Steps:
- For the braised beef: Heat the oil in a large pot over medium-high heat. Then add the beef shanks, browning deeply on each side, about 5 minutes per side. Set aside.
- Add the ginger, dried chiles and scallions and saute until fragrant. Add the soy sauce, wine, sugar, cloves, fennel, white pepper, star anise, cardamom and cinnamon stick. Return the beef to the pot, add enough water to cover and bring to a simmer. Cover and cook gently until tender when pierced with a fork, about 2 hours.
- Shred the beef with forks and set aside. Reserve 6 tablespoons of the braising liquid and mix with the hoisin sauce in a small bowl until smooth.
- For the wraps: Combine the flour, water and oil and knead until smooth and pliable, about 5 minutes; the dough should be slightly tacky. Cover with plastic wrap and rest for 10 to 15 minutes. The resting is important, don't skip it!
- Roll the dough out into a 10-by-14-inch rectangle and then roll into a log. Cut into 6 pieces. On a lightly floured surface, press down on your small piece of dough and roll into a circle, about 1/4-inch thick. Let rest for 10 minutes.
- Stretch each circle out until you can see light coming through the dough. Set aside with a damp cloth on top. When ready to use, heat up a little oil on a griddle or large saute pan over medium- high heat; the pan should be hot but not smoking. Place the wrap in the pan and cook until golden brown on one side. Then flip and cook until just cooked on the other side. Repeat with the remaining wraps.
- To assemble: Brush 1 tablespoon of the hoisin sauce evenly onto the less cooked side of the wrap. Evenly layer the beef onto the wrap. Add the cilantro, cucumber and scallions. Roll up, slice and enjoy!
TORTILLA ROLLUPS WITH BEEF
The filling for this recipe is also how we make our cheeseball (just ball it up and add a coating of roasted chopped pecans!) I decided today to try it in a tortilla rollup. They were a huge hit at my Mary Kay party!

Steps:
- Mix by hand, all ingredients except the shells.
- Spread out evenly on as many tortillas as it takes.
- Roll up like jelly rolls or cinnamon rolls.
- Place rolls in large plastic container, side by side, making sure paper towels are in the bottom & on top of rolls.to collect moisture. Secure lid on & place in fridge overnight so flavors can develope.
- When ready to serve, take out & slice rolls in 1" thick slices, eating the end pieces as you go, since they usually aren't full of filling & not presentable for serving. Arrange on platter, standing up, but leaning on each other at a 45° angle..Enjoy!!

CHIPPED BEEF CHEESE BALL
Steps:
- Let the cream cheese soften in your mixing bowl. Add the garlic powder and Worcestershire sauce to the bowl of cream cheese. Beat with your hand mixer until smooth and creamy. Rinse the chipped beef, if desired. It's too salty for me. Cut the chipped beef into tiny pieces, chop the green onions, and grate the cheese. Combine everything together, add the black pepper. Mix until smooth. Place the mixture into a bowl and cover with some plastic wrap and place in the refrigerator for two hours. After two hours mold the mixture into a ball. Roll the cheese ball in some chopped green onions and chipped beef. Serve the chipped beef cheese ball with crackers or celery. Enjoy.

- Drain all of the juice from the pickles, and pour pickles into a bowl. Use a paper towel to gently remove any access juice from the pickles.
- Take a small amount of cream cheese on a butterknife and spread it across one side of a piece of the dried beef, spread enough cream cheese to evenly coat the entire side of the beef.
- Add a baby dill pickle to the center of the cream cheese and gently roll up both sides of the dried beef using the cream cheese like a 'glue', overlappig the beef if possible.
- Repeat process until you run out of pickles. Serve whole or cut in half with a serrated knife. Serve immediately or keep in an airtight container in the refrigerator overnight.

- Dehydrated Fruit Delight: Dried Blueberries. Enjoy blueberry muffins made from scratch all year long by dehydrating your blueberries during peak season.
- Dried Orange Slices. Sure you can just dry orange peels, but why not dry the entire slice? Just looking at these crispy orange chips makes me smile as they remind me of bright, sunny days.
- Sriracha Chickpeas. If you love sriracha, you’ll go gaga for this recipe. We’re warning you now, these dried and fried Sriracha Chickpeas are crispy and highly addictive!
