- In a small bowl, mix all ingredients. The brown sugar will caramelize slightly when cooked, giving foods a sweet, tasty glaze.Try it on whole chicken or turkey, pork (tenderloin or chops), and most cuts of beef.
- Almost any herbs or spices that are frequently combined, such as those in Italian seasonings or curry mixtures, can be made into a rub. Just add some salt (and sometimes sugar) to heighten the flavor.
- Rubs should coat foods lightly. Use your fingers to rub the mixture on the meat, using about one teaspoon for every three quarters of a pound. Unlike most marinades, which often require soaking overnight, rubs can be applied just before cooking or up to several hours ahead.
- Which rub to use depends on the food you're preparing. The heartier the food, the stronger the rub should be. A piquant rub made with paprika and other spices is a good match for rich-tasting salmon. Chicken breasts, on the other hand, go better with a milder herb mix.
- A jar with a tight-fitting lid is good for mixing and storing. Dry rubs will keep for up to six months in a cool, dark place, so you can double or triple the recipes if you like. Wet rubs, such as Lemon-Herb Rub, should be refrigerated and will keep up to a week. Make sure to label and date the containers.
CHILE-LIME RUB

CHIPOTLE CHILE RUB

- Preheat oven to 400 degrees. In a small bowl, combine the chili powder, cumin, and paprika, plus salt and pepper to taste. Rub chicken all over with the chili mix.
- Add olive oil to a large cast-iron or other ovenproof skillet, and swirl to cover bottom. Add onion rounds in a single layer, then thyme. Add chicken, skin side up. Transfer to oven, and bake until the chicken has cooked through, 30 to 40 minutes.
- Let chicken cool slightly. Using your fingers, remove the bones. Slice each breast, crosswise, into four or five pieces. Serve with the roasted onion rounds and thyme.
CHILI-RUBBED RIB-EYE STEAKS

- Mix first 4 ingredients in pie dish. Coat steaks with spice mixture and transfer to another dish. Cover; chill at least 8 hours.
- Spray grill racks with nonstick spray; prepare barbecue (medium heat). Grill steaks to desired doneness, moving and turning occasionally to prevent chili rub from burning, about 20 minutes for medium-rare. Serve steaks with pico de gallo.
CARIBBEAN CHILE SPICE RUB
This all purpose seasoning can be used as a rub on meat, fish, or poultry, sprinkled on potatoes and vegetables, or combined with sour cream or yogurt as a spicy salad dressing. It adds a taste of the Caribbean to any dish. As with any of my recipes calling for any type of chile pepper, feel free to substitute.
