4 cups boiling water
4 packages (3 ounces each) orange gelatin
1 quart vanilla ice cream, softened
1-1/2 cups orange juice
2 cans (11 ounces each) mandarin oranges, drained
Orange slices, optional

Steps:

  • Add boiling water to gelatin; stir 2 minutes to completely dissolve. Stir in ice cream and orange juice until blended. Refrigerate until partially set., Fold in oranges. Pour into two 6-cup ring molds coated with cooking spray. Refrigerate overnight or until firm. Unmold onto a serving plate. If desired, serve with orange slices.

1 teaspoon grated orange peel
1/2 cup butter, melted

1 teaspoon lemon juice
1/3 cup orange juice concentrate

Steps:

  • In a large bowl, combine the cracker crumbs, cinnamon, orange peel and butter. Press unto the bottom of a greased 10-in. springform pan. Refrigerate for at least 30 minutes.
  • Prepare orange gelatin according to package directions. Set aside 1/2 cup at room temperature. Chill remaining gelatin until slightly thickened, 40-60 minutes.
  • In a large mixing bowl, beat cream cheese and sugar for 2 minutes. Gradually beat in milk and lemon juice. Beat on medium-high speed 2 minutes longer. Gradually beat in orange juice concentrate and vanilla.
  • In a small bowl, sprinkle unflavored gelatin over cold water; let stand for 2 minutes. Stir in boiling water until gelatin is completely dissolved. Stir into room temperature orange gelatin. Stir into cream cheese mixture, then fold in whipped topping. Pour into crust.
  • For topping, in a large mixing bowl, beat whipped topping and sugar. Beat in refrigerated orange gelatin (mixture will be thin). Chill for 30 minutes. Gently spoon over filling (pan will be full). Refrigerate for 8 hour or overnight. Garnish lemon slices, orange peel strips, kumquats and lemon balm if desired.

1 pt. (2 cups) vanilla ice cream or frozen yogurt
1/2 cup orange juice
1 can (11 oz.) mandarin oranges, drained
1/2 cup each: raspberries and halved strawberries

Steps:

  • Mix dry gelatin and water in large microwavable bowl. Microwave on HIGH 2 minutes; stir until gelatin is completely dissolved.
  • Stir in marshmallows. Microwave 1-1/2 to 2 minutes or until marshmallows are puffed and almost melted. Stir until marshmallows are completely melted and mixture is well blended. Its very important that you follow the directions exactly for the mixing of the ingredients, or otherwise it may not blend well together. Cooking time includes refrigeration set up. I hope you enjoy this as much as our family does.

1 (3 ounce) package orange Jell-O
2 cups orange juice
1 (3 ounce) package cream cheese, softened
1 (8 ounce) can mandarin oranges

Steps:

  • Drain mandarin oranges, and set aside.
  • Heat, but do not boil orange juice.
  • In a large bowl, add jello and softened cream cheese.
  • Beat with a mixer until well blended, and creamy.
  • Continue to beat on a slower speed, and very slowly add the heated orange juice, a little at a time over the cream cheese mixture. Blend well, and mix together until smooth.
  • Chill until slightly thickened, and fold in the cool whip and oranges.
