CHOCOLATE CHIP COOKIE DOUGH DIP
I'm not sure if it taste like chocolate chip cookie dough exactly because of the cream cheese, but it is very good. You can serve this dip with graham crackers, vanilla wafer cookies or pretzels. I love it for when I need a sweet dessert but don't have the time to bake cookies. Cook time is cooling time for the butter mixture.

Steps:
- In a small saucepan, melt the butter with the brown sugar over medium heat. Stir continuously, until the brown sugar dissolves. (You can also do this in the microwave but watch it closely. The butter/sugar mixture will boil over fast. Stir every 30 seconds or so.)
- Remove from heat, whisk in the vanilla and set aside to cool.
- Beat the cream cheese and confectioner's sugar for 1 minute.
- Slowly beat in the cooled butter mixture and beat again for another minute.
- Stir in the chocolate chips and nuts, if using.
- Pour into a serving bowl and refrigerate.
- Garnish with additional chocolate chips or nuts, if you choose.

This is an awesome dip to have at a gathering. It tastes like cookie dough, but is more spreadable and does not have raw egg in it. Use chocolate graham wafers (or regular ones) or 'Nila crackers to spread it on. A Nurse that I work with brought this to a party in a beautiful serving bowl and everyone loved it. - Line a small, rimmed baking sheet with parchment paper. Using a 1/4-ounce (1/2 tablespoon) cookie scoop, portion hot fudge into 18 balls; place on prepared baking sheet. Freeze, uncovered, until firm, at least 30 minutes, up to 12 hours.
- Meanwhile, whisk together flour, baking soda, and salt in a small bowl.
- Beat together butter, white sugar, and brown sugar in the bowl of a stand mixer fitted with a paddle attachment on medium speed until light and fluffy, 3 to 4 minutes. With mixer on low, add eggs, one at a time, beating until just combined after each addition. Beat in vanilla until just combined. With mixer on low, gradually add flour mixture, beating until just combined. Gently fold in chocolate chips until evenly distributed.
- Cover cookie dough with plastic wrap and refrigerate until firm, at least 30 minutes or up to 12 hours.
- Preheat the oven to 375 degrees F (190 degrees C). Line 3 large, rimmed baking sheets with parchment paper.
- Using a 1-ounce (2 tablespoon) cookie scoop, portion 1 scoop of chilled cookie dough, and place in the palm of a floured hand. Using a floured thumb, gently create a cavity in the center of the cookie dough. Place 1 frozen fudge ball in center cavity; scoop an additional cookie dough portion, and place on top of fudge ball, wrapping excess dough around fudge ball and rolling in hands to seal.
- Place on a prepared baking sheet; repeat process with remaining dough and fudge balls, placing 4 inches apart on prepared baking sheets (6 per sheet).
- Refrigerate, uncovered, until firm, at least 30 minutes, up to 12 hours.

This is similar to this recipe (http://www.food.com/recipe/chocolate-chip-cookie-dough-dip-171792). I changed quite a few things. Some people complained that the original dip was more cream cheesey than anything so I took that out. I also added whipped cream and some vanilla pudding mix. It's a lot lighter than it would be with cream cheese. It's good with graham crackers, Nilla Wafers, pretzels, apples ... pretty much anything! Enjoy!

- Melt the butter and brown sugar over medium heat, being sure not to burn the mixture.
- Remove from heat and whisk with vanilla extract. Wait a few minutes for the mixture to cool.
- Add a couple of tablespoons of pudding mix and stir. Add about 1/4 of the Cool Whip and stir again. It should be a thick mixture, not too liquidy, but not solid.
- Put in the rest of the Cool Whip and stir. Pour in the chocolate chips and stir.
- Put in refrigerator for a couple of hours to cool completely.
