COCONUT BANANA BREAD
White chocolate is the wonderfully different addition to this tropical-tasting bread. The moist slices are so scrumptious, they disappear as soon as I serve them.

- In a bowl, combine butter and sugar; mix well. Add eggs and extracts; beat on high speed until thickened. Stir in bananas. Combine the flour, baking soda and salt; gradually add to banana mixture. Fold in the chocolate, coconut and pecans. Transfer to two greased 8x4-in. loaf pans. Bake at 350° for 70-75 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Steps:
- Mash the banana in a small bowl. Spoon the peanut butter and chips on top of it, microwave for 45 seconds. Stir until well blended. Serve hot, as a dip for fruit, or chilled, as a spread for sandwiches or wraps or crackers. Keeps for up to a week, covered, in the fridge.
- Variations: Try other nut butters (soy, cashew, almond etc.) or other flavours of chips (butterscotch, vanilla etc.) to vary the recipe.

This is a riff on a super popular and delicious recipe from the site: Cathy's Banana Bread. This version incorporates other reviewers' suggestions to use a mix of white and brown sugar and to use butter instead of margarine. It also includes a little coconut and cinnamon. The coconut toasts nicely on top, adds great texture, and smells and tastes amazing with the banana and the chocolate.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
- Cream white sugar, brown sugar, and butter together in a large bowl until smooth. Beat in eggs, one at a time. Stir in banana, sour cream, and vanilla.
- Whisk flour, baking powder, baking soda, and salt together in another bowl; gently stir into wet mixture just until combined.
- Toss together chocolate chips, coconut, and cinnamon in a small bowl. Fold about 2/3 of the mixture into the batter, then pour batter into the prepared pan. Sprinkle with remaining chocolate chip mixture.
- Bake until a toothpick inserted into the center of the loaf comes out clean, 60 to 65 minutes. Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely before slicing.

- Preheat oven to 375°. Cream shortening, cashew butter and sugar until light and fluffy, 5-7 minutes. Beat in next 5 ingredients until thoroughly mixed. In a separate bowl, mix unsweetened coconut and flour. Beat into creamed mixture just until combined., Using a medium cookie scoop, drop dough 2 in. apart onto parchment-lined baking sheets. Sprinkle with sweetened coconut. Bake until edges are golden brown, 15-20 minutes (cookies will have cakelike texture). Remove from pans to wire racks to cool. Serve warm or at room temperature.
