FAST TROPICAL MANGO SALSA

Yet another recipe from Canadian Magazine, Chatelaine. What's great about their recipes is they are triple tested and always tasty. Great to dress up grilled chicken, steak, fish or burgers. Recipe is easily doubled.

1/2 firm ripe mango
1/2 yellow pepper
1/2 pint cherry tomatoes or 1/2 pint grape tomatoes
1 jalapeno peppers or 1 teaspoon chopped pickled jalapeno pepper
1 green onion
1 tablespoon olive oil
2 teaspoons freshly squeezed lime juice
1 teaspoon bottled chopped garlic or 1 clove garlic, minced (I use minced garlic)
1/2 teaspoon salt
1/4 cup chopped fresh coriander or 1/4 cup fresh cilantro

Steps:

  • Peel mango.
  • Slice fruit from stone in long thick pieces, then chop into smaller bite sized pieces.
  • Chop pepper into similar-size pieces.
  • Slice tomatoes into 2 or 3 rounds.
  • Core and seed jalapeno, then mince.
  • Thinly slice onion diagonally.
  • Place all in a large bowl and drizzle with olive oil and lime juice.
  • Stir in garlic, salt and basil, coriander or cilantro until evenly mixed.
  • Salsa will keep well for several hours covered in the fridge.

Tropical Chicken With Mango Yogurt Dipping Sauce image

We were invited to a BBQ by our neighbour and someone brought along this delicious skewered chicken and mango dipping sauce. Being the foodie that I am and loving the taste of the fruit, chicken and dipping sauce I pleaded for the recipe.

1 large mango, peeled
1/4 cup plain yogurt
1 jalapeno pepper, seeded and coarsely chopped
1 lime, juice of
1 green onion, coarsely chopped
salt, to taste
1/2 fresh ripe pineapple, peeled and cut into chunks. (Tinned will work too)
3 boneless skinless chicken breasts, cut into cubes
2 small green bell peppers, cut into chunks (or 1 red and 1 green)
1 small red onion, cut into chunks
1/2 teaspoon salt
fresh coarse ground black pepper, to taste
nonstick cooking spray (if needed)
6 bamboo skewers, soaked in cold water for at least 30 minutes

Steps:

  • To prepare dipping sauce place mango in a food processor or blender, add yogurt, jalapeno, lime juice, green onion and salt.
  • Pulse until smooth and refrigerate until needed.
  • Thread cubed chicken, pineapple, green peppers and red onion onto the soaked bamboo skewers sprinkling with salt and pepper.
  • Heat BBQ or charcoal grill to medium heat and spray with cooking oil if needed.
  • Place skewers on grill and cook 5 to 7 minutes per side turning as needed until the chicken is thoroughly cooked.
  • Serve with the dipping sauce.

TYPICALLY TROPICAL MANGO CHICKEN

A dish I created for the RSC #8. It has it all, and you just need to serve it with rice and fried plantains. I made it several times before posting it and came to the conclusion that if I replaced the scotch bonnet with a green or red chili it is still a very good dish but it loses some of the taste sensation. I realize that it is sometimes difficult to obtain certain ingredients and that the heat of a scotch bonnet might not be to your taste, so please feel free to substitute if availability is a problem. Note that the raisins need to be soaked for several hours and this is not included in the prep time.

1/2 cup raisins
4 tablespoons dark rum
1/2 cup dried coconut
1/2 cup milk
2 tablespoons vegetable oil, divided
1 lb chicken breast, cubed
1 onion, chopped
2 cups butternut squash, small cubes
5 garlic cloves, finely chopped
1 scotch bonnet pepper, seeds removed and very finely chopped (the size is up to you)
salt and pepper
1 teaspoon ground ginger
1 teaspoon curry powder
1 red bell peppers or 1 yellow bell pepper, cut into short strips
1 1/2 cups chicken stock (approx)
1 mango, cut into cubes
1 tablespoon lime juice (or more)

Steps:

  • Soak the raisins in the rum for a minimum of 4 hours or overnight.
  • Mix the coconut with the milk, set aside.
  • In a large skillet, heat 1 tablespoon of the oil and brown the chicken, remove from the pan.
  • Heat the other tablespoon of oil, add to the pan: the onion, butternut squash, garlic, scotch bonnet and some salt and pepper, fry for approx 5 minutes on medium heat.
  • Now add the ginger and the curry powder, fry for another 5 minutes whilst stirring.
  • Add the sweet bell pepper strips, coconut/milk mixture and chicken stock and return the chicken cubes to the skillet.
  • Bring to the boil and simmer for 15 minutes.
  • Then add the soaked raisins and the mango cubes.
  • Heat through, add the lime juice and taste to check if you want to add more.
  • Serve with rice and fried slices of plantain.

4 boneless skinless chicken breasts
2 tablespoons lime juice
1 tablespoon minced ginger
1 teaspoon black pepper
1/2 teaspoon salt
1/3 cup white wine
1/4 cup olive oil
1 cup cubed mango (fresh or frozen)

Steps:

  • Combine lime juice, ginger, pepper, salt, oil, and wine in large freezer bag. Shake.
  • Add chicken breasts, shake to coat.
  • Marinate 1-2 hours.
  • Remove chicken from marinade, save marinade.
  • Grill chicken, basting several times throughout. It should take about 5-7 minutes on each side over a med-high heat.
  • Add mangoes during last 5 minutes, grilling lightly and stirring a little as you go.
  • Serve over rice.
  • If you like, heat leftover marinade until boiling and use as a sauce.

From my mother-in-law. If you don't have coconut milk you can use 2/3 cup hot water and 3 Tbsp coconut milk powder. You can also use fresh mango instead of canned.(Add it just before serving, as it is very delicate.)

4 teaspoons oil
4 chicken breast fillets
1 medium onion, chopped
2 teaspoons fresh ginger, grated
1 garlic clove, crushed
1 1/3 cups canned mango, slices
2 teaspoons chicken bouillon
2/3 cup coconut milk
2 teaspoons cornstarch

Steps:

  • Fry chicken until golden; set aside.
  • Fry onion, garlic and ginger about 5 minutes.
  • Combine coconut milk, chicken bouillon and corn starch. Add to the onion mixture. Add chicken back to the pan. Bring to the boil, stirring until it thickens. Stir in mango slices or fresh mango.
  • Simmer for about 5 minutes.
  • If desired, serve on a bed of jasmine rice.

12 ounces boneless skinless chicken breast halves
1/2 cup low sodium chicken broth
2 teaspoons lime peel or 2 teaspoons orange rind, finely shredded
2 tablespoons lime juice
2 teaspoons brown sugar
2 teaspoons curry powder
1 teaspoon cornstarch
to taste nonstick cooking spray
1 large red onion, sliced
2 cloves garlic, minced
2 teaspoons canola oil
2 cups mangoes or to taste papaya, peeled and chopped
2 cups rice, hot, cooked
to taste lime peel, cut into thin strips (optional)

Steps:

  • Cut chicken into bite size strips; set aside. Sauce: stir together broth, shredded lime peel, lime juice, brown sugar, curry, and cornstarch in a small bowl; set aside. Spray an unheated large wok or 12" skillet with cooking spray.
  • Preheat over medium heat. Add onion and garlic; stir-fry about 3 minutes or until crisp tender.
  • Remove from wok.
  • Pour oil into hot wok.
  • Add the chicken; stir fry for 2 to 3 minutes or until chicken is tender and no longer pink.
  • Push chicken from center of wok.
  • Stir sauce; pour into center of wok.
  • Cook and stir until thickened and bubbly.
  • Return onion mixture to the wok.
  • Add mango.
  • Stir to coat all ingredients with sauce. Cook and stir about 2 minutes more or until heated through.
  • Serve over hot cooked rice. Garnish with strips of lime peel, if desired.

I made this for Ready Set Cook 2006. This Easy, Sweet, Caribbean recipe consist of chicken strips coated with coconut and fried with a warm rum mango sauce with a little kick. Scotch Bonnet Pepper are very HOT! Be careful not to get in your eyes. Best to wear gloves when handling. Serve over rice for a main meal or as appetizers.

1/2 cup cornstarch
1/2 teaspoon grated nutmeg
1/2 teaspoon black pepper
1/4 teaspoon salt
1 1/2-2 lbs chicken breasts, cut into strips
1/4 cup rum
2 large mangoes, peeled and diced
1/2 teaspoon grated nutmeg
1/2 teaspoon grated cinnamon
1/3 cup packed light brown sugar
1 large fresh lime juice, and zest or
1 large fresh lemon juice, and zest
1 teaspoon fresh grated ginger
1 teaspoon cornstarch
1/2 teaspoon scotch bonnet pepper (optional)
3 egg whites
2 1/2 cups grated coconut
oil, to fry

Steps:

  • Mix the first 4 ingredients together in a large container with a top. Add chicken pieces, toss till coated and set aside.
  • Place all Mango Rum Sauce ingredients in a blender or food processor and blend till smooth. Add to a pot and simmer over low heat for 10 minutes. Keep warm.
  • Whisk egg whites till frothy. Toss in chicken pieces till coated.
  • Place coconut in a bowl and dip each piece of chicken to coat with coconut.
  • Set aside.
  • Place enough oil to cover bottom of a large pan by 1/2 inch and heat to medium high.
  • Cook 1/2 the chicken at a time about 4-5 minutes each side. Do not over crowd the pan.
  • Drain cooked chicken on paper towels.
  • Place chicken on a serving platter serve with Mango Rum Sauce.
