Heavenly Chiffon Cake image

Serve this light and airy spice cake after a heavy meal. It's drizzled with a sweet, buttery frosting.

2 ¼ cups sifted cake flour
1 ½ cups sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground nutmeg
½ teaspoon ground allspice
⅛ teaspoon ground cloves
½ cup cooking oil
7 egg yolks
¾ cup cold water
7 egg whites
½ teaspoon cream of tartar
Browned Butter Icing (see recipe)
½ cup sliced almonds or chopped nuts

Steps:

  • In a large mixing bowl, mix flour, sugar, baking powder, cinnamon, salt, nutmeg, allspice, and cloves. Make a well in the center of the mixture Add oil, yolks, and water. Beat with electric mixer on low to medium speed until combined. Beat on high speed for about 5 minutes or until satin smooth. Set aside.
  • Thoroughly wash beaters. In a very large mixing bowl, beat egg whites and cream of tartar until stiff peaks form (tips stand straight). Pour batter in thin stream over egg whites; gently fold together.
  • Pour batter into an ungreased 10-inch tube pan. Place pan on a baking sheet or pizza pan. Bake in a 325°F oven for 60 to 65 minutes or until top springs back when lightly touched. Immediately invert cake in pan. Cool completely.
  • Gently loosen sides of cake from pan with a spatula or knife. Invert cake over a serving plate and remove pan. Drizzle with Browned Butter Icing and sprinkle with nuts.

This cake is truly heavenly, with a light texture and a hint of spice.The recipe comes from my old recipes file.

2&1/4 cups sifted cake flour
1&1/2 cups sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg

1/8 teaspoon ground cloves
1/2 cup cooking oil

Steps:

  • 3. Browned Butter Icing: In a small pan, heat 3 tablespoons butter over medium low heat for about 15 minutes or until browned. Remove browned butter from heat. Place 2 cups sifted powdered sugar in a medium bowl. Stir in browned butter, 1 teaspoon vanilla and 3-4 tablespoons milk until icing consistency. Makes 3/4 cup.

My grandmother ALWAYS had these cookies waiting when we came to visit. One bite and I am back in her kitchen. The icing is great on other things too...brownies, cake, graham crackers... it all tastes great!

1/2 cup butter
1 1/2 cups packed brown sugar
2 large eggs
2 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 cup sour cream
1 teaspoon vanilla
2/3 cup walnuts, chopped
4 tablespoons butter
1 cup confectioners' sugar, sifted
1/2 teaspoon vanilla
1 -2 tablespoon hot water

Steps:

  • Cookies.
  • Cream butter.
  • Add sugar and eggs, cream together.
  • Sift flour, baking powder, baking soda, and salt together.
  • Add to sugar mixture with sour cream and vanilla.
  • Blend in nuts.
  • Chill until firm enough to drop onto cookie sheet.
  • Bake 10-15 minutes at 400°.
  • When cool, ice with.
  • Burnt Butter Icing.
  • Melt butter until golden brown.
  • Blend in confedtioner's sugar and vanilla.
  • Stir in 1-2 T hot water until icing spreads smoothly.
  • This amount of icing is enough to frost about 30 cookies.

You must try this cake. I can't think of enough words to describe how good it is. Keep your eye on the butter for the frosting. You want it to be a nice nutty light brown - don't let it get too dark or it may taste a little burnt. This frosting will set up quickly and can be difficult to spread if you skimp on the milk, so add a little more than you think you will need.

1/4 cup butter
2 large eggs
2 cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon baking soda

1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 cup shortening
1 1/2 cups sugar
1/2 teaspoon vanilla
3/4 cup buttermilk
3/4 cup canned pumpkin
1 1/4 cups pecans, toasted and chopped (optional)
3/4 cup butter
6 cups powdered sugar
2 teaspoons vanilla
3 tablespoons milk, more as needed

Steps:

  • Allow butter and eggs to stand at room temperature for 30 minutes.
  • Meanwhile, grease and flour two 8" cake pans.
  • In a bowl, stir together flour, baking powder, cinnamon, baking soda, ginger, salt, nutmeg and cloves until mixed. Set aside.
  • In a large mixing bowl with an electric mixer beat softened butter and shortening on high speed for 30 seconds. Add sugar and vanilla and continue mixing. Add eggs, one at a time, beating well after each addition.
  • In a small bowl, stir together buttermilk and pumpkin. Alternately add flour mixture and pumpkin mixture to butter and sugar mixture, ending with flour mixture. Beat on low speed just until combined. Pour into prepared pans. Batter will be thick. Use a spatula to spread evenly in pans or cakes will be lumpy.
  • Bake in a preheated 350°F oven for 30 to 35 minutes or until cake tests done. Cool in pans for 10 minutes then turn out onto wire rack to cool completely.
  • For Frosting:.
  • Melt butter in a small saucepan over medium heat. Reduce heat to medium low and continue cooking at a simmer until butter turns the color of light brown sugar. This will take a few minutes. Remove from heat and let stand at room temperature for 15 minutes.
  • Meanwhile, in a large mixing bowl combine powdered sugar with milk and vanilla. Add browned butter and beat with an electric mixer on low speed until combined. Beat on high speed, adding more milk as needed to get a spreading consistency.
  • Frost cake. If using, press toasted pecans around side of cake. Can take a sieve or sifter and dust the top with pumpkin pie spice if you wish.

1 cup butter, softened
2 1/2 cups sugar
3 large eggs
3 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking powder

2 1/2 cups diced green tomatoes
1 cup golden raisin
1 cup chopped walnuts
1/2 cup butter
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour a 12 cup bundt pan.
  • Beat butter and sugar with a mixer until creamy.
  • Add eggs, 1 at a time, beating well after each addition.
  • Combine flour, cinnamon, baking powder, salt, and nutmeg.
  • Gradually add dry ingrediens to butter mixture, beating well. (Batter will be soft.)
  • Stir in tomatoes, raisins, and walnuts. Spoon batter into prepared pan. Bake for 70 to 75 minutes, or until a tester inserted in center comes out clean.
  • Let cool in pan on wire rack for 10 minutes. Remove from pan, and let cool completely.
  • Icing: In a medium saucepan over low heat, melt butter. Cook 6 to 8 minutes, or until butter is lightly browned. Whisk in confectioners' sugar until smooth.
  • Spoon Browned Butter Icing over cake.

6 ounces self-raising flour
6 ounces butter
6 ounces brown sugar (light)
3 eggs (beaten)
4 tablespoons whiskey
1/4 cup orange zest
6 ounces confectioners' sugar
2 ounces butter
2 tablespoons clear honey
1 tablespoon orange juice
1 cup toasted sliced almonds (decoration)

Steps:

  • Cream the butter and sugar together, add the orange rind and beat in the eggs, one at a time.
  • Whisk until the mixture is pale and fluffy. Sift in half the self-raising flour and pour in the whiskey.
  • Fold in to the mixture and sift in the remaining flour and again fold in gently.
  • Grease two seven inch sandwich tins and divide the mixture between the two, smoothing the tops.
  • Bake for 20-25 minutes in an oven at 375°F/190°C (Gas Mark 5) until the cake is a light golden color.
  • Turn onto a wire rack to allow it to cool.
  • Butter Icing:.
  • Put the butter, honey and orange juice in a mixing bowl.
  • Slowly sift in the sugar and work the mixture until well combined.
  • To prepare the cake, use half the butter cream as a sandwich between the two halves of the cake and spread the rest smoothly on the top. Add the toasted almonds as decoration.

  • Bake 55 minutes in a 325 degree Fahrenheit oven; then for last 10 minutes at 350 degrees Fahrenheit; invert when done.
  • FROSTING:.
  • Melt butter until golden brown; don't scorch.
  • Remove from heat.
  • Stir in powdered sugar.
  • Blend in sweet cream and maple flavoring.
  • Beat until smooth.
  • Spread on chiffon or angel cake.
