These are easy and delicious! Use them as an appetizer, or as a main dish. As an appetizer, serve with salsa. As a main dish, serve on a bed of lettuce with all the taco fixin's you love.

1 (14 ounce) package egg roll wrappers
1 pound lean ground beef
1 (1.25 ounce) package taco seasoning mix
1 (4 ounce) can diced green chilies, drained
2 cups shredded pepperjack cheese
4 cups oil for frying, or as needed

Steps:

  • Crumble ground beef into a large skillet over medium-high heat. Cook until evenly browned, and drain off grease. Add taco seasoning, and cook according to package directions. Set aside.
  • Heat 1 inch of oil in a large skillet, or preheat a deep-fryer to 375 degrees F (190 degrees C).
  • Lay out one egg roll wrapper at a time, and place a little more than a tablespoon of the ground beef in the center. Top with a small spoonful of green chilies, and a little bit of shredded cheese. Roll up according to package instructions, and seal edges, wetting with water if necessary. Repeat with remaining wrappers and filling.
  • Fry the rolls in the hot oil until golden brown on all sides, about 5 minutes. Remove from the oil to drain on paper towels. Serve hot and fresh.

Yummy!! This is something a little different and very tasty! Next time I'm planning on Making a HUGE batch, frying them and flash freezing them on cookie sheets so my husband and kids can heat them up when they want too, or so I have a ready made appetizer for unexpected guests!!

2 cups grilled boneless skinless chicken breasts (I marinade mine in 1 T oil, 2 cloves garlic, 1 t cumin, and the juice of one lime)
2 cups monterey jack cheese or 2 cups Mexican blend cheese, shredded
1 (15 ounce) can drained black beans
2 cups frozen sweet corn (unthawed and drained of liquid)
1/2 chopped sweet red pepper
4 -5 diced green onions
2 minced fresh garlic cloves
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder
1 teaspoon cumin (can put 1/2 t more if desired)
1 (16 ounce) package egg roll wraps
oil (for frying)

Steps:

  • Chop the chicken into small dices.
  • Mix all ingredients together.
  • Moisten the edges of an eggroll wrap and put approx 2 tablespoons of filling in the middle.
  • Fold like you would an eggroll (directions and picture are usually on the eggroll wrapper container).
  • Make sure the flap is sealed to keep the filling inside.
  • Heat oil to 350°F and cook just until golden browned (approximately 3-5 minutes).
  • Cut diagonally and serve with guacamole and sour cream.

Nonstick cooking spray
2 1/2 cups shredded Mexican blend cheese
2 cups frozen corn, thawed
One 15-ounce can black beans, rinsed and drained
One 10-ounce package frozen chopped spinach, thawed and squeezed dry
One 4-ounce can diced green chiles, drained
4 scallions, chopped
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 1/2 teaspoons kosher salt
One 16-ounce package egg roll wrappers
1 egg, slightly beaten
5 plum tomatoes, quartered
1 small clove garlic, minced
1/2 jalapeno, seeded and finely chopped
3 scallions, white and light green parts only, finely chopped
1 cup loosely packed cilantro leaves and stems, finely chopped
Juice of 1/2 lime
2 teaspoons kosher salt

Steps:

  • For the egg rolls: Preheat the oven to 425 degrees F. Spray a rimmed baking sheet generously with cooking spray.
  • In a large bowl, combine the cheese, corn, beans, spinach, chiles, scallions, cumin, chili powder, cayenne and salt. Stir together, making sure to break up the clumps of spinach.
  • Have a small bowl of water ready for moistening your fingers.
  • Lay one egg roll wrapper out on a work surface and moisten the edges with your finger. Scoop 1/4 cup of the filling into the center of the wrapper; mound into a 1-inch wide log arranged diagonally across the wrapper, with about an inch of space to the corners. Fold the corners over the filling, gently pressing down on either side to secure the fold. Then, starting at one of the unfolded corners, gently but firmly roll up the egg roll. Place on the prepared baking sheet and repeat until all of the filling has been used.
  • Brush the tops and sides of the egg rolls generously with beaten egg. Bake until golden brown all over, 15 to 20 minutes.
  • For the salsa: Meanwhile, pulse the tomatoes, garlic and jalapeno in a food processor until the tomatoes are almost smooth. Add the scallions, cilantro, lime juice and salt; pulse just to combine.
  • Serve the egg rolls with the salsa on the side, for dipping.

This amazingly tasty recipe was given to me by my aunt about 10 years ago. My family has continued to make it often, and it always is a smashing success! It's adaptable for both for meat-eaters and vegetarians, and is great out of the oven and reheats well. It's a terrific dish for football parties and whenever you're attacked by the munchies. A vegetarian version of ground beef can also be used for the filling.

2 tablespoons vegetable oil
1 pound ground beef
1 large onion, chopped
5 cloves garlic, minced
1 red bell pepper, chopped
1 (1 ounce) package taco seasoning
1 (8 ounce) jar taco sauce
4 (16 ounce) packages egg roll wrappers
1 (1 pound) loaf processed cheese food (i.e. Velveeta®), cut into 1/4 inch thick slices
2 egg whites, lightly beaten
2 quarts canola oil

Steps:

  • Place the vegetable oil and ground beef into a large skillet; cook over medium-high heat until the meat is evenly browned and no longer pink. Reduce the heat to medium. Mix in the onion, garlic, and bell pepper; cook until the vegetables are softened, about 5 minutes. Stir in the taco seasoning and taco sauce. Continue to cook and stir the mixture until the sauce begins to bubble, about 5 minutes more.
  • Working on a clean, flat surface, place 1 egg roll wrapper with a corner facing you. Place 1 tablespoon of the meat mixture in the center of the wrapper and top with a slice of cheese. Fold the corner closest to you over the meat mixture and roll the wrapper over the mixture 1-1/2 times. Fold in the two opposite side corners and continue rolling the wrapper so it covers these corners, tucking them in. Dip two fingers in the egg whites and brush the remaining corner, pressing it to seal. Repeat these steps with a second egg roll wrapper. Let the egg roll rest briefly so the egg white dries and holds the last corner in place.
  • If the egg rolls will not be served right away, preheat oven to 325 degrees F (165 degrees C). Line a heat-proof dish with paper towels.
  • Pour the canola oil into a large wok set over medium-high heat. When the oil begins to shimmer, carefully slip two to three egg rolls into the wok. Cook until the wrappers turn golden brown and bubble slightly, 30 seconds to 1 minute. Use a slotted spoon or strainer to remove from the wok. Place the egg rolls in the prepared dish and put the dish in the heated oven, making sure to remove it after 15 minute or lower the temperature. Continue cooking the remaining egg rolls.

1/2 cup mayonnaise
1/2 cup sour cream
2 ounces cream cheese, softened
2 tablespoons minced fresh cilantro
1 tablespoon chopped chipotle pepper in adobo sauce
6 ounces uncooked chorizo or bulk spicy pork sausage
2 cups crumbled queso fresco
1/4 cup enchilada sauce
1/4 cup chopped green chilies
1 package (12 ounces) wonton wrappers
Oil for frying

Steps:

  • For dipping sauce, in a small bowl, combine the mayonnaise, sour cream, cream cheese, cilantro and chipotle peppers. Cover and refrigerate until serving., Crumble chorizo into a large skillet; cook for 6-8 minutes over medium heat or until fully cooked. Drain. Stir in the queso fresco, enchilada sauce and chilies., Position a wonton wrapper with one point toward you. Place 2 teaspoons of filling in the center. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point. Moisten top corner with water; press to seal. Repeat with remaining wrappers and filling., In an electric skillet, heat 1 in. of oil to 375°. Fry egg rolls in batches for 1-2 minutes on each side or until golden brown. Drain on paper towels. Serve warm with dipping sauce.

1 small green pepper, diced
1 -2 fresh jalapeno, seeded and minced
1 tablespoon chili powder
1/2 teaspoon oregano
1 teaspoon Tabasco sauce
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 lb shredded cheddar cheese
2 egg whites, beaten

Steps:

  • In a large skillet, start browning ground beef.
  • Add onion, green pepper, garlic, jalapenos, salt, chili powder, cumin, and oregano.
  • Cook until meat is thoroughly cooked and vegetables are softened.
  • Drain off any excess grease, and set aside to cool. Stir in Tabasco and cheese.
  • Lay out 1 egg roll wrapper with corner pointing towards you and place 1 heaping T. of the meat mixture into the center of the wrapper.
  • Fold bottom point up to cover meat mixture. Fold left and right points into the center. Roll away from you until top point covers the left and right point.
  • Brush with egg whites to seal.
  • Continue with remaining wrappers.
  • Heat oil in deep fryer to 350 degrees. Cook rolls a couple at a time until brown.
  • Drain on paper towels.

  • Beat the egg with 1 tbsp water. Heat the oil in a medium non-stick pan. Add the egg and swirl round the base of the pan, as though you are making a pancake, and cook until set. There is no need to turn it.

1 teaspoon salt
1 lb ground soy chorizo (meatless chorizo "sausage" You may use meatless crumbles or broken up meatless sausage patties)
1 (15 ounce) can black beans, rinsed and drained
1 (14 1/2 ounce) can Mexican-style tomatoes, undrained
2 cups shredded monterey jack cheese (8 ounces)
6 green onions, finely chopped
1 (1 1/4 ounce) package taco seasoning mix (If using the soyrizo-you may eliminate the taco mix)
28 egg roll wraps
1 egg, lightly beaten
1 cup sour cream
3 garlic cloves, minced
1/4 cup fresh cilantro
1/4 cup salsa (of your choice)
2 scallions
finely chopped fresh cilantro leaves

Steps:

  • Cook rice according to package directions, using 1 teaspoon salt.
  • Cool completely.
