- Heat oven to its highest setting, ideally 250C/fan 230C/gas 9. Cut each potato into 1cm-wide slices, then into 1cm-thick sticks. Blanch in a large pan of boiling water for 3 mins, then drain well.
- Shake the potatoes out onto a roasting pan, drizzle with oil, ensuring each chip is evenly coated, then season well. Bake for about 15-20 mins, turning the potatoes at least twice, until golden brown and crisp.
CHUNKY RANCH-STYLE HOME FRIES
These chunky ranch-style home fries with onions and green and red peppers are slowly cooked in butter until crisp just like at a local diner.

- Warm the butter in a 10- to 12-inch (25- to 30-cm) cast-iron skillet over medium-low heat. Stir in the potatoes to coat with a bit of butter, season them with salt and pepper and cover the skillet. Cook for 20 minutes, during which you should hear only a faint cooking sound.
- Uncover the potatoes and continue to cook for 10 minutes. Stir in the onion, bell peppers, and, if desired, chili powder and pat everything back down into a single layer. Continue to cook, uncovered, for 20 more minutes, stirring once and patting them down again. As the potatoes soften, pat them down more lightly, bringing as much of their surface in contact with the skillet as possible without mashing them.
- Immediately plate the home fries, scatter with chives if desired, and serve. Originally published April 15, 2002.

SKIN ON FRIES
These crispy skin on fries are easy to make at home, and the perfect side dish to pair with any entree. Homemade baked fries are healthier than the store bought version, and almost just as easy to make.

- Wash the potatoes thoroughly.
- Slice the potatoes length ways as thick as you want your fries to be. Cut the potato slices into french fries. You can choose your desired thickness.
- Place the fries in a bowl, and cover with water. Leave the potatoes to soak for up to 24 hours, or ideally at least 1 hour.
- Preheat your oven to 425 F / 220 C.
- Drain off the water, and pat the potatoes dry with a paper towel. Coat with oil and seasoning.
- Place the french fries on a baking sheet covered with parchment paper.
- Bake for about 20 minutes, or until crispy. Turn the fries once halfway through cooking to ensure an even result.

GARLIC HOME FRIES

- Bring a large pot of salted water to a boil. Add the potatoes, cover and cook over medium-high heat until just tender, about 6 minutes; drain.
- Heat the butter and olive oil in a large cast-iron skillet over medium heat; add the potatoes and spread into a single layer. Cook, undisturbed, until they start browning on the bottom, about 5 minutes. Add the onion and sprinkle with the paprika; flip the potatoes and cook 5 more minutes. Stir once, then continue cooking until the potatoes are mostly golden brown, about 5 more minutes.
- Meanwhile, roughly chop the garlic, pile the parsley on top and sprinkle with 1 teaspoon salt. Chop and mash together until finely minced. When the potatoes are done, add the garlic mixture to the skillet and toss to coat; cook until heated through, about 2 minutes. Season with salt and pepper.
CHEF JOHN'S FRENCH FRIES
I don't think most people realize that any decent French fry needs to be twice fried. The first frying in done at a lower temperature, which softens the potato and prepares the starchy surface for the second frying's crispification.

- Soak potatoes in a large bowl of water for about 30 minutes. Pat dry thoroughly with paper towels.
- Heat oil in a deep-fryer or large saucepan to 275 degrees F (135 degrees C). Gently add the potatoes in the hot oil for about 5 minutes, stirring and flipping the potatoes occasionally. Remove potatoes from oil with a slotted spoon to drain on paper towel and to cool completely.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Fry the potatoes again until golden brown, 5 to 6 minutes. Blot with a paper towel. Sprinkle with salt to serve.

HEAVENLY COUNTRY-STYLE HOME FRIES
These country-style home fries are a wonderful accompaniment to any breakfast, brunch or (in my family's case) breakfast for dinner. They turn out buttery and savory with a crispy brown outer coating. I like to serve these home fries when I make breakfast for dinner for my family. We enjoy them with a juicy, smokey ham steak cooked in my cast iron skillet with a side of baby peas. Yum!

- Place diced potatoes, onion, paprika, garlic powder, salt and black pepper in a medium mixing bowl. Toss to evenly coat the potatoes.
- In a large, non-stick skillet over medium heat, melt butter.
- Increase skillet heat to medium-high and add potato mixture. Toss to coat evenly with butter.
- Cover skillet and cook for 10-12 minutes, turning and scraping the potatoes to prevent burning.
- When potatoes are fork-tender, remove skillet cover.
- With the back of your spatula, pat potatoes down into an even layer in skillet. Allow to fry untouched for 2 minutes. Then turn potatoes over and do the same for another 2 minutes. This will nicely brown and crisp the outside of the potatoes.
- Serve immediately.
CHUNKY RUSTIC-STYLE HOME FRIES
Again this recipe comes from a favorite cookbook of mine "A Real American Breakfast: The Best Meal of the Day, Any Time of the Day" by Cheryl Alters Jamison and Bill Jamison. Please Note: If you don't have leftover potatoes for the Home Fries, you can make equally good home fries from scratch. Starting with raw potatoes means a longer cooking time, but they require little more than an occasional stir while you're preparing the rest of your breakfast and figuring out your going to do with the rest of your day.

TWICE-COOKED RUSTIC FRIES

- Preheat oven to 425 degrees F.
- Wash and gently scrub potatoes under cold running water to remove any excess dirt and thick skin. Poke with a fork to make holes all over - this allows the moisture to escape while baking. Drizzle with extra-virgin olive oil, season with salt and place into preheated oven. Bake for 35 to 40 minutes until a paring knife goes through cleanly but the potato is still firm to touch.
- Remove from oven and allow to cool so you can handle them. Cut into large wedges and lay out in a single layer to dry slightly before dusting with a little potato starch. Turn them over and dust again.
- Heat some oil in a large pot to 350 degrees F.
- Fry the potatoes in batches for 5 to 7 minutes until golden brown. Drain on paper towels and season with salt immediately.
SPICY CLASSIC HOME FRIES
Steps:
- Bring a large pot of water to a boil, add 2 tablespoons of salt and the potatoes, bring to a boil and cook, until just tender, about 8 minutes. Drain well in a colander.
- Heat 1 tablespoon of oil in a large cast iron skillet over medium heat until it begins to shimmer, add the onion and cook, stirring a few times, until soft and lightly golden brown, about 5 minutes. Remove the onions to a plate.
- Add the remaining oil and the butter to the pan, increase the heat to high and heat until the butter has melted and the oil is sizzling. Add the potatoes and chile powder and season with salt and pepper and immediately press down into an even layer on the bottom on the pan, using a wide metal spatula. Cook, pressing down occasionally and not turning, until the potatoes on the bottom are golden brown and crusty, about 5 minutes. Turn the potatoes over, press down again and cook until the potatoes on the bottom are golden brown, about 5 minutes longer. Stir in the onions, season with more salt and pepper, transfer to a shallow bowl or a platter and garnish with green onion and cilantro.
RUSTIC GRILLED HOME FRIES
This was created by my dad and I when we discovered fingerling potatoes in the grocery store. We cut them with a fancy cutter to make the ridged edges but you can just use a regular old knife. Very simple and easy and taste better than deep fried fatty french fries you get in the pub-without the guilt! excellent served alongside fish. You can add more spices if you like-but the basic salt and pepper allows the lovely flavour of the potatoes to shine through.

- Scrub potatoes and cut in half or into thirds lengthwise (depending on the size-try to make them all equal and fairly big so they'll hold up well).
- Place potatoes in a pot with boiling salted water and blanch for 8 minutes.

- Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
