CHIMICHURRI SAUCE

1/2 cup chopped Italian parsley
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh oregano
1/4 cup chopped white onion
3 tablespoons minced garlic
2 tablespoons chopped red bell pepper
3 tablespoons red wine vinegar
1/4 cup fresh lime juice, plus 1 tablespoon finely grated lime zest
1/2 cup extra-virgin olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Blend all the ingredients in a food processor until smooth. Refrigerate at least 2 hours to allow the ingredients to settle and the flavors to meld before serving.

This bright sauce, filled with herbs, has some jalapeno in it for an added punch. Use this Argentinian condiment to top grilled meats and fish or toss with vegetables to make a simple dinner special.

3 tablespoons red wine vinegar
4 cloves garlic, roughly chopped
Kosher salt and freshly ground pepper
1/2 cup packed fresh flat-leaf parsley leaves
1/2 cup packed fresh cilantro leaves
2 tablespoons packed fresh oregano leaves
1/4 cup ice cubes
1 jalapeno, stemmed, seeded and roughly chopped
1/4 cup plus 2 tablespoons extra-virgin olive oil

Steps:

  • Combine the vinegar, garlic and a generous pinch of salt in a blender and blend on low until smooth. Add the parsley, cilantro, oregano, ice and jalapeno and blend on medium speed. With the blender running, slowly drizzle in the olive oil and puree until smooth, about 1 minute, stopping to scrape down the sides if necessary. Season the chimichurri with more salt and pepper and transfer to a serving bowl, cover with plastic and refrigerate until ready to serve.

Spicy and very low in fat....serve with steamed veggies and a salad for a delicious meal...fantastic in the summer...You can use a bottle chimichurri sauce, or you can use the one that I have posted...both are equally good...

1 1/2 lbs sirloin steaks (without bones)
1 1/2 cups fresh cilantro stems
1 cup white vinegar
3/4 cup chopped onion
2 teaspoons ground cumin
2 teaspoons dried thyme
2 teaspoons fresh cracked black pepper
1 teaspoon kosher salt
6 minced garlic cloves
3 bay leaves
cooking spray

Steps:

  • Trim fat from the steak, and set aside.
  • Combine cilantro and the next 9 ingrediants in a large ziplock bag. Add steak to the bag, and seal. Marinate in refridgerator for 3 hours, turning occasionally.
  • Remove steak from the bag; discard marinade.
  • Prepare the grill.
  • Place steak in grill rack coated with cooking spray; grill steak for 8 minutes on each side untill desired degree of doneness. let stand for 3 minutes.
  • Cut steak diagonally across grain into thin slices.
  • Serve with Chimichurri sauce.

1/4 cup fresh oregano leaves
1 heaping tablespoon kosher salt
1 teaspoon crushed red pepper flakes
1 cup extra-virgin olive oil
1/2 cup red wine vinegar
1/4 cup water

Steps:

  • Pulse the garlic, shallots, parsley, oregano, salt, and red pepper in a food processor until roughly chopped. Add the oil, vinegar, and water and pulse to make a textured sauce. Transfer to a serving bowl.

1 large bunch fresh cilantro, stems removed
1/2 bunch fresh flat-leaf parsley, stems removed
1 teaspoon ground cumin
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
3 cloves garlic
Juice of 3 limes
1/2 cup olive oil

Steps:

  • Fill a blender or food processor with the cilantro and parsley leaves. Add the cumin, salt, cayenne, garlic and lime juice. Put the lid on the blender, then remove the center piece. With the blender on low, drizzle in the olive oil. Blend until pureed and somewhat smooth. Serve with grilled steak or other meat.

2 tbsp white wine vinegar (Sauvignon Blanc or rice wine vinegar are good)

Steps:

  • Put the herbs, garlic, onion and chilli in a bowl. Pour the oil and vinegar in and add salt. Mix together.
