MOREL MUSHROOM BISQUE
If you are a fan of fresh (or even dried) morel mushrooms, this is the soup for you. Everyone who eats morels knows that they go best sauteed with onions, garlic and butter. This incorporates all of those ingredients to create a magnificently creamy soup, strong with morel flavor, but not too overpowering. This isn't healthy eating, and I don't recommend trying to make it that way. Just eat less of it! Serve with crusty bread or garlic croutons.

Steps:
- Melt the butter in a large pot over medium heat. Stir in the garlic, onion, and morels; cook, stirring frequently, until the onions have softened and turned translucent, about 5 minutes. Stir in chicken soup base and flour; cook for 1 to 2 minutes. Pour in water and cream; bring to a simmer, and cook 5 minutes.
- Puree half of the soup in small batches, filling the blender no more than halfway full each time. Return soup puree to pot. Cook on low 10 to 15 minutes. Season with thyme and salt and pepper before serving.

MOREL SAUCE

Steps:
- Place butter and minced shallot in a 1-quart sauce pot over medium heat. Cook until translucent. Add morels and a pinch of salt. Cook for 3 minutes, stirring occasionally. Add white wine and reduce by two-thirds. Add heavy cream, turn down the heat and simmer for 20 minutes, until the sauce coats the back of a spoon.
- Season with salt and pepper to taste. Keep warm until ready to serve with chicken breasts.
MUSHROOM BISQUE
Steps:
- In a 2-quart pot, bring chicken broth to a boil. Add mushrooms and onions and bring back to a simmer. Reduce heat to a slow simmer and cover for at least 1 hour.
- Roux:
- In a separate large pot, melt the butter, then add the flour. Whisk until evenly incorporated. Continue to whisk while slowly adding half-and-half to the roux. Add bay leaf and stir constantly until the sauce is thickened and smooth. Remove the bay leaf and discard.
- Add the mushroom broth to the roux and stir until evenly incorporated. Season with salt, pepper and hot sauce, to taste. Serve immediately.

- * Alternate Mushrooms: Chanterelle, Fairy-ring Mushroom, Shaggy mane In a sauté pan or skillet, melt the butter and sauté the onions and the morels for about 10 minutes. Stir in the flour and cook 2 to 3 minutes. Stir in the beef broth until well blended. Add the half and half and white pepper. Simmer, but do not allow the soup to boil. Just before serving, add the sherry and salt, and sprinkle the parsley on top. This recipe yields 4 first course servings.

Steps:
- Chop morels finely. Sprinkle with lemon juice.
- Melt 1/3 of the butter in a pan and cook the onion and garlic in it until soft and yellow, but not brown.
- Add morels and cook until juices are absorbed by the mushrooms.
- Season to taste with salt and pepper.
- Meanwhile, melt the remaining butter in a large saucepan. Stir in the flour then add hot stock, gradually, stirring constantly to avoid lumps.
- Simmer 20 minutes.
- Add the mushroom mixture and simmer an additional 10-15 minutes.
- Correct seasonings. Take off heat and add cream. Serve hot.

- Heat the stock, then pour over the morels and allow to hydrate for 30 minutes, then swish them to remove grit, remove the mushrooms and reserve then strain the liquid and keep separate.
- Separate the mushrooms into 2 piles: saving prettiest, smallest mushrooms that will fit on a spoon for garnish, rough chop the other half.
- Sweat the celery and onion in 2 tablespoons of the butter for 5 minutes, add the rice and cook for a minute more, then add the sherry and reduce by half. Add the stock, and the chopped morels bring the mixture to a simmer and cook for 20 minutes on low heat, or until the rice is just tender.
- Transfer the mixture to a blender*, add the cream, and puree until very smooth—a minute or two, carefully starting on low speed and gradually moving to high as you get comfortable-hot soup in a blender can be dangerous--make sure there's room for air to escape through the top of the blender lid while pureeing. Gradually add 3 tablespoons of butter. Finally, season the mixture with salt and white pepper to taste.
