LOW COUNTRY SHRIMP CHOWDER

2 tablespoons unsalted butter
1 bunch scallions, thinly sliced (white and green parts separated)
1 bunch scallions, thinly sliced (white and green parts separated)
2 stalks celery, diced
1 green bell pepper, diced
2 tablespoons all-purpose flour
1 teaspoon Old Bay Seasoning
2 cups reduced-fat (2 percent) milk
1/2 cup long-grain white rice
1 1/4 cups corn kernels (from 2 ears corn)
1 pound medium shrimp, peeled and deveined
Kosher salt and freshly ground pepper

1 tablespoon dry sherry (optional)

Steps:

  • Heat the butter in a large pot over medium-high heat. Add the scallion whites, celery and bell pepper and cook, stirring occasionally, until the vegetables are crisp-tender, about 4 minutes. Add the flour and Old Bay Seasoning and cook, stirring, until the flour is lightly toasted, about 1 minute. Add the milk, 6 cups water and the rice. Bring to a rapid simmer, then reduce the heat to medium and cook until the rice is tender, about 15 minutes. Add the corn to the pot and cook 3 minutes. Stir in the shrimp and cook until they curl and turn opaque, about 3 more minutes. Season the chowder with salt and pepper and stir in the sherry. Ladle into bowls and top with the scallion greens.

This recipe is originally for "gamberi" (Italian) or "kozice" as we would say in Croatia. Preparation for both is the same, so let us follow shrimps recipe.

1000 g shrimp
200 g potatoes (one potato)
200 g white fish (small, white, any kind for stock)
4 tablespoons olive oil
100 g lemons, juice of
2 tablespoons fresh parsley leaves (minced)
1 teaspoon pepper (black, grounded)
2 teaspoons salt

Steps:

  • Divide heads and tails from shrimps.
  • Cook pealed potato with fish and head and shells of shrimps about 30 minutes (you can cut potato into pieces to fasten cooking). When done, remove shrimp shells, potato and fish from soup and drain the soup.
  • Clean the fish and mix with potato. Make puree out of fish and potato. When done, put puree into drained fish stock. Let it boil for minute or two.
  • Remove meat from shrimp tails and put them into soup. Add olive oil, lemon juice, parsley leaves and season with salt and pepper. Cook not more than 15 minutes. Serve hot.

This soup is very similar to Italian "Minestrone" soup. There may be some variations in ingredients, but "the basic plot" is the same. This is the way I have learned it in Dalmatia. It may be full meal because it is like stew. You may not include all ingredients I have mentioned; this is the "full house".

150 g carrots
100 g onions
80 g parsley roots
50 g celery root
200 g green peas
100 g French beans
50 g tomato puree
30 g barley
50 g beans
100 g bacon (pancetta, dried, smoked)
1 garlic clove
3 tablespoons olive oil
2 teaspoons salt
1 teaspoon ground pepper
2 teaspoons oregano
1 teaspoon marjoram
1 tablespoon fresh parsley leaves (minced)
100 g pasta (really small Penne Rigate or similar)
80 g parmesan cheese (grated)
1 liter water (or more)

Steps:

  • Soak beans and barley over night and cook the next day until soft.
  • Slice carrots, parsley and celery roots into small cubes, and finely mince onion and garlic. Cut pancetta into small cubes.
  • Cook French beans and green peas for 10-15 minutes drain and put aside.
  • Put olive oil into pot, add onion, carrot, parsley root, celery root and sauté it until soft. Add pancetta and garlic and sauté for 5 minutes.
  • Add some water, French beans, green peas, barley, beans and tomato. Stir and cook 5 minutes, add whole water. It may be more than 1 liter, depends how much soup you want and how dense you want it to be.
  • Season with salt and pepper and half amount of oregano. Cook about 45 minutes or until all vegetables are soft.
  • Twenty minutes before end add penne and cook until pasta is done. Before serving add majoran and oregano, taste and add salt if necessary. Serve with grated parmesan over the soup.

1400 g whole chickens (2 whole small chickens)
30 g fresh sage leaves
30 g fresh rosemary
10 g fresh thyme
1/2 teaspoon ground nutmeg
1 cup white wine
2 tablespoons olive oil
2 tablespoons lemon juice (freshly squeezed)
1 tablespoon salt
1 tablespoon pepper

Steps:

  • Cut chickens into pieces, not too big.
  • Mix wine, sage, rosemary, thyme, nutmeg, oil, lemon juice, salt and pepper into a glass bowl. Add chicken pieces and marinate for 2 hours.
  • During BBQ-ing chicken, periodically spread olive oil with rosemary branch. Serve hot when ready.

1 kg shrimp
10 g garlic (two garlic cloves, finely minced)
4 tablespoons olive oil
10 g raisins
1/2 cup strained tomatoes
1 cup fresh parsley leaves (minced)
5 g salt
pepper (to taste)
1/2 liter white wine
10 g breadcrumbs

Steps:

  • Take a large pot and put olive oil and heat it, but not too much. Add garlic and fry just 30 seconds and than add all shrimps. Using wooden ladle mix the shrimps to cover them with oil.
  • Add wine and cook for 5 minutes until alcohol evaporates. Add tomato, salt, raisins, pepper, bread crumbs. Mix gently with the ladle, or shake the whole pot to mix all ingredients.
  • Cover and cook for 10-20 minutes (depends how large shrimps are). At the and add parsley leaves and serve.
