5 cups torn romaine
5 cups torn red leaf lettuce
1 large red apple, chopped
1 large green apple, chopped
1 cup (4 ounces) crumbled Gorgonzola cheese
1/2 cup chopped walnuts, toasted
1/3 cup thinly sliced red onion
1/3 cup dried cranberries
CIDER VINAIGRETTE:
3/4 cup apple cider or juice
3 tablespoons cider vinegar
2 teaspoons honey
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup walnut oil or canola oil

Steps:

  • In a salad bowl, combine the first eight ingredients., In a small bowl, whisk the cider, vinegar, honey, salt and pepper; gradually whisk in oil. Drizzle over salad; toss to coat. Serve immediately.

1/2 cup golden raisins
1/2 teaspoon celery seeds
1 cup mayonnaise
1/2 cup sour cream
2 tablespoons apple cider vinegar
1 head savoy cabbage, shredded or sliced thin
1 cup carrots, shredded (about 4 small or 2 medium carrots)
2 Granny Smith apples, cored and shredded
Kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, stir together the raisins, celery seeds, mayonnaise, sour cream and apple cider vinegar. Add the cabbage, carrots, and apples, then toss to combine. Taste and season with a pinch of salt and a grind or two of pepper. Cover and refrigerate at least 1 hour before serving.

2 x 150g pots bio yogurt
4 tsp apple cider vinegar
2 tsp English mustard powder
4 spring onions , finely chopped
6 celery sticks (320g), finely chopped
400g and 210g cans chickpeas , drained
30g raisins
2 apples
12 walnut halves (35g), broken up
8 crisp lettuce leaves from an iceberg lettuce

Steps:

  • Boil the penne for 12 mins until al dente. Meanwhile, make a dressing by mixing the yogurt with the vinegar, mustard and spring onions.
  • Add the celery, penne, chickpeas and raisins to the dressing and stir until everything is well coated. If you're following our Healthy Diet Plan, chop 1 apple and add to half the salad with half the nuts and serve with half of the crisp lettuce leaves, either as a base or as wraps. Chill the remainder for up to three days, then add the apple, nuts and lettuce on the day you're eating it. If you do it ahead, the nuts will soften and the apples will turn brown.

Salt and freshly ground black pepper, to taste

Steps:

  • Toss the apples with the lemon juice in a bowl. Add celery, walnuts, and raisins, then toss. Combine the mayo and sour cream in another bowl, then fold into the apple mixture. Season to taste with salt and pepper. Pack in tightly covered, small plastic containers.
