TUROS CSUSZA (PASTA WITH COTTAGE CHEESE)
This recipe is great for nights when you get home and need something to wind down. 'Turos Csusza' is a Hungarian dish I learned from my Dad last year when I turned twelve. It consists of bacon, egg noodles, sour cream, and cottage cheese. 'Elvezet!'

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly-salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain well.
- Cook the bacon in a skillet over medium-high heat until crisp; drain, crumble, and set aside.
- Place the drained noodles in a large baking dish. Stir the sour cream into the noodles. Spoon the cottage cheese evenly over the top of the noodle mixture. Sprinkle the crumbled bacon over the top; season with salt.
- Bake in preheated oven until the cottage cheese softens, 3 to 5 minutes.

- In a skillet, fry the bacon over moderate heat till crisp, drain on paper towels, and keep the drippings hot.
- Bring a large kettle of salted water to a rolling boil, add the noodles, return to the boil, and cook till tender, 10 to 12 minutes. Drain the noodles well, then add the bacon drippings, cottage cheese, and pepper and toss over very low heat to warm the cheese. Add the bacon, toss again, and serve immediately.

This is a Hungarian recipe that uses DRY cottage cheese. My mother would make this frequently as I grew up. Tastes great when eaten at a-little-warmer than room temperature.

Steps:
- Using a large pan, cook the diced bacon until crisp; remove bacon from pan and keep warm.
- On low heat, stir the sour cream into the bacon fat.
- To the pan, add the noodles, bacon, dry cottage cheese, salt and pepper. Combine gently.
- On low heat, gently fold the contents until heated through. Adjust seasonings.
- With lid on pan, let set for half hour before serving. They taste best if not too hot.
- Garnish with more sour cream and dill if desired.

- Split and toast English muffins to desired color.
- Place 1/4 of the cottage cheese on each muffin half.
- Place 1/2 a Canadian bacon slice on each half of each muffin.
- Place 1 tomato slice on each muffin half.
- Salt and pepper tomato slice to taste and serve.
- Optionally, you may quickly brown the Canadian bacon in a hot pan before placing it on the English muffin.

- Saute bacon until crisp in large frying pan. Remove bacon; set aside. Stir sugar and salt into bacon drippings. Add cabbage, stirring until cabbage is coated with bacon drippings. Cover and cook 7 to 10 minutes. Add cooked noodles and bacon, stirring to blend. Adjust seasoning to taste. , Spoon into 2-quart baking casserole; cover tightly and bake at 325° for 45 minutes. - Mix flour, eggs and water by adding water gradually because amount of water can depend on the flours. (I needed exactly 100 ml) Knead it to a flexible and soft dough then roll it out with a pasta machine. My machine has 7 grade, I rolled first on 7th, 6th and then finally 5th)
- Sprinkle a kitchen towel with flour and lay the pasta on it and let the sheets try for 30 minutes- 1 hour. Cut sheets lengthwise put two on each other and cut them julienne with a knife. Use your fingers to separate the ones stick together.
- Boil some water, add salt and some drops of oil. Cook pasta in bunches in boiling water until it comes up to the surface. Use a small sieve to remove pasta and pour cold water on it to stop cooking process. Move sieve to remove any excess water and put pasta into another pot, mix with the oil so they don’t stick to each other. Season with some salt.
