Sweet Potato Cider Cupcake with Marshmallow Frosting image

Categories     dessert

Time 1h30m

Yield 24 cupcakes

Number Of Ingredients 22

8 ounces (2 sticks) butter, room temperature
2 cups sugar
4 large eggs
16 ounces canned sweet potatoes, drained and mashed
2/3 cup apple cider
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
1/4 teaspoon salt
4 cups apple cider
1 vanilla bean, split lengthwise
2 ounces salted butter (1/2 stick)
1/2 cup light brown sugar
16 ounces unsalted butter (4 sticks)
12 tablespoons Cider Caramel Reduction
16 ounces marshmallow creme (recommended: Marshmallow Fluff)
1 cup pecans, coarsely chopped
2 tablespoons salted butter
1/2 teaspoon salt

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line regular sized cupcake pans with 24 liners. Beat the butter and sugar at medium speed with an electric mixer fitted with a whisk attachment until light and fluffy. Add the eggs, 1 at a time, beating after each addition. In a food processor, combine the sweet potatoes, apple cider, and vanilla. Blend until smooth. Put aside. In a bowl, combine flour with remaining dry ingredients. Whisk until blended. Add the flour mixture to the sugar mixture, alternating with the sweet potato mixture. Beat at low speed just until blended after each addition. Fill the cupcake liners three-quarters full with batter. Bake until golden brown, 22 to 24 minutes. Remove from the pan immediately. Cool completely. For the cider reduction: In a medium saucepan, bring the cider to a boil, add the vanilla bean, and cook until the cider reduces to about 2 cups, 20 to 25 minutes. Add the butter and sugar. Cook until the cider reduces to about 1 1/2 cups, stirring occasionally, about 10 minutes. Transfer the mixture to glass bowl. Cover. Refrigerate for at least 3 hours, or until reduction is cooled completely. Can be made up to 3 days in advance. Reserve half for the Marshmallow Cream Frosting and half for assembling the cupcakes. For the marshmallow frosting: In a mixer fitted with a paddle attachment, beat the butter until smooth and creamy, scraping down the bowl occasionally, about 2 minutes. Add the Caramel Cider Reduction and beat until incorporated. Remove the bowl from the mixer and fold in the marshmallow creme until incorporated. For the pecans: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Melt the butter in a bowl in the microwave. Coat the chopped pecan with butter. Pour onto the prepared baking sheet and toast in the oven for 5 minutes. Sprinkle with salt while warm and toss. Cool completely. To assemble: Drizzle a small amount of Caramel Cider Reduction over the top of each cupcake. Generously frost each cupcake with Marshmallow Frosting and sprinkle with Toasted Salted Pecans.

Number Of Ingredients 13

For the cupcakes
3 cups unpasteurized apple cider
3/4 cup vegetable shortening
1 3/4 cups sugar
2 large eggs
2 cups all-purpose flour, sifted
1/8 teaspoon ground cloves
1 teaspoon cinnamon

6 ounces cream cheese, cut into bits and softened
1/2 cup sifted confectioners' sugar

Steps:

  • Make the cupcakes:
  • In a large saucepan boil the cider until it is reduced to about 1 1/2 cups and let it cool. In a large bowl with an electric mixer beat together the shortening and the sugar until the mixture is fluffy and beat in the eggs, 1 at a time. Into the bowl sift together the flour, the cloves, the cinnamon, the baking soda, and a pinch of salt, stir in the reduced cider, and combine the mixture well. Divide the batter among 18 paper-lined 1/2-cup muffin tins and bake the cupcakes in the middle of a preheated 375°F. oven for 25 minutes, or until a tester comes out clean. Transfer the cupcakes to a rack, let them cool in the tins, and remove them from the tins.
  • Make the icing:
  • In a saucepan boil the cider until it is reduced to about 1/4 cup and let it cool. In a bowl with an electric mixer beat together the cream cheese, the confectioners' sugar, the reduced cider, and a pinch of salt until the icing is smooth.
  • Spread each cupcake with some of the icing.

VEGAN APPLE CIDER CUPCAKES

Vegan Apple Cider Cupcakes image

This is the quintessential fall cupcake. Prepare the apple cider just as if you were going to drink it, boiled with plenty of whole cinnamon, cloves, and allspice. Top with Vegan Fluffy Buttercream Frosting and a healthy dose of Brown Rice Caramel Glaze, and you've got yourself autumn in a yummy little package. The secret ingredient is agar-it gives the cupcakes a bright sheen and holds things together nicely.

Yield Makes 12 cupcakes

Number Of Ingredients 18

Apple cider cupcakes:
2 cups apple cider
1 tablespoon agar flakes or 1 teaspoon agar powder
2 cinnamon sticks
1/2 teaspoon whole cloves
1/2 teaspoon whole allspice
1/2 cup apple butter
1/4 cup maple syrup
3/4 cup granulated sugar
1/3 cup vegetable oil
2 teaspoons apple cider vinegar
1 teaspoon vanilla extract
1 1/3 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
Vegan Fluffy Buttercream Frosting
Brown Rice Caramel Glaze

Steps:

  • Preheat the oven to 350°F. Line a muffin tray with cupcake liners.
  • Place apple cider, agar agar, cinnamon sticks, cloves and allspice in a small saucepan. If using agar flakes, let mixture soak for 10 minutes; if using powder, proceed to the next step.
  • Sift together flour, baking powder, baking soda and salt.
  • In a separate bowl, mix together the apple butter, maple syrup, sugar, vegetable oil, apple cider vinegar and vanilla.
  • Bring the apple cider mixture to a boil, then lower heat to bring it to a low rolling boil, careful not to let it boil over. Boil for about 15 minutes, until the cider is reduced to 1 1/4 cups and the agar agar is dissolved. (If the cider hasn't reduced enough, boil longer. If it has reduced too much, add extra apple cider to make up for the difference.) Stir frequently because the agar agar tends to stick to the sides of the pan.
  • Strain the apple cider and discard the spices. Let cool to lukewarm, then add the apple cider to the apple butter mixture and mix well. Add the flour mixture to the wet ingredients in roughly three batches, mixing well after each addition.
  • Spray the cupcake liners with nonstick cooking spray. Fill each liner three-quarters full. Bake for 22 to 25 minutes, until a toothpick inserted into the center of a cupcake comes out clean.
  • Transfer to a cooling rack and let cool completely before frosting.
  • To assemble:
  • Pipe the buttercream or agave icing onto the cupcakes and sprinkle some cinnamon or cinnamon sugar on top of it. Use a spoon to drizzle the caramel over the frosting. It would be cute to stick a cinnamon stick into the frosting if you are feeling fancy-pants.
