1 small onion, chopped fine
1 tablespoon olive oil
1 teaspoon chili powder
3/4 cup chicken broth
1/2 cup couscous
2 tablespoons thinly sliced scallion greens

Steps:

  • In a heavy saucepan cook the onion in the oil over moderate heat, stirring occasionally, until it is golden, add the chili powder, and cook the mixture, stirring, for 1 minute. Add the broth, bring the liquid to a boil, and stir in the couscous. Cover the pan, remove it from the heat, and let the couscous stand for 5 minutes. Fluff the couscous with a fork and stir in the scallion greens.

8 pita breads, cut into wedges for scooping
2 tablespoons extra virgin olive oil
2 lbs ground lamb
salt & freshly ground black pepper
2 tablespoons chili powder
1/2 tablespoon ground cumin
1 tablespoon ground coriander
1/4 teaspoon ground cinnamon
1/2 teaspoon paprika
1 bay leaf
1 large onion, chopped
1 green bell pepper, seeded and chopped
2 garlic cloves, finely chopped
1 lemon, juice and zest of
2 tablespoons Worcestershire sauce (eyeball it)
1 (14 ounce) can tomato sauce
2 tablespoons butter
1 1/2 cups chicken stock
1/3 cup golden raisin (recipe says "handful")
4 dried apricots, chopped
1 1/2 cups couscous
3 -4 tablespoons toasted pine nuts
1/4 cup fresh parsley leaves, chopped (recipe says "handful")
1/4 cup fresh mint leaves, chopped (recipe says "handful")
3 tablespoons chives, finely chopped

Steps:

  • Preheat oven to 400 degrees F (if serving with pita bread).
  • Heat skillet with extra-virgin olive oil, add meat and brown.
  • Season the meat with salt and pepper, to taste, chili powder, cumin, coriander, cinnamon and paprika. Add the bay leaf, onions, bell pepper and garlic to the pan.
  • Cook until onions are soft, 8 minutes.
  • Add lemon juice and zest, Worcestershire sauce and tomato sauce. Stir and reduce heat to simmer (for about 10 minutes while you make the couscous).
  • To make couscous: Bring butter and stock to a boil in a separate pot with tight fitting lid. (This is a good time to put the pitas in the oven too).
  • Add dried fruit and couscous, stir then turn off heat and set lid in place. Let stand 5 minutes. Add nuts and herbs and toss with fork.
  • Pile chili in bowls, top with "sand" and serve with pita wedges for scooping.

A very flavorful Asian-type meal with a sweet heat that incorporates my favorite flavors (chili, lime, and cilantro) with a little bit of sugar. The sauce glazes the chicken and is wonderful over the cilantro couscous. You can substitute salt and pepper to taste for MSG.

1 tablespoon olive oil
1 pound skinless, boneless chicken breast halves, cubed
1 pinch monosodium glutamate (such as Ac'cent®), or to taste
6 tablespoons soy sauce
6 tablespoons brown sugar
½ teaspoon red pepper flakes, or more to taste
1 lime, juiced and zested
2 cups vegetable broth
1 cup couscous
⅓ cup chopped cilantro
4 wedges lime for garnish

Steps:

  • Heat olive oil in a large skillet over medium heat; cook and stir chicken breast cubes in the hot oil until the juices run clear and chicken is no longer pink inside, 5 to 6 minutes. Sprinkle chicken with monosodium glutamate as it cooks. Remove chicken from skillet.
  • Mix soy sauce, brown sugar, red pepper flakes, lime juice, and lime zest in a bowl, stirring to dissolve sugar. Pour sauce into hot skillet, bring to a boil, and reduce heat to low. Simmer, stirring occasionally, until sauce begins to reduce slightly, 3 to 4 minutes. Mix cooked chicken into sauce and cook until sauce forms a glaze on chicken pieces, about 2 to 3 more minutes, stirring often.
  • Bring vegetable broth to a boil in a saucepan. Stir couscous into vegetable broth, turn off the heat, and let couscous stand until broth is absorbed, about 5 minutes. Stir cilantro into couscous.
  • Arrange couscous onto a serving platter, top with chicken and sauce, and serve with lime wedges. Squeeze lime wedges over couscous and chicken before serving.

2 teaspoons olive oil
1/2 cup onion, chopped
1 green bell pepper, seeded and coarsely chopped
2 garlic cloves, minced
1 jalapeno pepper, seeded and minced
1 tablespoon dried oregano
1 bay leaf
2 tablespoons chili powder
2 teaspoons salt
1 (28 ounce) can diced tomatoes
2 (14 ounce) cans vegetable broth or 2 (14 ounce) cans water
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can red kidney beans, rinsed and drained
1/4 cup uncooked whole wheat couscous

Steps:

  • Heat oil in an large stockpot over medium heat. Add onion, green pepper, garlic and jalapeno and saute 2 minutes.
  • Add herbs and spices and salt.
  • Stir well to coat vegetables.
  • Add tomatoes, broth and beans and bring mixture to a boil.
  • Reduce heat and simmer, uncovered, for 3 minutes.
  • Add couscous and simmer, uncovered, 5 minutes.
  • Discard bay leaf.
  • Ladle chili into boals and top with your favorite toppings.
