BANANA CHOCOLATE CHIP LOAF
This banana chocolate chip loaf is so moist and delicious! Such a great way to use up ripe bananas.

Steps:
- Preheat oven to 180°C fanbake.
- Mix together butter, brown sugar, cinnamon, vanilla and eggs in a large bowl. Add banana and milk then stir again.
- Add flours, baking powder and soda then fold all ingredients together until combined.
- Add the chocolate chips and mix again.
- Pour into a lined loaf tin and scatter over brown sugar.
- Bake for 40-50 minutes or until golden and cooked through.

CHOCOLATE CHIP BANANA LOAF
Steps:
- Pre-heat oven to 325°F/160°C
- Grease a 2lb loaf pan.
- Mix the coconut oil, mashed bananas, honey or maple syrup, milk, eggs &, vanilla in a bowl.
- In separate bowl mix together the all purpose flour, baking soda and salt.
- Fold the dry ingredients into the wet ingredients.
- Fold in the chocolate chips but keep a handful aside for the top.
- Pour the batter into the greased loaf pan.
- Add 2 halves of banana carefully to top of the cake with the sliced side showing.
- Scatter over the remaining chocolate chips.
- Bake for 50 to 60 minutes until a cake tester or skewer comes out clean.
- Watch the top! If it starts getting too brown, loosely tent the pan with greased aluminium foil to protect the cake.
- Let the cake cool in the pan for around 5 minutes then carefully loosen with a palate knife and turn out onto rack to cool.
- Slice and serve!

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan, preferably glass.
- Mix flour, baking powder, baking soda, and salt in a bowl. Stir bananas, milk, and cinnamon in another bowl. Beat butter and sugar in a third bowl until light and fluffy. Add eggs to butter mixture, one at a time, beating well after each addition. Stir banana mixture into butter mixture. Stir in dry mixture until blended. Fold in chocolate chips until just combined. Pour batter into prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing.

- Preheat the oven to 350 degrees F. Lightly brush the inside of a 10-by-5-inch loaf pan with coconut oil and line with a strip of parchment paper. Set aside.
- In a large bowl, mash the bananas with the back of a fork until only a few lumps remain. Add the egg and mix until smooth. Using the fork, whisk in the almond milk, sugar, almond butter, coconut oil, vanilla and salt until smooth and incorporated. Add the almond flour, rice flour, baking soda and cinnamon and stir until combined with a rubber spatula. Stir in the chocolate chips.
- Pour the batter into the prepared loaf pan and sprinkle the walnuts on top. Bake until the bread is firm to the touch and a toothpick inserted in the center comes out with very few crumbs, 1 hour 5 minutes to 1 hour 10 minutes. Allow to cool for 30 minutes in the pan resting on its side. Loosen the edges with a knife and remove to a wire rack to cool completely. The bread will keep for 4 days at room temperature or can be sliced and frozen for up to 1 month.

- Heat oven to 325°F Sift dry ingredients (not sugar) in medium bowl and set aside. Beat butter and sugar in separate larger bowl until they are light and fluffy. Beat in bananas then eggs. *I usually beat the bananas in a bowl until I need them, rinse it out, then beat the eggs in the same bowl so I have less dishes to wash.* Stir in flour mixture alternately with boiling water until just combined. - 1. Preheat your oven to 160C. Line a 900g (23x13x7cm) loaf tin with parchment paper. Then put your 2 ripe bananas in a small bowl and mash them with a fork until they are a lumpy liquid consistency.
- 2. Cream the butter and sugar together, using a hand mixer or a stand mixer, until they are pale and well blended together. Then keep the mixer on medium speed and add the eggs one by one. Add the banana to this mixture
- 3. Weigh out the flour and add the bicarbonate of soda and baking powder to the measured flour. Add this to the banana mixture, stir well until all lumps are gone. Then mix in the chocolate chips.
- Pour the batter into the tin evenly and bake for 55 mins. When baked let it cool for about 10 minutes then take out of the tin.
CHOCOLATE-CHIP BANANA BREAD
This recipe uses four bananas, which is more than is typical for a single loaf. The natural sugars from the ripe, brown bananas keep the bread incredibly moist for up to one week, even sliced. The high moisture of the batter can make it tricky to determine doneness, so take care not to underbake the the loaf. It should have a dry, shiny, cracked surface, and a tester inserted into the thickest portion should come out with a few moist crumbs attached. - Heat the oven to 350 degrees. Lightly grease a 9-by-5-inch loaf pan with nonstick spray.
- In a large bowl, mash the bananas coarsely using a fork. They should be fully broken apart, but it's OK if some larger lumpy pieces remain. Whisk in the melted butter, yogurt, brown sugar, eggs and vanilla until well combined.
- In a medium bowl, whisk the flour, baking soda and salt to combine. Add the flour mixture to the banana mixture and stir to combine using a silicone spatula or wooden spoon. Scrape the sides and base of the bowl well to make sure the mixture is uniformly combined.
- Gently stir in the chocolate until combined, then pour the batter into the prepared loaf pan and spread into an even layer. If using, sprinkle the surface generously with coarse sugar.
- Transfer the pan to the oven and bake until the edges of the loaf start to pull away from the edge of the pan, and a tester inserted into the center comes out with just a few moist crumbs attached, 60 to 75 minutes. If the top of the loaf is becoming too dark before it's baked through, loosely cover with foil.
- Transfer from the oven to a cooling rack and run a thin knife around the edge of the banana bread to separate it from the pan. Let cool in the pan for 10 minutes before unmolding and cooling completely.
BANANA FLAX CHOCOLATE CHIP LOAF
I created this recipe after a few years of attempting to "perfect" a moist, flavorful, healthy banana loaf. This loaf is amazing and I am constantly asked to bake it by friends and family. (I have even been known to take it to my doctor's office, hair salon and my dentist's crew!)

- Preheat oven to 350F.spray 2 loaf pans (8 1/2''X 4 1/2'') with Pam.
- Combine all dry ingredients mix with a whisk and set aside.
- In a larger mixing bowl with electric mixer beat bananas and sugar.
- Then beat in egg substitute.
- Add buttermilk, oil & applesauce.
- Stir in dry ingredients and gently mix with a spatula just until combined.
- Stir in chocolate chips.
- Pour half the batter iinto each loaf pan.
- Bake for 55-65 minutes until a toothpick inserted in the center comes out clean.
- (other than the melted chocolate of course -- check closely for BATTER on the toothpick) when done turn out of the pans onton rack.
- Cool and slice.
- (warm banana bread is awesome but if you try and slice it too soon you will squish the loaf a bit).
- You can change the flavor of "chips". I used Butterscotch and they are great. BUT, I only added 1 cup for the whole recipe, so as not to increase the sweetness/fat/caloric value too much. 1 Cup was just fine!
