STICKY MAPLE-GLAZED HAM WITH BAKED APPLE SAUCE

Sticky maple-glazed ham with baked apple sauce image

Slow-roast a whole leg of gammon with apple juice, then cover in a sticky spiced glaze for a Christmas treat - perfect sliced hot or cold

Provided by Cassie Best

Categories     Buffet, Main course

Time 6h40m

Number Of Ingredients 18

1 whole unsmoked leg of gammon (about 4.5kg-5kg), on the bone
150ml apple juice
2 cinnamon sticks
2 star anise , plus 8-12 to serve (optional)
10 whole peppercorns
6 cloves
4 bay leaves
pared zest 1 orange
5 small apples (we used Braeburn)
edible gold spray , to decorate (optional)
bay leaves , to decorate (optional)
pared orange zest , to decorate (optional)
250ml maple syrup
50ml apple juice
1 tsp ground cinnamon
1 tsp ground ginger
½ tsp ground cloves
2 tbsp wholegrain mustard

Steps:

  • If your gammon needs to be soaked to draw out some of the salt (ask your butcher), place in a clean bucket or a preserving pan and cover with cold water. Chill overnight, or for up to 3 days.
  • Heat oven to 160C/140C fan/gas 3. If the ham has been soaking, drain it well and place in a large, deep-sided roasting tin. Pour in the apple juice and top up with 400ml water. Add the spices, bay leaves and orange zest. Cover the ham tightly with a few large sheets of foil, scrunching it around the edges of the tin so no steam can escape, then bake for 5 hrs. Meanwhile, mix together the ingredients for the glaze in a saucepan, then bubble until reduced to a sticky glaze. Score the apples around their equator with a small, sharp knife.
  • Remove the ham from the oven and increase the temperature to 200C/180C fan/ gas 6. Carefully transfer the ham to a board - the easiest way to do this is to leave it to cool for 10 mins, then pop on clean washing- up gloves to lift it. Pour away the cooking liquid and discard the aromatics. Use a small, sharp knife to cut and peel away the rind, leaving a thin layer of fat attached to the meat. Line your roasting tin with a few sheets of foil and place the ham in the middle, fat-side up. Use a sharp knife to lightly score the fat in a criss-cross pattern. Return the ham to the oven and bake for 30 mins until the fat starts to crisp and caramelise.
  • If the glaze has become a little thick, splash in a drop of water to loosen it, then brush all over the ham. Place the whole apples in the tin too, and return to the oven for another 20-30 mins, basting the ham every now and then, until dark and sticky all over.
  • Before serving, mash the whole apples (discard the stalks, skin and pips) with a little of the sticky sauce from the roasting tin. We decorated our ham with star anise, sprayed with edible gold spray, and arranged bay leaves and orange peel around the board. Serve warm slices of the ham with the apple sauce, or cold in sandwiches. Will keep for up to 1 week in the fridge, or slice and store in the freezer for up to 2 months.

PINEAPPLE-GLAZED HAM

Pineapple-Glazed Ham image

We spiked the glaze for our retro-chic ham with hot sauce and apple cider vinegar to cut through the cloying sweetness of the original.

Provided by Chris Morocco

Categories     Bon Appétit     Christmas     Christmas Eve     Easter     Dinner     Ham     Pork     Roast     Pineapple     Orange     Holiday 2018

Yield 8-12 servings

Number Of Ingredients 8

1/2 pineapple, peeled, sliced into rings
1 large orange, sliced into thick rounds
1 (10-lb.) cured smoked bone-in ham or 6-lb. cured boneless ham
3 cups pineapple juice
1/2 cup apple cider vinegar
1/2 cup (packed) light brown sugar
1/4 cup hot sauce
Maraschino cherries (for serving)

Steps:

  • Preheat oven to 300°F. Stack 2-3 sheets of foil ample enough to cover ham on a work surface and arrange pineapple and orange slices on top in a single layer. Set ham on fruit (if using a bone-in ham and it has a fat cap, score very lightly, making cuts about 3/4" apart) and wrap up tightly. Transfer to a wire rack set inside a large rimmed baking sheet and bake until an instant-read thermometer inserted into the thickest part of ham registers 115°F, 3-3 1/2 hours for boneless, 3 1/2-4 hours for bone-in.
  • Meanwhile, bring pineapple juice, vinegar, brown sugar, and hot sauce to a boil in a large saucepan. Reduce heat; simmer, swirling occasionally, until thick enough to coat a spoon. Keep warm.
  • Remove ham from oven and increase oven temperature to 425°F. Unwrap ham, peeling back the foil so it covers the baking sheet (this will make for easy cleanup). Once oven is at 425°F, baste ham with warm glaze and return to oven. Bake, brushing with more glaze every 3 minutes or so, until glaze is deeply browned and thermometer registers 125°F, 12-15 minutes. Carefully transfer ham to a cutting board and let rest 30-60 minutes before slicing.
  • While ham is resting, roast fruit, spooning juices over from time to time, until deeply browned, 20-25 minutes.
  • Serve ham with roasted fruit and cherries alongside.

BAKED HAM WITH BROWN SUGAR AND APPLE GLAZE

Baked Ham With Brown Sugar and Apple Glaze image

This is an outstanding ham recipe and has become a family favorite! The ham can even be fully cooked, covered and refrigerated up to 2 days ahead of time, and you can prepare the glaze a day ahead also. Remember save the bone from the ham and freeze for pea soup! Purchase a butt-portion ham (water-added) that is wrapped in heavy plastic for this, the butt is the best! Cooking time is for the last stage of cooking the ham, prep time includes the first cooking of the ham and making the sauce.

  • In a saucepan bring the apple cider and dried apples to a boil over medium heat.
  • Boil until the liquid is reduced to about 1-1/2 cups (this should take about 8-10 minutes).
  • In a small bowl, whisk together the brown sugar, cider vinegar and mustard until well blended.
  • Add to the cider mixture; simmer sauce until reduced to about 2-1/4 cups, stirring occasionally (this shoud take about 5-6 minutes) the sauce can be prepared a day in advance and refrigerated.

MAPLE GLAZED HAM

Maple Glazed Ham image

This Maple Glazed Ham is dripping with flavor, wonderfully moist and beautifully caramelized with the BEST glaze! It only takes minutes of hands on prep and feeds a crowd making it the perfect impressive, hassle free main dish for Christmas and Easter!

Provided by Jen

Time 3h10m

Number Of Ingredients 12

1 bone-in smoked spiral-sliced ham ((8-11 pounds))
Aluminum foil
2 tablespoons unsalted butter, cubed
1 1/2 cups apple cider
1/2 cup pure maple syrup (NOT imitation)
1/2 cup packed light brown sugar
3 tablespoons apple cider vinegar
3 tablespoons Dijon mustard
2 tablespoons yellow mustard
2 teaspoons cornstarch
1/2 teaspoon ground cinnamon
1/4 tsp EACH ground nutmeg, ground cloves, dried thyme, pepper, chili pwder

Steps:

  • Remove ham from refrigerator and let sit at room temperature 2-3 hours.
  • Whisk together all of the Apple Cider Maple Glaze ingredients in a medium saucepan. Bring to a boil. Reduce to a simmer over medium heat, stirring often, until thickened and reduced, approximately 15-20 minutes. Stir in butter until melted. Glaze will thicken more as it stands.
  • Preheat oven to 325 degrees F. Adjust oven rack to lowest position. Pour 2 cups water into bottom of roasting pan IF you have a roasting rack. Place roasting rack inside pan. (Skip step if you don't have a roasting rack.)
  • Roll out 2 large pieces of foil to wrap your ham in. Place ham on foil and brush all over with some of the Glaze, including in between slices. Tightly wrap ham with foil and place on its side on the roasting rack (or bottom of pan). Bake ham until the center registers 100-110 degrees F, about 2 hours (about 12 minutes per pound).
  • Remove ham from oven and increase oven temperature to 400 degrees F.
  • Carefully unfold foil to expose ham and brush ham all over with Glaze (if Glaze has become to thick to brush, return to heat to loosen). Leave ham exposed and bake for 20-30 minutes or until edges are golden brown and caramelized.
  • Remove ham from oven and brush again all over with Glaze. Spoon juices from bottom of pan all over ham. Loosely cover with foil. Let rest for 15 minutes then spoon more juices over ham and serve with any remaining Glaze.

Categories     Bourbon     Roast     Christmas     Dinner     Meat     Ham     Clove     Jam or Jelly     Orange Juice     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 10 to 12 servings

Number Of Ingredients 12

1 (10- to 12-pound) fully cooked, trimmed, bone-in smoked ham (shank end), room temperature
2 cups freshly squeezed orange juice
1/2 cup packed dark brown sugar
3/4 cup bourbon
1/2 cup guava or apple jelly, warmed
2 large shallots, peeled and thinly sliced
3 whole allspice
3 whole cloves
Zest of 1 orange plus 2 oranges cut into 1/4-inch-thick slices
1 (2-inch-long) piece fresh ginger, peeled and grated
Special Equipment
1 (10- by 14-inch) roasting pan; toothpicks; pastry brush

Steps:

  • Position a rack in the lower third of oven and preheat to 325°F.
  • Using a sharp knife, score the fat covering the ham in a 3/4-inch-wide diamond pattern (do not cut into the meat). Place the ham in a 10-by-14-inch roasting pan and add 1 cup water. Roast the ham for 2 hours.
  • While the ham is roasting, prepare the glaze: In a heavy, medium saucepan over moderately low heat, combine 1 cup orange juice, brown sugar, and bourbon. Bring to a simmer and continue simmering for 10 minutes. Add the guava or apple jelly, shallots, allspice, and cloves, and continue simmering until slightly reduced, about 5 minutes. Add the orange zest and the remaining 1 cup orange juice, and bring to a boil. Continue boiling until thickened, about 5 minutes. Add the orange slices and fresh ginger, and cook until the orange slices are tender, about 2 minutes.
  • Once the ham has been in the oven for two hours, drape the glazed orange slices over the ham, securing them with toothpicks, and brush the ham and oranges with about 1/2 cup of glaze, reserving the remainder for serving. Continue roasting the ham until an instant-read thermometer inserted into the thickest part registers 145°F, about 30 minutes.
  • To Serve:
  • Remove the toothpicks from the ham and arrange the orange slices on a platter. Slice the ham and arrange on top of the oranges. Warm the remaining glaze and serve alongside.

GORDON RAMSAY'S HONEY GLAZED HAM RECIPE

Gordon Ramsay's honey glazed ham recipe image

Gordon Ramsay's honey glazed ham recipe is a great staple as it can be served hot or cold. Whether served as a Christmas ham or Sunday lunch it's delicious!

Provided by Gordon Ramsay

Categories     Dinner

Time 4h

Yield Serves: 8-10

Number Of Ingredients 9

3kg unsmoked boneless gammon joint
4 medium carrots, peeled and roughly chopped
1 leek, cleaned and roughly chopped
1 onion, peeled and roughly chopped
1 tsp black peppercorns, lightly crushed
1 tsp coriander seeds, lightly crushed
2 cinnamon sticks, broken in half
2 bay leaves
handful of cloves

Steps:

  • Put the gammon in a large saucepan and pour on enough cold water to cover. Add the carrots, leek, onion, peppercorns, coriander seeds, cinnamon sticks and bay leaves. Bring to the boil, turn down to a simmer and cook for 3 hours, topping up with more boiling water if necessary. Skim off the froth and any impurities that rise to the surface from time to time. If cooking in advance, let the ham cool in the stock overnight. Otherwise, allow it to cool a little, then remove from the pan. Strain the stock (and save for soup etc).
  • To make the glaze, put the sugar, Madeira, sherry vinegar, and honey into a pan and stir over a low heat. Bring to the boil, lower the heat and simmer for 3-4 minutes until you have a glossy dark syrup. Do not leave unattended, as it will easily boil over.
  • Preheat the oven to 170°C/Gas Lift the ham into a roasting tin. Snip and remove the strings and then cut away the skin from the ham, leaving behind an even layer of fat. Lightly score the fat all over in a criss-cross, diamond pattern, taking care not to cut into the meat. Stud the centre of each diamond with a clove. Pour half of the glaze over the ham and roast for 15 minutes.
  • Pour on the rest of the glaze and return to the oven for another 25-35 minutes until the ham is golden brown, basting with the pan juices frequently. It also helps to turn the pan as you baste to ensure that the ham colours evenly.
  • Remove from the oven and allow to rest for 15 minutes before carving.

MAPLE CINNAMON HAM GLAZE

Maple Cinnamon Ham Glaze image

Used this on my Thanksgiving ham and everyone loved it! Great for after cooking the ham, as an extra layer of flavor over the sliced ham. I usually make extra for pouring over the sliced ham and this will by itself cover and glaze a 12-pound ham over the course of the whole cook time to keep the ham moist and tasty.

  • In a heavy-bottomed saucepan mix together sugar, water, corn syrup, food coloring and extract (if using). The mixture will be bright red.
  • Set up your candy thermometer so that the tip is in the mixture and is not touching the bottom of the pot. Put it over high heat and bring it to a boil. Leave it bubbling on high until it gets to be between 300ºF and 310ºF. It will take around 20 minutes but keep your eye on it. It gets really fast at the end.
  • While the sugar mixture is coming to temperature, line a baking sheet with parchment paper and spray it with baking spray. Wash and dry your apples. Stick the sticks down into the tops of the apples. You want to get a good ways in. If your sticks are long, go all the way but not through the other end. If they’re shorter, getting halfway into the apple is good enough.
  • For sparkly apple bottoms, mix together 1/4 cup demerara sugar and 1 teaspoon pumpkin spice (you can leave out the pumpkin spice if you want. What’s crucial is the sugar). Sprinkle the sugar mixture onto your prepared pan.

  • Score the ham in a large crisscross pattern about 1 inch apart and ½ inch deep on all sides, except the cut side. Place the ham, cut side down, in a large disposable foil pan and pour in the apple juice. Loosely cover the ham only with aluminum foil. Brush the cooking grates clean. Grill the ham over indirect medium-low heat, with the lid closed, until an instant-read thermometer inserted in the thickest part of the ham (not touching the bone) registers 120°F, 2 to 2½ hours. Meanwhile, prepare the sweet potatoes.
  • Bring a large saucepan of lightly salted water to a boil over high heat. Add the sweet potatoes and cook until a small, sharp knife inserted into the center of the potatoes meets with just a little resistance, 8 to 10 minutes. Drain and rinse under cold running water. Let cool completely, at least 1 hour.

  • To prepare the ham, preheat the oven to 160°C. Grease a large, shallow roasting pan. Line with greased foil, then baking paper. Sit the ham on a wire rack over roasting tray. Use a small, sharp knife to cut around ham shank.
  • Add 2 cups water to tray and bake for 20 minutes to help separate the skin from the meat. Remove from oven, then, when cool enough to handle, carefully run knife under the skin, around the edge of the ham. Gently lift off the skin in one piece by running your fingers between the rind and the fat. Score ham with horizontal lines spaced 1cm apart. Add apple and onion to pan. Brush ham with one third of the glaze.
  • Increase oven to 200°C and bake ham, brushing with remaining glaze and pan juices every 30 minutes, for a further 1 hour 30 minutes or until ham is golden and sticky and apples and onions are softened and cooked through. If ham should begin to burn or colour too much, cover loosely with foil. Place ham, roasted apples and onions on a platter and serve scattered with rosemary sprigs.

  • Soak the gammon overnight if salty (see tip). Weigh and calculate the cooking time based on 20 minutes per 500g. Put the ham on a trivet or upside down saucer in a large pan. Add 6 cloves, the thyme sprigs and 2 bay leaves. Pour in the apple juice to just cover. Bring to the boil, then simmer for the calculated cooking time. Skim off any scum occasionally
  • Once cooked leave to cool in the cooking liquid until cool enough to handle. Remove from the saucepan and put onto a board. Discard the cooking liquid. With the help of a small knife, cut away the skin, taking care not to remove too much of the fat. Discard the skin (see video in tips).
  • Score the exposed fat in a diamond pattern, making sure not to cut too deeply to reveal the meat. Take a thin slice off the base of the gammon – so it sits upright for glazing – and put into a roasting tin. Stir the jam and sugar together in a bowl. Brush all over the scored fat.
  • Preheat the oven to 220°C/fan200°C/gas 7. Decorate with about 48 cloves by pushing them into the centre of each diamond. Roast for 20 minutes, until golden brown. Leave to cool. Put on a serving platter and decorate with the extra bay leaves and some fresh cranberries.
