Steps:
- Preheat the oven to 400˚ F. Line a baking sheet with parchment paper. Combine 5 tablespoons olive oil, the onion, leeks, 2 teaspoons thyme, a big pinch of salt and a few grinds of pepper in a large pot or Dutch oven. Cook over medium-high heat, stirring occasionally, until the onion is tender, about 10 minutes. Add the sweet potatoes, parsnips, chicken broth, 3 cups water, 1 teaspoon salt and the cayenne. Bring to a boil, then reduce the heat and simmer until the potatoes and parsnips are tender, 12 to 15 minutes.
- Meanwhile, cook the bacon in a small skillet over medium heat, stirring, until browned and crisp, 5 to 7 minutes. Transfer the bacon and drippings to a large bowl.
- Add the bread, cheese and remaining 1 tablespoon olive oil to the bacon and drippings. Season with salt and pepper and toss, then spread out on the prepared baking sheet. Bake, tossing once or twice, until toasted and the cheese is melted, 10 to 12 minutes.
- Meanwhile, puree the soup with an immersion blender until smooth (or puree in batches in a regular blender). Season with salt and more cayenne to taste. Thin with water as needed. Divide the soup among bowls. Top with a swirl of creme fraiche, the croutons and the remaining 2 teaspoons thyme.

Steps:
- Heat oven to 180C/160C fan/gas 4. Generously grease a large, deep, ovenproof dish. Strip the leaves from 3 of the thyme sprigs. Mix the gruyère with all but 2 tbsp of the grated parmesan, then mix the double cream with the stock.
- Start layering up the sliced potatoes with sprinklings of the shallots, garlic, thyme leaves, cheese and most of the walnuts, plus plenty of seasoning. Drizzle a little of the cream mixture over each layer too. When you've layered in half of those ingredients, top with half of the tomatoes. Continue layering the rest of the ingredients, finishing with the last of the cream. Top with the remaining tomatoes, then sprinkle over the breadcrumbs, the remaining parmesan and walnuts, and enough thyme to look pretty. Add a few more knobs of butter, then cover with foil.
- Bake the gratin for 1 hr 15 mins, then remove the foil and bake for a further 40 mins until golden and crispy on top, and a knife poked into the centre of the potatoes slides in easily. Leave to rest for 10-15 mins, then serve.

Steps:
- To make the crust: In a food processor place flour, salt and butter. Pulse until mixture becomes a fine meal. Add the vinegar and the cold water. Keep pulsing until the mixture comes together.
- Remove from food processor and dust with flour. On a floured surface roll out into a 12" circle. Fit into a 10" tart pan. Poke bottom with a fork, cover and place in the freezer for 1 hour.
- Preheat oven to 350°F.
- Blind bake for 10 minutes. Remove from oven and immediately brush the bottom and sides with egg wash while hot. This will seal the tart shell.
- Slice potatoes as thinly as possible. Place in water to keep them from turning brown.
- In a skillet heat olive oil on medium and sauté the onion slices until soft and translucent. Sprinkle with herbes de Provence and salt. Set aside to cool.
- Place the brown sugar, pepper and nutmeg in a small bowl. Microwave the diced bacon until just about crispy. Discard the grease and place the bacon in a small skillet on medium heat then add the brown sugar mixture. Stir until the sugars dissolves into the bacon. Set aside and allow to cool.
- Arrange the potatoes forming concentric circles all around the bottom of the tart. Place half the onions on top. Next, add half of the Gruyere cheese, and half of the bacon. Repeat the process.
- Bake for about 30 minutes, or until the potatoes are soft when tested with a toothpick. Tip: When the potatoes are soft turn on the broiler and watch carefully to brown the cheese on top then serve.
- Remove from oven and garnish with parsley.

BACON AND POTATO SOUP
This is perfect on a rainy day or a fall evening. This is a typical French cream soup. The bacon adds a smoky flavor. If it is too thick for you, correct with additional cream or broth. This is courtesy of Patisserie Frederic.

Steps:
- Spray a large soup pot with cooking oil, and heat it on medium. Add the bacon, and cook until crispy, 5 to 7 minutes. Remove the bacon from the pot and place on a plate with a paper towel on top.
- Drain the excess bacon fat from the pot, and wipe the pot with a paper towel to get most of the bacon grease out but leaving a bit for flavor. When the bacon has cooled, crumble it into small pieces.
- Heat 1 tablespoon of olive oil in the soup pot used for cooking the bacon. Add the onions, cook for 5 minutes until the onions begin to soften.
- Add the carrots and jalapeno peppers, cook for a few more minutes. Add the garlic and cook for another minute.
- Stir in the sweet potatoes along with the 2nd tablespoon of olive oil.
- Add the chicken broth, water, white pepper and curry powder. Bring to a boil, then reduce to simmer. Let the soup simmer uncovered for about 30 minutes until the sweet potatoes are nice and soft.
- When the sweet potatoes are soft, purée with a handheld immersion blender. If the handheld blender isn't available, transfer in batches to a food processor to purée there. Stir in the cilantro and spinach if using after puréeing the soup. Add salt and pepper to taste.
- Serve the soup hot, topping each bowl with a bit of the reserved bacon bits.
