EASY RAISIN SAUCE FOR HAM
This is a family favorite! the raisins cook up plump and soft, and the lemon balances with the fruit's sweetness and best of all it's easy to make. This is a must served with ham!

EASY RAISIN SAUCE FOR HAM
This recipe came from my mother. Has always been one of my favorites! VERY easy...and inexpensive too! This is wonderful added to the top of the ham the last 30 minutes of the cooking time, or you can simply serve it with the ham in a small bowl. I hope you enjoy it.

- Heat vegetable oil in a saucepan over medium heat. Cook and stir garlic and shallot in hot oil until fragrant, 1 to 2 minutes.

In our home, baked ham was reserved for the holidays. Always decorated with pineapple rings, cherries and studded with cloves it still never did it for me. Then, recently, someone served this wonderful sauce over that traditional baked ham, that made my taste buds smile. I hope you will too when you try it. It's so simple and quick to make.

- In a saucepan combine all the ingredients and bring to a simmer.
- Cook until mixture thickens and coats the back of a spoon; approximately 10 minutes and there you have it!
HAM STEAK WITH CIDER RAISIN SAUCE
Steps:
- Finely chop onion and in a measuring cup stir together cider, vinegar, mustard seeds, and mustard.
- In a large heavy skillet heat oil over moderately high heat until hot but not smoking and sauté ham until golden and heated through, about 4 minutes on each side. Transfer ham to a platter and keep warm, covered.
- In fat remaining in skillet cook onion over moderate heat, stirring occasionally, until golden, about 5 minutes. Add gingerroot and cook, stirring, 1 minute. Stir cider mixture and add to skillet. Boil sauce, stirring occasionally, until reduced to about 2/3 cup, about 5 minutes. Cut butter into 1/2-inch pieces. Add raisins to sauce and whisk in butter and parsley until butter is incorporated.
- Pour sauce over ham.

- Preheat the oven to 400°. Heat 1/4 cup of oil in each of 2 large skillets. Season the chicken legs with salt and black pepper. Add 5 of the chicken legs to each skillet, skin side down, and cook over moderately high heat until the skin is crisp and browned, about 8 minutes. Turn and cook for 3 minutes longer. Transfer the chicken legs to 2 baking sheets or large platters, skin side up. Repeat with the remaining chicken legs. Reserve the skillets.

- Divide the onion-raisin sauce between 2 large roasting pans. Arrange the chicken legs in the sauce, skin side up. Set the roasting pans on the upper and lower racks of the oven and reduce the heat to 350°. Roast the chicken until cooked through, about 1 hour and 15 minutes; switching the roasting pans from top to bottom and front to back halfway through.
- Transfer the chicken legs to 2 platters. Set each roasting pan over high heat and boil the sauce until the liquid in each roasting pan is reduced to about 5 cups, about 10 minutes. Season the sauce with salt and pepper and serve with the chicken.
