4 tart green apples
½ cup brown sugar
4 tablespoons butter
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
  • Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut the core and seeds out of apple, leaving about a 1/2 in the bottom, creating a well-like hole. Mix 2 tablespoons brown sugar, butter, coconut, and 1 teaspoon cinnamon together in a bowl; fill well in the apple with brown sugar mixture. Place stuffed apple in a baking dish.

Beautiful fall apples are the perfect dessert when bathed in a sauce of caramel and cider, then served warm in a chilled cream made from the same sauce, elevated by the addition of tangy buttermilk. The crunchy streusel adds lovely texture to this family-friendly dessert.

6 large Rome apples, cored
2 cups apple cider
One 10.8-ounce bag chewy caramels, unwrapped
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon ground ginger
1 1/2 cups heavy cream
1/4 cup low-fat buttermilk
1/3 cup packed light brown sugar
1/3 cup all-purpose flour
1/4 cup old-fashioned rolled oats
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
4 tablespoons cold unsalted butter, cut into pieces
Confectioners' sugar, for dusting

Steps:

  • For the apples: Preheat the oven to 375° F. Line a baking sheet with parchment.
  • Put the apples in a 9-by-13-inch ovenproof dish.
  • Combine the cider, caramels, cinnamon, salt and ginger in a medium saucepan and bring to a boil over high heat. Cook, stirring often, until the caramels are melted, 3 to 4 minutes. Pour the mixture over the apples and bake on the bottom oven rack, basting every 20 minutes, until the apples are very tender and glossy, about 1 hour 20 minutes. Transfer the apples to a platter; transfer the cider mixture to a medium saucepan.
  • For the streusel: Combine the brown sugar, flour, oats, salt and cinnamon in a medium bowl. Using your fingers or a pastry blender, work the butter into the flour mixture until coarse crumbs form. Spread on the prepared baking sheet and bake on the top oven rack, stirring halfway through, until golden, about 15 minutes. Let cool, then break into bite-size pieces.
  • Bring the cider mixture to a boil over high heat and cook, whisking frequently, until thickened and reduced to about 1 1/2 cups, 5 to 7 minutes. Remove from the heat and stir in the cream. Transfer to a bowl set in a large bowl of ice water. Once cold, stir in the buttermilk.
  • Pour the cider cream onto a large rimmed platter and place the apples on top. Sprinkle with the streusel and dust with confectioners' sugar.

TIP - for an extra rich pastry, use 1 egg yolk and half the amount of water in this recipe. VARIATION - Use pears instead of apples in the recipe. FREEZING - These apples freeze well after baking and should be thawed and then re-heated before eating.

3 cups all-purpose flour
1/4 teaspoon salt
1/3 teaspoon ground nutmeg
3/4 cup butter
6 -8 tablespoons ice water
6 apples (medium sized dessert)
6 prunes (pitted)
6 dried apricots
2 1/2 tablespoons raisins
1 egg (beaten to glaze)
cream (to serve)
mint leaf (to serve)

Steps:

  • Preaheat oven to 350F (160C fan forced, 175C conventional).
  • Sift the flour, salt and spices into a large bowl.
  • Cut the butter into dice and rub into the flour until the mixture resembles fine breadcrumbs (I would use a food processor on pulse to do this).
  • Mix in enought water to produce a smooth pliable dough.
  • Divide the dough into six pieces and roll out into a square approximately 8 inches.
  • Peel the apples with a sharp knife and carefully remove the centre cores with a apple corer.
  • Chop the prunes and the apricots and mix these with the raisins.
  • Place oe prepared apple into the centre of each pastry square, and fill the cavities with equal amounts of the dried fruit mixture.
  • Brush the edges of each square with a little water and draw them up and around the sides of the apples, sealing them well with a little water and trimming off the excess pastry to give a neat finish.
  • Roll out the pastry trimmings =, cut into decorative leaves and stick the leaves onto each apples for decoration.
  • Glaze each pastry apple with the beaten egg and place on a lightly greased cookie sheet.
  • Bake the apples in the preheated oven for 20 to 25 minutes or until golden brown.
  • Serve hot with the fresh cream and sprigs of fresh mint.

Quick and easy baked apples are an old-fashioned comfort food. They can be made in the microwave, or baked in the oven. I often make them a little less sweet by using brown rice syrup instead of the honey. Maple syrup is a good alternative as well.

2 cooking apples
2 tablespoons raisins
1 tablespoon honey
1/4 teaspoon ground cinnamon
1 teaspoon butter

Steps:

  • Core the apples and pare a 1-inch strip of skin from around the middle of each to prevent splitting.
  • Place the apples in two 10-oz custard cups.
  • Pack the raisins into the apples.
  • Mix the honey and cinnamon, pour over the raisins and into the apples.
  • Top with butter.
  • Cover tightly and microwave on high (100%) until tender when pierced with a fork, 3 to 4 minutes. If you prefer, they can also be baked at 375°F for 30 minutes.
  • Serve warm with cream, if desired.

1/4 cup diced candied ginger or 1/4 cup diced dried apricot
1/4 cup brown sugar or 1/4 cup maple sugar
1/2 teaspoon cinnamon
1 tablespoon cold butter, cut into 4
1/4 cup maple syrup or 1/4 cup honey
1/4 cup apple juice or 1/4 cup water

Steps:

  • Remove the core of the apples with an apple corer or small knife, leaving about 1/2" at the base.
  • Peel the top one third with a vegetable peeler or sharp knife.
  • Place apples in an 8" square baking dish or in another ovenproof pan that holds them snugly.
  • Place 1 tbsp.
  • raisins in each apple.
  • In a small bowl combine brown sugar with cinnamon and add 1 tbsp mixture to each apple.
  • Place 1 small piece of butter in each apple.
  • Combine syrup with apple juice in a small bowl and pour over and around apples.
