My mom made the best pineapple upside down cake and unfortunately no one in the family has the recipe. I found this recipe on the internet somewhere, and its taste like my Mom's recipe. It is so yummy and no yellow cake mix. Note: This was edited from when it was first posted, I accidently added all the butter with the brown sugar for top coating.

1/2 cup butter (1 stick divided)
1 cup brown sugar
1 (20 ounce) can pineapple slices (save juice)
3 eggs
1 cup sugar
1/4 cup milk
1/4 cup pineapple juice (or can use 1/2 cup pineapple juice-omit milk)
1 teaspoon vanilla
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Use a 9 or 10 inch cast iron skillet or pan.
  • Melt 1/4 cup of the butter over low heat in skillet, add brown sugar make sure evenly coats bottom.
  • Take pan off of the heat, arrange pineapple slices on top of brown sugar.
  • In a large bowl, cream other 1/4 cup of butter with the sugar. Add eggs, one at a time, mix until blended. Add juice, milk if using, and vanilla. Beat until sugar is well dissolved.
  • Sift flour, baking powder and salt and mix with the egg mixture until well blended.
  • Pour batter into the skillet/pan.
  • Bake at 350 degrees for 35 minutes.
  • Let cool for 10 minutes and then put plate over skillet/pan and flip over.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®).
  • Combine peaches, water, white sugar, brown sugar, butter, vodka, cinnamon, vanilla extract, almond extract, and nutmeg in a saucepan over medium heat. Cook down until filling has a cobbler-like texture, about 25 minutes.
  • Mix brown sugar and butter for topping together in a bowl and spread evenly in the prepared cake pan. Combine sliced peaches and cinnamon and arrange neatly on top of brown sugar and butter mixture.
  • Combine eggs, butter, buttermilk, sour cream, shortening, almond extract, and vanilla extract in a bowl and mix very well.

50g softened butter
50g light soft brown sugar
7 pineapple rings in syrup, drained and syrup reserved
7 glacé cherries
100g softened butter
100g golden caster sugar
100g self-raising flour
1 tsp baking powder
1 tsp vanilla extract
2 eggs

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • For the topping, beat 50g softened butter and 50g light soft brown sugar together until creamy. Spread over the base and a quarter of the way up the sides of a 20cm round cake tin. Arrange 7 pineapple rings on top (reserving the syrup for later), then place 7 glacé cherries in the centres of the rings.
  • Place 100g softened butter, 100g golden caster sugar, 100g self-raising flour, 1 tsp baking powder, 1 tsp vanilla extract and 2 eggs in a bowl along with 2 tbsp of the reserved pineapple syrup. Using an electric whisk, beat to a soft consistency.
  • Spoon into the tin on top of the pineapple and smooth it out so it's level. Bake for 35 mins. Leave to stand for 5 mins, then turn out onto a plate. Serve warm with a scoop of ice cream.

7 slices canned pineapple (reserve 1/2 cup juice for cake)
13 candied cherries
2 cups all-purpose flour
2 teaspoons baking powder

1/2 teaspoon salt
1 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 cup unsalted butter, softened
1 cup sugar
2 large eggs
1/2 cup heavy cream
1/2 cup reserved pineapple juice
Whipped Cream, for garnish

Steps:

  • Preheat oven to 350 degrees F. Grease sides of a 9 by 3-inch round baking pan with nonstick cooking spray or butter.
  • For topping: Beat the melted butter and brown sugar together in a small bowl. Spread mix over the bottom of prepared baking pan. Arrange 6 pineapple slices around the edge of the pan and 1 in the middle. Place a cherry in the middle of each ring, and the rest between slices at the edges.
  • For the Cake: Stir together flour, baking powder, baking soda, salt, ginger and cloves in a large bowl. In another large bowl, beat together the butter and the sugar until light and fluffy. Beat in the eggs 1at a time. Using a spatula, alternately fold in the flour mixture and the heavy cream and pineapple juice until blended. 4 tablespoons unsalted butter
1 tablespoon water
2 cups lightly packed light brown sugar
6 to 8 maraschino cherries
2 cups all-purpose flour
2 1/2 teaspoons baking powder
2 sticks unsalted butter, room temperature
2 cups granulated sugar
2 large eggs
1/2 cup buttermilk
2 teaspoons pure vanilla extract
Confectioners' sugar, for dusting cake
1 quart yogurt gelato, store-bought, for serving

Steps:

  • Preheat oven to 350 degrees F.
  • Peel the pineapple and remove core. Slice into (1-inch) thick circles.
  • In a small saucepan melt butter with 1 tablespoon of water and add light brown sugar. Stir well with a whisk over medium heat until the sugar is completely dissolved and you have a nice smooth caramel, about 3 to 4 minutes. Pour into a round 9 1/2-inch nonstick cake pan. Arrange pineapple circles evenly in the caramel, (1 in the center and 5 around the outside usually works), and press down so they are submerged in the caramel. Place 1 maraschino cherry in the center of each pineapple ring. Make the batter: Sift flour and baking powder together. In a stand mixer cream butter and granulated sugar until light and fluffy, about 4 minutes. With mixer on low, add eggs 1 at a time. Add half the buttermilk and vanilla then half the flour. Add remaining buttermilk and then remaining flour. Pour the batter into the cake pan over the caramel and pineapple. Spread out evenly with a rubber spatula. Place the cake pan on a roasting tray to catch any caramel that may bubble over and bake in the oven for approx 1 hour. The cake should be nice and golden on top and puffed up slightly. When gently pressed in the center it should bounce back. Allow to cool slightly, (about 1 minute), before inverting onto a cake plate. Dust very lightly with confectioners' sugar and serve each slice with a scoop of yogurt gelato.

1 (3 ounce) box package instant vanilla pudding
10 walnut halves
10 maraschino cherries, halves
1/2 cup firmly packed brown sugar
1 (18 ounce) box yellow cake mix
1 (3 ounce) box instant vanilla pudding
4 eggs
1 cup water
1/4 cup oil

Steps:

  • Drain pineapple. (Reserve juice!).
  • Combine 1 package of pudding mix and pineapple juice.
  • Set aside.
  • Arrange pineapple slices in bottom of 9x13" pan.
  • Place walnut and/or cherry halves in center of each ring.
  • Pour pudding and pineapple juice mixture over pineapple rings.
  • Sprinkle with brown sugar.
  • Combine cake mix, the other package of instant pudding mix, eggs, water and oil in large mixer bowl.
  • Blend.
  • Beat at medium speed on electric mixer for 4 minutes.
  • Pour over pineapple mixture in pan.
  • Bake at 350 for 55-60 minutes until cake tester inserted in center comes out clean and cake begins to pull from sides of pan.
  • Do not underbake!
  • Cool in pan for 5 minutes.
  • Invert onto serving platter and let stand 1 minute.
  • Remove pan.

1/2 cup quick oats
1 1/2 teaspoons baking powder

1 egg, lightly beaten
1/3 cup molasses
3/4 cup skim milk

0.5 (19 ounce) can pineapple rings, drained (about 5 rings or enough to cover the bottom of the dish)

Steps:

  • Spray an 8" round baking dish with cooking spray. In a small saucepan or in a microwave safe bowl, combine the brown sugar and margarine. Heat on low heat (or in the microwave on med/low power for 30 seconds at a time) just until the margarine melts and the sugar starts to dissolve. Add the lemon juice. Pour into the bottom of the prepared 8" dish.
  • Place pineapple slices on top of the brown sugar mixture in a decorative manner. You may cut a pineapple slice in 4 to fill in the smaller places. Fill the middle holes of the pineapple slices with raisins. Sprinkle the rest of the raisins over the pineapple. Set dish aside.
  • In a medium bowl combine flour, oats, baking powder, baking soda, cinnamon, ginger, and allspice. Set aside.
  • In a larger bowl, beat together margarine and brown sugar. Whisk in the egg, molasses and milk.
  • Add the bowl of dry ingredients to the wet ingredients, stirring just until mixed. Fold in the grated apple.
  • Bake at 350°F for 40-45 minutes or until a toothpick inserted in the center of the cake comes out clean. As soon as the cake is out of the oven, place a serving plate over the cake and turn the cake over. Remove the dish. If any pineapple pieces stick to the dish, gently place them back in their place.
