CHIPOTLE APPETIZER MEATBALLS
Steps:
- These spicy meatballs are a wonderful appetizer and, when served in a chafing dish, will hold for a long time. Simple to prepare, they can be made ahead of time and reheated before serving. To make the sauce, saute the onion and garlic in the oil until they are lightly browned. Add the tomato sauce, broth, and the chipotles in adobo sauce. Heat the mixture to just under boiling and simmer for 20 minutes. Place the sauce in a blender or food processor and puree until smooth. To make the meatballs, combine the beef, pork, onion, cilantro, bread crumbs, egg, and season with salt and pepper. Gently mix, then form into small meatballs. Pour a couple of tablespoons of the oil in a heavy saucepan and brown the meatballs. Remove and drain. Return the sauce to the pan, add the meatballs and simmer for 15 to 20 minutes to finish cooking the meat. To serve: place in a chafing dish, garnish with the cilantro and serve accompanied with toothpicks. Steps:
- In a large skillet over medium heat, warm the oil until sizzling. Add the onion, 1 teaspoon salt and 1/4 teaspoon pepper, then cook, stirring occasionally until browned, about 5 minutes. Add the garlic, oregano, and cumin, then cook, stirring for 30 seconds. Remove from the heat, then transfer 1/2 cup of the mixture to a large mixing bowl; set aside the skillet with the remaining mixture. Line a rimmed baking sheet with parchment paper.
- Into the bowl with the onion mixture, stir in the panko and 1/2 cup water. Let stand until the panko softens, about 5 minutes. Using a spatula, mash the mixture to a paste, then add the beef, 1/2 cup cilantro and 1 teaspoon of salt and pepper. Mix well, then divide into 16 two-tablespoon portions, rolling each into a ball and placing on the prepared baking sheet. Cover and refrigerate for 15 to 30 minutes. Meanwhile, heat the oven to 450 F with a rack in the middle position.
- Uncover the meatballs and roast until browned and the centre reaches a temperature of 160 F, 12-15 minutes. Remove from the oven and set aside.
- To the skillet with the remaining onion mixture, stir in the tomatoes and 1/2 cup water. Bring to a simmer over medium high, then add the chipotle chilies and cook, stirring occasionally, until a spatula drawn through the sauce leaves a trail, about 3 minutes. Taste and season with salt and pepper. Add the meatballs and stir gently to coat with the sauce, then stir in the remaining 1/4 cup of cilantro with sprinkle of queso fresco.

- Preheat a large skillet over medium heat. Add onions and cook, stirring occasionally, until soft and translucent, about five minutes. Add garlic and ground cumin, cook another 2 minutes, stirring frequently (turn down heat if garlic starts to brown).
- Place onion mixture along with tomatoes and peppers into a blender or food processor; blend until very smooth. Set aside.
- In a medium-sized mixing bowl, stir together all meatball ingredients except for ground beef. Once well-mixed, add ground beef and combine thoroughly (but do not overmix).
- Wipe out skillet and place back on burner over medium heat. Add meatballs and brown well on all sides (do this in batches if necessary so you don't overcrowd the pan which will steam the meatballs rather than allow them to brown). Pour sauce over meatballs in skillet; bring to a strong simmer then reduce heat to low. Simmer, stirring occasionally for 45 minutes. Cover skillet and simmer an additional 15 minutes or until meatballs and rice are cooked through. Season sauce to taste, garnish with freshly chopped cilantro and serve.

- In a large mixing bowl, combine the two sausages and hamburger, spinach, cheese, eggs, basil, celery, thyme, garlic powder, salt, pepper flakes, and 1/2 cup of the bread crumbs. Using your hands, mix all ingredients until well incorporated. Use immediately or place in refrigerator for up to 24 hours.
- Place the remaining 1/2 cup of bread crumbs into a small bowl. Using a small scoop (I used a 1 ½ inch scoop), scoop out equal size portions of the meat mixture and place on the lined sheet pans. Using your hands, roll the meatballs into rounds, roll in the bread crumbs and place the meatballs back onto the sheet trays. Bake for 20 minutes or until golden and cooked through. They will be sizzling when they are done.
- Allow meatballs to cool a little and then gently place them into a crock pot or into a large sauce pan on the stove top. Cover well with the barbeque sauce and if on the stove top – heat over medium heat – stirring gently until heated through. If in the crock pot – set on medium and allow the contents to come to the same temperature. Serve when heated through. Can remain in the crockpot on low setting for a couple of hours if needed before serving.
