra-virgin olive oil in a small pot over medium heat and add the shallots and mushrooms, cook 5 minutes. Add 2 tablespoons butter and flour to softened shallots and mushrooms and cook 1 minute then whisk in wine, reduce 30 seconds, add stock and bring to a bubble. Stir in cream and heat through. Season sauce with nutmeg, salt and pepper and a couple dashes hot sauce, then reduce heat to low.
  • While the sauce is working, cover cookie sheet with foil and place prosciutto on the sheet and crisp up 2 minutes on each side under the broiler. It will continue to crisp as it cools.
  • In a small bowl, combine the remaining 6 tablespoons butter, garlic, thyme and basil. Spread over baguette and place under broiler until toasty. Switch oven to 400 degrees F.
  • Heat a skillet or cast iron pan over high heat. Season the scallops with salt and pepper and dress with 1 tablespoon extra-virgin olive oil. Sear the scallops to caramelize 1 to 1 1/2 minutes on each side then cover them with sauce, bread crumbs and parsley and finish in oven about 6 to 7 minutes until brown and bubbly.
  • While scallops cook, heat remaining 2 tablespoons extra-virgin olive oil over medium heat with crushed garlic, cook 1 minute and remove. Add spinach and wilt into skillet. Season greens with salt and pepper.
  • Serve scallops with wilted spinach alongside and top with broken pieces of crispy prosciutto and toasted bread.

PROSCIUTTO CARBONARA WITH SPINACH

Prosciutto Carbonara with Spinach image

This lighter carbonara makes a quick comfort food meal during warmer weather. Prosciutto takes the place of traditional guanciale, and stirring in a handful of nutritious baby spinach makes it a commendable choice for a weeknight dinner.

Provided by Riley Wofford

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 30m

Number Of Ingredients 7

1 tablespoon extra-virgin olive oil
3 ounces prosciutto, sliced lengthwise into 1/2-inch-wide strips
2 large eggs, plus 2 yolks
1 ounce Pecorino Romano, grated (1/4 cup), plus more for serving
12 ounces rigatoni
Kosher salt and freshly ground pepper
5 ounces baby spinach

Steps:

  • In a large skillet, heat oil and half of prosciutto over medium; cook, stirring occasionally, until prosciutto is crisp, 3 to 4 minutes. Drain on paper towels; crumble. In a bowl, whisk together whole eggs, yolks, and cheese.
  • Cook pasta in a pot of salted boiling water 1 minute less than package instructions. Reserve 1 cup pasta water, then drain. Slowly whisk 1/4 cup pasta water into egg mixture. Add pasta and spinach to skillet, then slowly add egg mixture to pasta.
  • Stir constantly over low heat until sauce thickens and clings evenly to pasta and spinach wilts slightly, 3 to 5 minutes; add more pasta water as needed to create a silky sauce. Stir in all prosciutto. Serve with more cheese and pepper.

BAKED EGGS WITH SPINACH, ASPARAGUS, AND PROSCIUTTO

Baked Eggs With Spinach, Asparagus, and Prosciutto image

From Food and Wine Magazine: Bake the eggs, in their nests of crusty bread, until the whites are just set. When you cut into the egg, the still-liquid yolk acts as a sauce. If spicy food is your fancy, try serving a favorite salsa on the side. I haven't had a chance to try this yet. I just wanted to post it so that I could remind myself to make it.

Provided by Cultural Twist

Categories     Breakfast

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

1 small round loaf crusty bread, 2 ends removed, the rest cut into 4 thick slices (about 10 ounces)
3/4 lb asparagus, tough ends snapped off and discarded, spears cut into 2-inch pieces
1/4 lb thin-sliced prosciutto
1/4 lb gruyere, grated
1 (10 ounce) package frozen chopped spinach, defrosted, drained, and squeezed dry
4 eggs
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Heat the oven to 450°. Put the bread on a baking sheet and toast in the oven, turning once, until lightly browned, about 5 minutes in all. Transfer to an oiled baking dish.
  • Meanwhile, bring a medium pot of salted water to a boil. Add the asparagus and cook until tender, about 5 minutes. Drain, rinse with cold water, and drain thoroughly.
  • Using your fingers, make a depression in the center of each slice of bread. Arrange one or two slices of prosciutto around the edge of each slice of bread. Reserve 2 tablespoons of the cheese. Press a quarter of the remaining cheese into the center of each slice of bread. Top the cheese with the spinach, and then surround that with the asparagus. Break an egg into a small dish. Carefully slip the egg into one of the spinach nests. Repeat with remaining eggs. Sprinkle the eggs with the salt and pepper and the reserved cheese. Bake, covered, until the egg whites are just set, 10 to 15 minutes.

COLORFUL SPINACH AND PROSCIUTTO SIDE - REVIEW BY …
This turned out to be a heavier side than I was expecting. The prosciutto plus oil, plus marinated artichoke hearts and roasted red peppers made for a very heavy fat/oil taste. Otherwise, the flavor was very good. If I make this again I'll cut back on oil. Another possibility would be to use frozen artichoke hearts (not marinated in oil) and roast your own red peppers. …
