2 pounds bulk pork sausage
1 large onion, chopped
2 cups cooked rice
3 cups crisp rice cereal
3 cups shredded cheddar cheese
6 large eggs
2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
1/2 cup whole milk

Steps:

  • In a skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Place in a lightly greased 13x9-in. baking dish. Layer with the rice, cereal and cheddar cheese. In a bowl, beat the eggs, soup and milk. Spread over top. , Bake, uncovered, at 350° for 55-60 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting. Refrigerate any leftovers.

1 pound bacon
2 onions, chopped
2 cups fresh sliced mushrooms
1 tablespoon butter
4 cups frozen hash brown potatoes, thawed
1 teaspoon salt
¼ teaspoon garlic salt
½ teaspoon ground black pepper
4 eggs
1 ½ cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese

Steps:

  • Place bacon in a large skillet. Cook over medium-high heat until evenly brown. Drain and set aside. Add the mushrooms and onion to the skillet; cook and stir until the onion has softened and turned translucent and the mushrooms are tender, about 5 minutes.
  • Grease a 9x13-inch casserole dish with the tablespoon of butter. Place potatoes in bottom of prepared dish. Sprinkle with salt, garlic salt, and pepper. Top with crumbled bacon, then add the onions and mushrooms.
  • In a mixing bowl, beat the eggs with the milk and parsley. Pour the beaten eggs over the casserole and top with grated cheese. Cover and refrigerate overnight.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake in preheated oven for 1 hour or until set.

7 slices white bread, crusts removed and cubed
2 cups shredded cheddar cheese
6 large eggs, lightly beaten
3 cups 2% milk
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
6 bacon strips, cooked and crumbled

Steps:

  • In a greased 11x7-in. baking dish, combine the bread and cheese. In a large bowl, whisk the eggs, milk, mustard, salt and pepper; pour over bread and cheese. Sprinkle with bacon. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 50-55 minutes. Let stand 10 minutes before serving.

This is some kind of good. Perfect to bring to potlucks too. Make it the night before to save on some work the day of. Since it makes more than a 13 x 9 pan holds, I make a disposable loaf pan full too (and bring along with me in secret) and give it to the person who loves this brunch the most! I love that!

2 lbs pork sausage (hot or mild or both!)
2 -3 tablespoons butter
1 small onion, peeled and small chunked
12 ounces sliced mushrooms
1/2 cup chopped green pepper
3 cups frozen hash brown potatoes, thawed
3 cups shredded reduced-fat cheddar cheese
1 teaspoon salt (to taste)
1/4 teaspoon white pepper
1/2 teaspoon black pepper
1 tablespoon dry mustard
1/2 teaspoon poultry seasoning
4 of my microwave roasted garlic cloves, chopped fine (Easy Roasted Garlic)
12 large eggs or 4 cups Egg Beaters egg substitute
2 cups milk
1/4 cup parmesan cheese
10 cherry tomatoes, sliced and excess liquid removed
cilantro leaf
parmesan cheese
4 tablespoons roasted red peppers or red bell pepper, chopped fine
1/4 cup green bell pepper, chopped fine

Steps:

  • In a heavy bottomed skillet, brown Sausage, stirring until it crumbles (or after cooking and draining pulse in food processor until the texture you want). Remove sausage to drain on a paper towel lined bowl and remove all but 3 TB of drippings from pan.
  • Heat pan on high, scraping bits from bottom. When hot, add 2 TB butter, sliced mushrooms, 1/2 cup green pepper and onion and reduce heat to medium-high. Cook about 5-6 minutes or until mushrooms and onions start to caramelize. Stir and scrape bottom of pan frequently. During last minute of cooking, add chopped Recipe #250855 or regular minced garlic. When done, remove from heat and reserve.
  • Preheat oven to 350 degrees F.
  • Place hashbrowns in a lightly greased 3 qt (9x13x2 inch) baking dish and a loaf pan. Layer cooked sausage, cheese & the sauted veggie mix evenly over hashbrowns in each pan, and --
  • Whisk to combine eggs (or substitute),all spices and milk in a large bowl. Pour egg mixture over all else in pans. Finally, sprinkle with parmesan cheese last.
  • Bake in a 350 degree oven for 50 minutes or until golden. Rotate and switch pans on racks for even browning. The loaf pan may finish cooking in 40 minutes or so.
  • Garnish, if desired with cilantro, sliced cherry tomatoes and diced green pepper and red peppers (roasted ones really add a flavor punch) & more parmesan. The colors should look Christmas-ey and the parmesan should resemble snow.

1 lb bulk Italian sausage
1 cup chopped onion
1 (7 ounce) jar roasted red peppers, drained and chopped, divided
1 (10 ounce) package frozen chopped spinach, thawed and well drained
1 cup flour
1/4 cup grated parmesan cheese
1 teaspoon dried basil
1/2 teaspoon salt
8 eggs
2 cups milk
1 cup shredded provolone cheese

Steps:

  • In skillet; cook sausage and onion over medium heat until sausage is no longer pink; drain.
  • Transfer to greased 3 quart baking dish.
  • Sprinkle with half of the red peppers and all of the spinach.
  • In a mixing bowl, combine flour, Parmesan, basil and salt.
  • Combine eggs and milk; add to dry ingredients and mix well. Pour over spinach.
  • Bake at 425 for 20-25 minutes or until a knife inserted near the center comes out clean.
  • Sprinkle with provolone cheese and remaining red peppers. Bake 2 minutes longer or until cheese is melted.
  • Let stand 5 minutes before cutting.
