12 small chicken wings
¼ teaspoon seasoned salt, or to taste
1 cup all-purpose flour
1 teaspoon coarse salt
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
¼ teaspoon paprika
1 (12 fluid ounce) bottle Buffalo wing sauce (such as Frank's®), or to taste
2 quarts vegetable oil for frying

Steps:

  • Season chicken wings lightly with seasoned salt.
  • Mix flour, salt, black pepper, cayenne pepper, and paprika together in a wide, shallow bowl. Press wings into flour mixture to coat and arrange onto a large plate so they do not touch. Refrigerate coated wings for 15 to 30 minutes.
  • Dredge wings again in flour mixture and return to the plate. Refrigerate wings again 15 to 30 minutes.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Fry chicken wings in hot oil until crisp and no longer pink at the bone and the juices run clear, 9 to 12 minutes. An instant-read thermometer inserted into the thickest part of the meat, near the bone should read 165 degrees F (74 degrees C).
  • Transfer fried wings to a large stainless steel bowl. Drizzle sauce over the wings and toss to coat.

2 teaspoons kosher salt
Oil for deep-fat frying
BUFFALO WING SAUCE:
3/4 cup Louisiana-style hot sauce
1/4 cup unsalted butter, cubed
2 tablespoons molasses
1/4 teaspoon cayenne pepper
SPICY THAI SAUCE:
1 tablespoon canola oil
1 teaspoon grated fresh gingerroot
1 garlic clove, minced
1 minced Thai chile pepper or 1/4 teaspoon crushed red pepper flakes
1/4 cup packed dark brown sugar
2 tablespoons lime juice
2 tablespoons minced fresh cilantro
1 tablespoon fish sauce
SPICY BARBECUE SAUCE:
3/4 cup barbecue sauce
2 chipotle peppers in adobo sauce, finely chopped
2 tablespoons honey
1 tablespoon cider vinegar
Thinly sliced green onions, optional

Steps:

  • Using a sharp knife, cut through the 2 wing joints; discard wing tips. Pat chicken dry with paper towels. Toss wings with kosher salt. Place on a wire rack in a 15x10x1-in. baking pan. Refrigerate at least 1 hour or overnight., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry wings in batches until skin is crisp and meat is tender, 8-10 minutes. Drain on paper towels., For Buffalo wing sauce, bring hot sauce just to a boil in a small saucepan. Remove from heat; whisk in butter 1 piece at a time. Stir in molasses and cayenne pepper., For Thai sauce, heat oil in a small saucepan over medium heat. Add ginger, garlic and chile pepper; cook and stir until fragrant, about 2 minutes. Stir in brown sugar and lime juice. Bring to a boil; cook until slightly thickened, about 5 minutes. Stir in cilantro and fish sauce., For barbecue sauce, heat prepared barbecue sauce in a small saucepan over medium heat. Stir in chipotle peppers, honey and vinegar. Bring to a boil; cook and stir until slightly thickened, about 5 minutes. , Toss wings with 1 of the sauces. If desired, sprinkle with green onion slices.

3 cups all-purpose flour
1 cup crushed saltine crackers
1 teaspoon ground black pepper
1 teaspoon ground dried thyme

½ teaspoon garlic powder
4 cups peanut oil for frying
salt to taste

Steps:

  • Beat the eggs and buttermilk together in a mixing bowl until smooth. Mix in the chicken wings, cover, and refrigerate 30 minutes. Combine the flour and crushed crackers with the pepper, thyme, cayenne pepper, salt, and garlic powder in a large mixing bowl.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Remove the chicken wings from the buttermilk marinade, and discard the remaining marinade. Allow the excess buttermilk to drip from the wings, then press into the bread crumbs to coat.

20 chicken wings
3 cups vegetable oil
1 tablespoon flour
1/2 teaspoon baking powder (optional)
3 tablespoons plain breadcrumbs
1 1/2 cups milk
1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper
2 eggs

Steps:

  • In a large bowl: Mix the flour, seasonings, and baking powder with a fork.
  • Add milk, eggs and mix together until it's blended well, this is the batter.
  • In a plastic bag add the Breadcrumbs.
  • Add the wings into the batter and mix well, let sit for 3-4 minutes.
  • Meanwhile, heat the oil.
  • In a plastic ziplock bag, add few pieces at a time, and shake vigorously, *(If you don't have a platic bag, add breadcrumbs to a plastic bowl, add pieces and close the lid to shake)*.
  • After shaking all the pieces, add them to the oil,(don't overcrowd it too much).
  • Fry each side of the wing for 5 minutes.
  • Add fried pieces to a bowl with paper towels, to absorb the oil.

Steps:

  • Combine the House Seasoning, seafood seasoning and seasoning salt in a bowl and add the chicken wings; toss to coat well. Marinate, covered, in the refrigerator for at least 24 and up to 48 hours.
  • Preheat oil in a deep-fryer to 350 degrees F. Toss the wings in the Chicken Flour, then fry then, fully submerged, for 15 minutes, checking after 5 minutes to make sure wings are not stuck together (do not crowd the fryer; cook in 2 to 3 batches). 5 pounds chicken wings
3 cups buttermilk
1 (5-ounce) bottle red pepper sauce (recommended: Emeril's Kick It Up Red Pepper Sauce)
1/2 cup plus 1 tablespoon Essence, recipe follows
5 teaspoons salt
3 cups all-purpose flour
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Cut the chicken wings at the joints, and set the wing tips aside for another purpose. In a large bowl, combine the buttermilk, hot sauce, 1/4 cup Essence and 3 teaspoons salt. Whisk to combine, add the chicken, and toss to coat thoroughly. Cover the bowl, transfer to the refrigerator, and marinate for at least 1 hour, and up to 4 hours before proceeding.
  • Preheat a large cast iron Dutch oven with 1 quart of peanut oil to 360 degrees F. Place the flour in a large resealable plastic food storage bag and season with 1/4 cup of the Essence and remaining salt. Add 8 pieces of chicken at a time to the seasoned flour and shake to evenly coat. Remove from the bag and place on a wire rack set over a sheet pan. Continue to coat the wings and allow them to sit for 10 to 15 minutes before proceeding.
  • Fry the chicken in batches, about 10 to 12 pieces at a time. When you add the chicken to the hot oil, the temperature will drop drastically. Raise the heat to high once the chicken is in the pot. The temperature should level off at around 300 degrees F. Fry the chicken until golden brown and the meat is cooked all the way through, about 7 to 8 minutes. Be sure to return the oil to 360 to 370 degrees F before frying another batch of chicken. Continue this process until all of the chicken is fried. Season the fried chicken with the remaining tablespoon of Essence. Serve hot. (The chicken can be kept in a preheated 200 degree F oven once fried to keep warm while you fry the remainder of the chicken.)
  • Combine all ingredients thoroughly.

FRIED CHICKEN WINGS WITH RANCH

The dressing here is all about the garlic. The garlic and onion powders are important for that true ranch flavor we know from childhood. I serve these wings with lots of sliced carrots and cucumbers on the side for dunking in the dressing. I also just put out homemade or jarred pickle spears too. It's nice to take a break every few wings and eat your vegetables.

1/4 cup mayonnaise
1/4 cup buttermilk
1/4 cup pickle juice
2 large cloves garlic, grated

2 teaspoons garlic powder
2 teaspoons onion powder
1 1/2 quarts canola oil
1 cup all-purpose flour
1 cup cornstarch
3 1/2 pounds chicken wings split into drumettes and flats (about 18 each)
Kosher salt
1 large lemon, thinly sliced, for serving
Sliced carrots and cucumbers and pickle spears, for serving (optional)

Steps:

  • Preheat the oven to 350 degrees F.
  • Make the dressing: In a medium bowl, whisk together the sour cream, mayonnaise, buttermilk and pickle juice with the grated garlic, dill, hot sauce, garlic powder and onion powder. Taste for seasoning.
  • Prepare the wings: Pour the oil into a deep, heavy-bottomed pot. Heat the oil to 350 degrees F over medium heat. Prepare 2 rimmed baking sheets, one lined with a wire rack. In a large bowl, combine the flour and cornstarch. Separate the larger wings and the smaller ones. Season all of them with salt and toss in the flour mix. Shake off the excess.
  • Fry the wings : Lower half of the larger wings into the oil and gently "swirl" the oil with a slotted spoon as they fry. This swirling will assure they fry more evenly on all sides. When they are light to medium brown, 5 to 7 minutes, remove them with the slotted spoon and lay them out on the wire rack to cool. Season with salt. Cook the rest of the wings in batches, keeping the cooked wings warm in the second baking sheet in the oven until all are fried. Leave the wings in the oven for at least 10 minutes to assure all are cooked through.
  • Arrange the wings on a serving platter with the ranch dressing alongside for dunking. Serve with the lemon, carrots, cucumbers and pickles.

Spicy Dipping Sauce, recipe follows
1 cup sour cream
2 tablespoons horseradish

Steps:

  • In a small bowl whisk together seasoning salt, red pepper flakes, black pepper, cayenne pepper, poultry seasoning, and lemon pepper. Reserve 2 tablespoons in a separate bowl.
  • Rinse chicken wings in cold water and place into a shallow baking dish. Sprinkle the wings evenly with the seasoning, and let them marinate, covered and chilled, for 1 hour.
  • Whisk eggs, hot sauce, red pepper flakes, black pepper, and cayenne pepper into a medium size mixing bowl. Reserve. Put the flour into a shallow dish or pie plate.
  • In a large deep-fryer or large Dutch oven heat oil to 350 degrees F on a deep-fat thermometer.
  • Dredge chicken wings into the egg mixture then into the flour. Place wings 3 at a time into the hot oil and cook for 8 to 10 minutes, turning occasionally, until cooked through and golden brown. Remove to a paper towel lined sheet tray. Make sure oil returns to temperature before adding the next batch. Sprinkle the wings with the reserved seasoning for extra hot wings.
  • Serve with Spicy Dipping Sauce.
  • Mix all the ingredients together in a small bowl.

1/2 cup cornstarch

These chicken wings remind me of KFC Extra Crispy chicken! A crunchy outside coating makes them great with or without sauce. I serve them "naked" with sauces on the side.

12 chicken wings, first and second parts, divided, defrosted (I buy the Kroger brand in the freezer section at Fry's)
2 tablespoons garfava bean flour
1/3 cup cornstarch
1/3 cup tapioca starch
1/4 cup sorghum flour
4 tablespoons dry rub seasonings (I use Stubbs Bar-B-Q Spice Rub)
1 egg
1/3 cup milk
oil (for deep frying)

Steps:

  • Preheat deep fryer to 375 degrees, and oven to 250 degrees.
  • Combine garfava bean flour, cornstarch, tapioca starch, sorghum flour and Stubbs seasoning in a plastic container with a lid. Shake to mix well.
  • Combine egg and milk in a bowl and beat until mixed well. Put chicken in the container of flour, and shake to coat. Shake off extra flour, dip in egg mixture, then return to container of flour for another shake. Remove from flour, shake off excess, and move to plate. Continue to coat remaining pieces of chicken.
  • Select largest pieces of chicken first. Dip chicken in flour one more time just prior to putting in fryer, and shake off excess flour. Fry chicken pieces for about 10 minutes, or until golden brown and juices are running clear. Do not cook all chicken at one time, or your oil will cool down too much. I cook "drummies" with "drummies" and "flatties" with "flatties".
  • When finished frying, move to wire rack on cookie sheet, and put in preheated oven while frying other pieces.
  • SERVING SUGGESTIONS:.
  • Wings may be served "naked", with sauces (barbecue, honey mustard, hot sauce) on the side, or tossed in sauce. You could also tweak the seasonings and serve with sesame our sweet and sour sauce.

½ large white onion, chopped
8 cloves garlic, crushed
2 tablespoons Sriracha hot sauce, or to taste
1 tablespoon kosher salt
2 teaspoons ground black pepper
2 ½ cups buttermilk
4 pounds chicken wings
2 cups all-purpose flour (such as White Lily®)
2 tablespoons kosher salt
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon lemon zest
1 tablespoon ground black pepper
3 teaspoons dried oregano
3 teaspoons cayenne pepper, or to taste
1 teaspoon baking powder
1 teaspoon dried sage
1 teaspoon dry mustard

Steps:

  • Combine onion, garlic, hot sauce, salt, and 2 teaspoons black pepper in a large bowl. Add the cold buttermilk and stir to dissolve. Snip the wing tips with kitchen shears if desired. Double frying means this recipe turns out the crispiest chicken wings ever. Feel free to sauce them any way you like.

1 pound chicken wings (see note)
Kosher salt and black pepper
1 cup all-purpose flour
1 cup cornstarch

Steps:

  • Season chicken wings with equal parts salt and pepper-just enough to lightly coat the wings, then rub gently into wings.
  • Mix flour and cornstarch in a mixing bowl. Dredge each wing in the mix until there's NO visible moisture on each wing. Shake off excess, then set aside on a plate or rack.
  • Pour 2 inches of oil in a pot, or enough to submerge the wings. (If you're frying up whole wings-where the drumette, the wingette, and the tip haven't been cut apart-pour in 3 inches.)
  • Over high heat, heat the oil to 350°F. Par(tially)-fry the wings for 10 minutes, then remove from pot, and shake off any excess oil. The par-fry cooks the chicken completely through, sealing in the flavor, while starting to form the outside crispy layer.
  • Set wings on a paper towel-lined plate or rack for 5 minutes, or until they cool to room temperature. This prevents the meat from overcooking, while keeping in its moisture.
  • OPTIONAL: You can store the par-fried wings in the fridge and do the second wing fry the next day. Just be sure the wings are at room temperature when you fry them.
  • Once the wings cool down, reheat the oil to 350°F and fry them a second time for 10 more minutes. The second fry crisps the wings to the point of delicious crunchiness. Remove wings, then shake off excess oil. Brush on or toss wings in a bowl with your favorite sauce. Or, if you just want the purest form of savory, crunchy wings around, eat 'em as is, which I often do as a "taste test."

OH MY! All I can say is, Claritha knows her fried chicken! I had heard about soaking poultry in a brine solution and during an internet search, came across this recipe. A true southern style recipe, we think this is absolutely the best fried chicken we have ever eaten. See you if don't agree!

3 lbs chicken wings (16 to 18)
1 cup coarse salt, plus
2 tablespoons coarse salt
2 onions, sliced
3 cups buttermilk
2 cups all-purpose flour
2 teaspoons cracked black peppercorns
1 teaspoon cayenne
2 cups vegetable shortening
1/2 cup unsalted butter

Steps:

  • Cut off chicken wing tips, and reserve them for another use (stock).
  • Arrange wings in one layer in a 9x13 inch glass baking dish and sprinkle them evenly with 1/2 cup coarse salt.
  • Turn wings over and sprinkle with l/2 cup more salt.
  • Chill wings for 2 hours.
  • Rinse wings in a colander under cold running water and drain.
  • (An alternative to this is to soak chicken wings overnight in a brine solution, using one cup salt and enough water to cover wings.) Arrange wings in one layer in a baking dish and thinly slice onions.
  • Arrange onions over wings and pour buttermilk over onions.
  • Chill wings, covered, at least 12 hours and/or up to one day.
  • Discard onions and drain wings in a colander.
  • Tear off an 18 inch sheet of wax paper and set aside.
  • In a large shallow bowl, whisk together flour, peppercorns, cayenne, and remaining 2 tablespoons salt.
  • Working with no more than 2 wings at a time, dredge wings evenly in flour mixture and shake off the excess.
  • Arrange wings with the flat sides up, a few inches apart on wax paper and let stand 15 minutes.
  • Get out a rack, brown paper bag, or paper towels, and set on a baking pan.
  • In a large fish fryer set over two burners (or two heavy skillets), melt 2 cups shortening and 1/2 cup butter over high heat, just until butter begins to turn golden.
  • Add the wings, flat sides down, and reduce heat to moderately high.
  • Cook wings, covered, until deep golden, 8 to 10 minutes.
  • Turn wings and cook, uncovered, until deep golden, about 8 minutes.
  • With tongs, transfer wings to a rack set over pan, to drain.

1 tablespoon paprika
1 teaspoon garlic salt
1 teaspoon black pepper
1/4-1/2 teaspoon cayenne pepper

10 chicken wings, tips removed

Steps:

  • Cut wings at joints.
  • Preheat oven to 425 degrees.
  • Be sure wings are thawed and dry them well with paper towels.
  • Combine flour, paprika, garlic salt, black pepper and cayenne pepper in a plastic bag.
  • Shake to mix ingredients and add wings.
  • Line a large baking sheet with Release foil and melt the butter on it. ( Makes for easy clean up.).
  • Add wings to pan and turn to coat.
  • Bake for 30 minutes.
  • Turn wings over and bake for 15 more minutes or until crispy and done.

½ teaspoon salt
½ teaspoon paprika
¼ teaspoon garlic powder

1 (5.3 ounce) can evaporated milk
10 chicken wings
½ cup olive oil
1 pinch paprika, or to taste

Steps:

  • Mix flour, salt, 1/2 teaspoon paprika, garlic powder, and black pepper together in a sealable plastic bag.
  • Pour evaporated milk into a bowl. Dip a few chicken wings into evaporated milk to coat. Remove wings from milk and shake to remove excess. Put wings into the sealable bag, seal the bag, and shake to coat wings in flour mixture. Move coated wings to a plate, keeping them from touching. Repeat process with remaining wings until all are coated in the flour mixture.
  • Heat olive oil in a large skillet over medium-high heat.
  • Fry chicken wings in hot olive oil, turning regularly, until browned on all sides and no longer pink at the bone, about 25 minutes. An instant-read thermometer inserted into the thickest part of the meat, near the bone should read 165 degrees F (74 degrees C). Season fried wings with additional paprika.
