1 cup all-purpose flour
1/3 cup packed brown sugar
Dash kosher salt
1/2 cup cold butter, cubed
1/3 cup finely chopped pecans
FILLING:
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
2 tablespoons 2% milk
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
Dash kosher salt
1 large egg, room temperature, lightly beaten
JAM:
1/2 cup sugar
2 tablespoons cornstarch
1-1/3 cups chopped fresh strawberries
1-1/3 cups sliced fresh or frozen rhubarb
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350°. Line an 8-in. square baking pan with parchment, letting ends extend up sides. In a small bowl, mix flour, brown sugar and salt; cut in butter until crumbly. Stir in pecans., Press into bottom of prepared pan. Bake until edges just begin to brown, 12-15 minutes. Cool completely on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Beat in milk, lemon juice, vanilla and salt. Add egg; beat on low speed just until blended. Pour over crust., Bake until filling is set, 15-20 minutes. Cool on a wire rack for 1 hour. , For jam, in a small saucepan, mix sugar and cornstarch. Add strawberries, rhubarb and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, until mixture begins to thicken, 6-8 minutes. Cool completely. Spread over filling. Refrigerate until set, 8 hours or overnight. , Using parchment, carefully remove cheesecake from baking pan. Cut into bars for serving.

1 Tbsp. cornstarch
zest and 1 Tbsp. juice from 1 lemon, divided
2 cups chopped rhubarb
1 cup chopped fresh strawberries
1-1/2 cups sugar, divided
1-1/2 cups graham cracker crumbs
1/3 cup butter or margarine, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 tsp. vanilla
4 eggs

Steps:

  • Mix cornstarch and lemon juice until blended. Combine rhubarb, strawberries and 1/4 cup sugar in medium saucepan. Add cornstarch mixture; mix well. Bring to boil on medium heat; cook 5 to 6 min. or until thickened, stirring constantly. Cool completely.
  • Heat oven to 325°F. Combine cracker crumbs, 1/4 cup of the remaining sugar and butter; press onto bottom of 9-inch springform pan.
  • Beat cream cheese, remaining sugar, vanilla and lemon zest in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended.
  • Remove half the fruit mixture; refrigerate until ready to use. Add remaining fruit mixture to cream cheese batter; stir just until blended. Pour over crust.
  • Bake 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours. Top with reserved fruit mixture just before serving.

I was wondering what to do about a dessert and decided on cheesecake. I wanted alot of leftovers so I made the cheesecake into squares!! My first time making cheesecake and this turned out soooo melt in your mouth!! The taste is not rich like normal cheesecake. Its light and heavenly!

3 cups graham cracker crumbs
1/2 cup butter (melted)
4 (250 g) packages light cream cheese
4 large eggs
1/4 cup butter (melted)
1 cup sugar
2 tablespoons real maple syrup
1 tablespoon vanilla
1 (540 ml) can strawberry rhubarb pie filling

Steps:

  • Preheat oven 350 F.
  • In a bowl, mix up the 1/2 cup melted butter and graham cracker crumbs until there are no dry crumbs left. In a 9x13 pan, pat the graham cracker crumbs down firmly. Bake for 15 minutes at 350f.
  • Meanwhile as that is baking, In a large bowl whip up the cream cheese, add in sugar, maple syrup, 1/4 cup butter and vanilla. Add in one egg at a time and whip with electric hand mixer until all eggs are well blended.
  • Take the graham cracker crust out of the oven. Place and spread evenly the cream cheese mixture and bake for 1 hour. You will want to check 30 minutes in and 15 minutes after. At 40 minutes it looks done but the middle is still raw. Dont be afraid to have darker edges, you'll not burn the cheesecake.
  • Once the cheesecake filling is cooked. Chill for 3 hours. I put mine in the freezer with a towel underneath as it was really hot. Pour the pie filling over and spread evenly. Cut into squares once done!

4 teaspoons grated lemon rind
1/2 cup granulated sugar
1/2 cup butter, melted
3 (8 ounce) packages cream cheese
1 1/4 cups granulated sugar
5 eggs
1 1/2 teaspoons vanilla
3/4 teaspoon lemon rind
2 cups coarsely chopped fresh strawberries or 10 ounces frozen strawberries, thawed and chopped
strawberry (to garnish) (optional)

Steps:

  • Preheat oven 325°F.
  • For the crust:.
  • Lightly spray 13x9 pan with vegetable spray.
  • Stir graham cracker crumbs, lemon rind, and sugar together in a small bowl.
  • Stir in butter.
  • Press mixture into the bottom of prepared pan.
  • Bake 8 - 10 minutes or until lightly browned.
  • Remove from oven and cool.
  • For the filling:.
  • Beat cream cheese and sugar until light and fluffy.
  • Add eggs one at a time; beat thoroughly after each addition.
  • Add vanilla and lemon rind; blend until mixed.
  • Stir in strawberries.
  • Pour mixture into baked crust and bake for 45-50 minutes, just until the center is firm to the touch.
  • Turn the oven off and leave the pan inside to cool for 30 minutes with the door closed.
  • Remove from oven and cool on rack.
  • Refrigerate at least 4 hours or overnight.
  • To serve, cut into 3-inch squares and garnish with extra strawberries if desired.

1/2 cup butter (solid type) or 1/2 cup margarine (solid type)
2 cups crushed fresh strawberries or 1 (300 g) package thawed frozen unsweetened berries
1/2 cup granulated sugar
1 (85 g) package strawberry gelatin
1 (2 ounce) envelope Dream Whip
2 tablespoons icing sugar

Steps:

  • Preheat your oven 350°F.
  • Combine flour and sugar.
  • Cut in the butter until crumbly.
  • Press into 8-inch square baking tin.
  • Bake until a very light golden colour about 15 to 20 minutes.
  • In a medium saucepot place two cups crushed fresh or thawed strawberries.
  • Add 1/2 cup white sugar, and bring to a boil.
  • Remove from heat; add Jello powder and stir well until dissolved.
  • Chill until slightly thickened.
  • Prepare Dream Whip dessert topping according to the package directions using the 1/2 cup milk and teaspoons vanilla which it calls for.
  • Fold half of the prepared Dream Whip into the slightly thickened strawberry mixture and pour into cooled crust.
  • Chill in fridge until set. (This should be about one hour or so).
  • Beat the icing sugar into the remaining dessert topping and spread over the set layer.
  • Chill until serving time.

4 (250 g) packages light cream cheese
4 large eggs
1/4 cup butter (melted)
