15-minute Belgian endive salad recipe! This healthy and delicious endive salad is loaded with apples, goat cheese, walnuts, and a lemon vinaigrette.

4 medium heads Belgian endive (outer removed, then halved)
2 medium fuji or honeycrisp apples (cored, halved, and sliced)
1 cup walnuts
1/2 cup crumbled goat cheese
2 tsp white wine vinegar
2 tsp extra virgin olive oil
1 tsp fresh lemon juice
1 tsp finely minced shallot
salt and pepper
fresh parsley

Steps:

  • Combine endive, apples, walnuts, and goat cheese in a large bowl. Set aside.
  • Combine vinegar, oil, and lemon juice in a small bowl and whisk until emulsified. Stir in shallot.
  • Pour vinegar mixture over endive mixture and toss to evenly coat.
  • Season with salt and pepper. Serve with fresh parsley.

1/3 cup walnuts, coarsely chopped
2 teaspoons grainy mustard
1 teaspoon honey
1 shallot, minced
3 tablespoons cider vinegar
1/4 cup extra-virgin olive oil
Coarse salt and ground pepper
2 red apples, quartered, cored, and each quarter cut into 8 wedges
3 ounces baby arugula, washed and dried (6 cups)
1 Belgian endive, leaves separated, washed and dried
1/4 cup fresh mint leaves, coarsely chopped
2 ounces soft goat cheese, crumbled

Steps:

  • In a small skillet over medium heat, toast walnuts, stirring frequently until crisp and fragrant, about 5 minutes.
  • In a large bowl, whisk together the mustard, honey, shallot, and vinegar until well combined. Whisk in the oil until thick; season with salt and pepper.
  • Add apple and arugula; toss to coat. Arrange endive leaves on four serving plates, top with apple mixture and scatter mint, cheese, and walnuts over the top.

"I just like it because the endive is not frequently used in salads, and it tends to be a little bitter," she said. "The apple sweetens it up a little bit and makes it more approachable. It has a nice crunchy, fresh texture."

1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon orange juice
1 teaspoon honey
Dash of salt
1/4 cup pecans
2 heads of endive, chopped
1 cup arugula
1 apple, sliced thin
1/4 cup dried cherries or cranberries
1/4 cup goat cheese, crumbled (optional)

Steps:

  • To make dressing: In a small bowl, whisk together the oil, vinegar, juice and honey. Season with salt.
  • In a small sauté pan, toast the pecans over medium heat. Allow to cool.
  • Mix together the endive, arugula, apple and cherries (or cranberries) in a medium-size bowl. Toss with enough dressing to coat. Top with the pecans and goat cheese (optional).

1 (11-ounce) log plain or herbed Montrachet
2 extra-large egg whites, beaten with 1 tablespoon water
Fresh white bread crumbs
2 tablespoons good cider vinegar
2 tablespoons good Champagne vinegar
Pinch sugar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 extra-large egg yolk
1 cup good olive oil
Enough mixed salad greens for 6 servings
Olive oil and unsalted butter, for frying

Steps:

  • Slice the Montrachet into 12 (1/2-inch-thick) slices. (The easiest way to slice goat cheese is to use a length of dental floss.) Dip each slice into the beaten egg whites, then the bread crumbs, being sure the cheese is thoroughly coated. Place the slices on a rack and chill them for at least 15 minutes.
  • For the dressing, place the vinegars, sugar, salt, pepper, and egg yolk in the bowl of a food processor fitted with a steel blade and blend for 1 minute. With the motor running, slowly pour the olive oil through the feed tube until the vinaigrette is thickened. Season, to taste.
  • Toss the salad greens with enough dressing to moisten, then divide them among 6 plates.
  • Melt 1 tablespoon oil and 1 tablespoon butter in a saute pan over medium-high heat until just under smoking. Cook the goat cheese rounds quickly on both sides until browned on the outside but not melted inside. Top each salad with 2 warm rounds and serve.

1 cup pomegranate juice
6 ounces goat cheese
1/2 cup finely chopped hazelnuts
3 tablespoons unsalted butter
2 large Belgian endive, halved lengthwise, cut into 4 pieces
kosher salt
fresh ground black pepper
2 medium hineycrisp apples, peeled, cored, and diced
1 medium shallot, finely diced
1 tablespoon cider vinegar
1 teaspoon Dijon mustard
6 tablespoons extra-virgin olive oil
4 ounces Baby Spinach
1/3 cup fresh pomegranate seeds
2 tablespoons thinly sliced fresh chives

Steps:

  • Position a rack in the center of an oven and heat the oven to 425°F.
  • In a small saucepan over high heat, reduce the pomegranate juice to about 1/4 cup (it should be syrupy), about 15 minutes.
  • Meanwhile, mash the goat cheese in a small bowl with a fork until smooth. Form the cheese into four 2-inch-diameter rounds. Put the hazelnuts on a small plate and press the goat cheese rounds into the nuts on all sides to coat. Transfer the cheese to a small baking sheet and bake until the nuts brown and the cheese softens, 8 to 10 minutes.
  • While the goat cheese bakes, melt 2 Tbs. of the butter in a 12-inch heavy-duty skillet over medium-high heat. Arrange the endives flat in the pan (they'll fit snugly), sprinkle with 1/2 teaspoons each salt and pepper, and cook, undisturbed, until browned, 2 to 3 minutes. Flip and cook until the other side starts to soften, 1 to 2 minutes. Transfer to a large plate.
  • Melt the remaining 1 Tbs. butter in the skillet, add the apples and shallot, sprinkle with 1/4 teaspoons salt and cook, shaking the pan often, until the apples start to soften, 2 to 3 minutes.
  • Transfer the pomegranate juice to a medium bowl. Add the vinegar, mustard, and 1/2 teaspoons each salt and pepper; whisk until combined. Gradually whisk in the oil and season with more salt and pepper to taste.
  • In a large bowl, toss the spinach and apples with half of the vinaigrette and season to taste with salt and pepper. Arrange the endives on 4 large serving plates, top with a mound of the spinach mixture, and then the goat cheese. Sprinkle with the pomegranate seeds (if using) and the chives and drizzle with the remaining vinaigrette. Serve.

3 Belgian endive, cored and separated into leaves
1 bunch watercress or 1 bunch spinach, washed
1 granny smith apple, sliced

1/4 cup chopped walnuts (I like to toast them)

Steps:

  • Using a glass jar with a tight lid, combine the vinegar, mustard, garlic, salt, and pepper, and shake well to blend.
  • Add the oil and parsley and shake.
  • On 4 plates, arrange the endive leaves like spokes around each plate.
  • Arrange the watercress or spinach in the center.
  • Preheat the broiler, and arrange the sliced apples slightly overlapping in 4 fan shapes, place in broiler pan.
  • Cut the cheese into 4 slices and top each apple fan with slices of cheese.
  • Broil until golden for approximately 5 minutes.
  • Using a spatula, carefully place the apple slices and cheese on top of the endive.
  • Drizzle the dressing over the salads and sprinkle with walnuts.
  • Enjoy!

2 teaspoons honey
