PAKISTANI SPICED POTATOES (ZWT-9)
Found at a cooking-by-country website, this recipe boasts all the things I want from a recipe. It can be served hot or cold, can be served as a starter or a side-dish to virtually all main-courses, can be made ahead, is ingredient friendly & has a 35 min prep time (Cool time not included)..I rest my case. Steps:
- Place unpeeled potatoes in a lrg saucepan, cover w/water, bring to the boil & cook for 20 min or until very tender. Remove from the heat & allow to cool.
- Peel the cold potatoes & cut into 1-in cubes (2.5 cm).
- Heat the oil (or ghee) in a lrg frying pan until hot. Add potato cubes & fry until golden brown on all sides.
- Sprinkle potatoes w/the remaining ingredients, stir to evenly coat & add salt as desired. Remove w/a slotted spoon & serve hot or cold.
YOYOS (A TUNISIAN SWEET TREAT FOR ZWT-9)
I have always felt that doughnuts were something you bought at a bakery because they were just too labor-intensive to do otherwise. This recipe for Tunisian YoYos may well have changed my mind & I will be interested to know if other chefs feel as I do. The recipe was a little vague about times, saying "60 min plus rest time of 1 hr". So my division of times is a bit of guesswork based on recipe directions & does not include the 1 hr rest time. Enjoy!

Steps:
- Place eggs, oil, orange juice, 1 tbsp of coconut & sugar in a blender or food proc & process until smooth.
- Transfer the mixture to a lrg mixing bowl. Then sift in flour & baking soda. Knead to a soft dough (adding a sml amt of water if needed). Cover bowl & set aside to rest for 1 hour.
- Just before you are ready to cook the doughnuts, make the syrup by placing the sugar, water & lemon juice in a saucepan. Bring to a boil (while stirring) & cook until the sugar is dissolved.
- Reduce heat. Stir in the honey plus the remaining 1 tbsp of the coconut & simmer for 10 minutes. Keep warm.
- Heat a deep fat fryer to 350F (180C).
- Form the dough into balls about the size of a lrg walnut. Then flatten them slightly & punch a hole thru the center using your finger (which has been dipped in flour).
- Deep fry a few doughnuts at a time for about 4 min until golden brown on all sides. Drain on paper towels.
- Dip ea doughnut into the warm lemon-honey syrup & serve immediately.

- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Whisk gram flour, salt, cayenne pepper, cumin seeds, and baking powder together in a bowl. Stir lukewarm water into flour mixture, 1/2 cup at a time, until batter has a thick pancake-batter consistency.
- Dip potato slices in batter until well-coated.
- Working in batches, cook coated potatoes in hot oil, turning once, until golden and crispy, 2 to 4 minutes. Transfer potatoes to a paper-towel lined plate to drain.

- Make ginger whipped cream: in a bowl, beat the whipping cream, sugar, and ginger until peaks form; chill, covered in the refrigerator until ready to serve.
- Make the potion: in a saucepan, combine the milk, sugar, pie filling, and pie spice over medium to med-high heat, stirring to dissolve the pie filling.
- Continue heating until steaming but not simmering.

Steps:
- Heat vegetable oil in a pot over medium heat. Stir in garlic paste and ginger; cook and stir for about 1 minute. Add the minced chile, cumin, salt, and yogurt.
- Stir in chicken pieces and bell pepper. Cover pot and simmer over low heat, until the oil separates and chicken is mostly cooked, 20 to 30 minutes.
- Mix in potatoes; add a little water, if necessary. Cook on low heat until potatoes are tender, about 20 minutes more. Garnish with chopped cilantro and serve.

This is another recipe I found at a cooking-by-country website & is further proof that the countries of Cambodia, Pakistan, Thailand & Vietnam share a common affection for the use of coconut milk across all courses of their cuisines. Altho titled Buddha Rice at the website, its Vietnamese name is Com Chay. Cook time includes 10 min rest time & I allowed 5 min for ingredient prep. Enjoy!

Steps:
- Heat oil in a lrg saucepan. Add ginger & stir-fry for 1 min until fragrant.
- Add rice & cook for 2 min, stirring to coat well.
- Add bay leaf, coconut milk, water & soy sauce. Bring to a boil & cook for about 5 min (uncovered & without stirring, until holes form all over the top).
- Reduce heat to very low, cover & continue to cook for a further 20 minutes.
- Remove from the heat & leave to rest for about 10 min (keep covered).
- Uncover, add salt as desired, fluff the rice up w/a fork & serve hot.

THAI ICED TEA (ZWT-9)
There are several recipes in the data base for Thai Iced Tea, but none like this one. Nancie McDermott was credited for this recipe found at "Quick & Easy Thai: 70 Everyday Recipes". From her intro: "Sold in 1 lb cellophane-wrapped packets in Asian markets, this finely chopped black tea is spiced w/cinnamon, star anise & vanilla, & then tinged w/a bit of food coloring to create its gorgeous terra-cotta hue. Like Thai coffee, Thai tea is traditionally sweetened well w/sugar as it brews & crowned w/a generous splash of evaporated milk or half-&-half just before serving. You can brew Thai tea in a teapot, drip coffeemaker or French press (making it very strong & adding sugar while the tea is still very hot). Time has been estimated & does not include cool & chill time. Enjoy!

- In a med saucepan over med-heat, bring the water to a boil. Stir in the Thai tea powder & remove from heat. Stir well to mix in the sugar & then let it cool (stirring occ to dissolve sugar).
- When the tea has cooled to room temp, strain it thru a fine-mesh strainer or coffee filter into a pitcher & chill until serving time.
- To serve, fill 4-6 tall glasses w/ice & then add about 3/4 cup Thai tea to ea glass. Top off ea glass w/3-4 tbsp evaporated milk. Serve at once, as the evaporated milk cascades over the ice & swirls languidly into the tea.

- Place lemon grass, shallots, garlic, lime zest, turmeric & water in a food proc & process to a paste.
- Transfer the lemon grass paste to a mixing bowl. Add the coconut, sugar plus salt & mix well.
- Add the pork & mix to coat well. Cover w/cling film & leave to marinate for at least 1 hr at rm temperature.
- Preheat the grill to hot. Thread the pork cubes onto skewers & cook for 15-20 min, turning freq & basting w/the marinade. Serve immediately.
