An easy light snack or supper dish. A mixture of tuna, sweet chili sauce and spring onions wrapped up in a layer of light cream cheese on tortilla (wraps).

2 (5 ounce) cans tuna, drained
⅔ tablespoon sweet chili sauce
6 green onions, chopped
1 tablespoon water
6 (12 inch) flour tortillas
1 (8 ounce) package Neufchatel cheese

Steps:

  • In a small bowl, mix tuna, chili sauce and green onions. Blend in enough water to allow easy spreading.
  • Lay tortillas one by one on a flat surface. Spread a thin layer of cheese onto each tortilla, covering the entire surface. Spread tuna mixture over cheese to within an inch of tortilla edge.
  • Starting at the top, roll up the tortilla into a snug cylindrical shape, ensuring the cream cheese seals the bottom.
  • Enclose roll-ups in aluminum foil, and refrigerate or freeze until serving. When ready to serve, cut the roll-ups into 2 inch slices. If frozen, slice the roll-ups about 15 minutes before serving time to allow them to defrost completely.

425 g tuna packed in oil
8 sun-dried tomatoes, chopped
1 red onion, finely chopped
50 g pine nuts
250 ml pasta sauce (Leggos stir through Tomato)
4 garlic cloves, crushed
2 teaspoons chili flakes (can use minced or fresh chilli instead if desired)
250 g penne
10 ml olive oil (for frying)
1/2 cup fresh basil, roughly coppped
30 g parmesan cheese (thick and long slices is great)

Steps:

  • In a large pot, cook penne to taste (see packaging for details).
  • Add oil to a deep, heavy based frying pan. Chop onion and cook in pan along with garic and chilli on high heat until oninion is soft.
  • Add chopped sun dried tomatoes, tuna and pasta sauce.
  • Reduce heat to a simmer.
  • Add pine nuts.
  • When pasta has cooked, drain and add to frying pan along with chopped, fresh basil.
  • Stir pasta through sauce until well coated.
  • Serve in large, open bowl.
  • Top with slices of fresh parmesan cheese.
  • You can add pretty much anything to this dish - olives, egg plant, artichoke hearts, capers - even anchovy fillets are lovely.
  • You can also remove the tuna from the dish and add 4 or 5 rashers of chopped bacon instead. This is VERY nice.

It was my Mom's invention on a day that the cupboards were practically bare and she had hungry kids that didn't want to wait for her to run to the store. We've always put this over saltine crackers, but I also like it over toasted bread. This is a really simple and easy lunch for busy days, and it's great because you probably already have all the stuff in your pantry. I hope you enjoy it!!!

Pizza was very popular in our house a while back, and when i made this favorite recently for my brother, he loved it. It's so simple to make using pita bread to make a thin & crispy base.

2 pieces pita bread (flat bread)
pizza sauce
1 medium onion
1 teaspoon garlic
1/2 large red capsicum
3/4 medium zucchini
5 -6 slices sun-dried tomatoes (optional)
4 -5 large button mushrooms
110 g of spicy chili tuna in olive oil (if this isn't available, try experimenting with other flavours)
1 1/2 cups grated low-fat cheese
1 tablespoon olive oil (for crust)

Steps:

  • Preheat the oven to 180degC.
  • Chop the onion and other vegetables to pieces about 1cm cubes. Heat a frying pan, drain the olive oil from the tuna can into the pan adding the onion,garlic (and optional sun-dried tomato and extra chili).
  • When the onion is soft, add the capsicum & zucchini and stir until zucchini is starting to cook and remove from heat.
  • Put a little olive oil around the edge of the pita bread with a pastry brush to ensure the edges don't burn (as the bread is thin it burns easily).
  • Spread your pizza sauce over the bread.
  • spread over with a thin layer of cheese (to stop your topping from falling off while you're eating it).
  • Empty the frying pan contents onto your prepared pita bread bases and add the mushrooms and the tuna.
  • Scatter the remaining cheese over the pizza and place in the oven for about 20 minutes.

1 (7.25 ounce) package macaroni and cheese dinner mix (such as Kraft®)
¼ cup butter
¾ cup milk
1 (10.5 ounce) can condensed cream of chicken soup
1 (15 ounce) can sweet peas, drained
1 (5 ounce) can chunk light tuna, drained and flaked
1 cup shredded mild Cheddar cheese
1 ⅓ cups French-fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick spray.
  • Bring 6 cups water to a boil in a medium saucepan. Stir in macaroni from the box and cook for 7 minutes. Drain macaroni, then rinse under cold water and drain again. Set cheese sauce packet aside.
  • Melt butter in the same saucepan over medium heat. Add milk and cheese sauce packet; mix well. Stir in condensed soup and cook until heated through, about 3 minutes.
