Steps:
- Stir together sugar, water, and a pinch of salt in a small saucepan and simmer, uncovered, stirring occasionally, until syrup has thickened slightly, 5 to 8 minutes. Transfer to a glass measure and chill, uncovered, until cool, then stir in lime juice and food coloring.

- In a small saucepan, combine sugar, water, and lime juice. Place over medium-high heat and bring to a simmer, stirring constantly, until sugar is dissolved. Remove from heat and let cool. Store in an airtight container, refrigerated, until ready to use, up to 1 week.
EXOTIC LIME SYRUP FOR FRESH FRUIT SALAD

- Simmer the water and sugar, ginger, lime peel, turmeric or saffron, whole spices for 5 minutes. Let cool and strain out spices. Stir in fresh lime juice before serving over fruit.

- In a medium saucepan, combine all ingredients with 2 cups water. Bring to a boil. Reduce heat to medium; simmer 5 minutes. Set syrup aside until cool.
- Pass syrup through a fine sieve. Discard solids, and set syrup aside until ready to use.
LIME SYRUP FRIANDS
I have always loved friands and anything with lime so these sound perfect. I have not yet made this recipe. It came from an energy australia brochure. I hope someone will enjoy them for me until I get to make them myself.

Steps:
- Lime Syrup: Combine sugar, water and lime juice in a small saucepan, and stir over low heat until sugar is dissolved. Bring to the boil, simmer two minutes, remove from heat.
- Grease 12 friand pans with melted butter.
- Sift flour and icing sugar into a large bowl, stir in almond meal.
- Whisk egg whites until frothy but not firm. Fold into dry ingredients.
- Add melted butter and stir until just combined.
- Spoon mixture into prepared pans 3/4 full, sprinkle each friand with lime shreds.
- Bake in moderate oven 180 degrees celcius for 15-20 minutes or until golden and springy to the touch.
- Stand in pans two minutes, turn onto a cake cooler. Drizzle with Lime Syrup.
