Grandma's Old-fashioned Sweet Relish image

This is scrumptious. It is my Grandma Florence's, and she called it "Hamburger Relish". Simple and easy, I can it in pints and give it for Christmas. I've never found any as good.

Number Of Ingredients 10

4 quarts ground cucumbers
1 quart ground onion
4 cups ice cubes
5 tablespoons sea salt
6 cups vinegar
6 cups sugar
2 teaspoons turmeric
1 1/2 teaspoons celery seeds
3/4 teaspoon ground cloves
2 tablespoons mustard seeds

Steps:

  • Combine cukes, onions, ice and salt.
  • Let stand for 2 hours,.
  • then drain.
  • Mix the next 6 ingredients in a large pot.
  • Bring to a boil, add ground cuke mixture, and cook for 20 minutes, or until it begins to thicken.
  • While still hot, seal in sterilized jars.
  • As far as preparation time, I use Grandma's old hand grinder, so I'm sure it would be much faster with a motorized food grinder.

A sweet carrot relish, this is my fave on a toasted bagel or croissant with warm Montreal smoked meat.

3 cups chopped cabbage
3 cups chopped cucumber
3 cups chopped green tomato
3 cups chopped carrot
3 cups chopped onion
½ cup pickling salt
4 cups water
3 cups white vinegar
1 tablespoon celery salt
1 tablespoon mustard seed
6 cups white sugar
1 tablespoon ground mustard
1 tablespoon ground turmeric
½ cup all-purpose flour
3 (1 quart) sterilized canning jars with lids and rings

Steps:

  • Combine the cabbage, cucumber, tomato, carrot, onion, and pickling salt in a large bowl; toss to combine. Allow to sit 2 hours. Rinse the mixture thoroughly with cold water; drain and squeeze to remove excess liquid.
  • Combine the vegetables with the water and vinegar in a large pot. Bring the mixture to a boil and allow to boil for 1 hour.
  • Stir the celery salt, mustard seed, and sugar into the vegetables. Mix the mustard, turmeric, and flour together in a bowl. Carefully spoon 2 tablespoons of the boiling water into the mustard mixture; stir into a paste. Add the paste back into the boiling vegetable mixture; cook and stir until thickened, about 5 minutes more. Cool completely in refrigerator before using.

This is more of a sweet and sour flavored tomato relish. My wifes grandmothers recipe. This stuff is great on everything. Also it is great as a dip for chips!

12 lbs ripe tomatoes
10 onions
4 bell peppers
1 quart vinegar
2 tablespoons salt
1 tablespoon cinnamon
1 tablespoon allspice
1 tablespoon mustard
5 cups sugar

Steps:

  • Note: To add a little spice or zest you may add some japaleno's and cajun creole spice to this.
  • Boil tomato's then core,peel, and dice.
  • combine diced tomato's and all ingredients in a larger boiling pot.
  • Cook until onions and peppers are soft and not crunchy.
  • Let it cool to room temperature then you may freeze, can, refrigerate or chill and serve.

Our family favorite on cold beef or pork. Grandma used to make jars and jars of it every year. I am posting her recipe as she wrote it out. I make mine in my slow cooker now. Grandma never put a cooking time in her instructions but it is a time consuming recipe but well worth the effort.

1 quart rhubarb
1 quart onion
3 cups brown sugar
1 pint vinegar
1 teaspoon cinnamon
1 teaspoon clove
1 teaspoon allspice
1 teaspoon salt
3/4 teaspoon pepper

Steps:

  • Chop rhubarb and onions in small pieces.
  • Add sugar, vinegar and spices.
  • Boil till tender over medium heat.
  • Stirring every few minutes so it doesn't stick to bottom of pot.
  • Seal hot in sterilized jars and process for 15 minutes in a canner. Label jars.
  • Cooking time is a guesstimate. Cook until rhubarb and onions are very soft.

OLD-FASHIONED PICKLE RELISH (TRADITIONAL OR SPICY)



Old-Fashioned Pickle Relish (Traditional or Spicy) image

Once you try this pickle relish, you will never buy store-bought again. I usually chop the veggies in my food processor. I pulse them until they are finely chopped but still on the chunky side. You do not want them pureed. I am not sure about the yield, but I think it is approximately 10-12 half-pints. You can easily reduce that quantities and keep refrigerated after placing in the jars. If you are not going to water-bath the jars, make sure you sterilize them either in the oven, the dishwasher, or a pot of boiling water.

4 cups chopped cucumbers
2 cups chopped onions
1 cup chopped green bell pepper
1 cup chopped red bell pepper
1/4 cup plain salt
4 cups sugar
2 cups cider vinegar
1 tablespoon celery seed
1 tablespoon mustard seeds
1 tablespoon red pepper flakes (for the spicy version)

Steps:

  • Combine the cukes, onions, and peppers in a large bowl. Sprinkle with salt and cover with cold water. Place a layer of ice cubes on top to cover surface of relish.
  • Let stand 2 hours up to 12 hours.
  • Drain thoroughly, pressing out excess liquid.
  • Place drained veggies, sugar, vinegar and spices in a large stainless steel kettle. If making the spicy version, you will add your pepper flakes now also.
  • Bring to a boil over high heat watching so as not to scorch. Simmer for 10 minutes.
  • Pack hot into 1/2 pint jars.
  • Process in a water-bath for 10 minutes.

1/2 cup butter or 1/2 cup margarine
1/4 cup cocoa
2 eggs
1 cup granulated sugar
3/4 cup flour
1/2 cup walnuts (optional)
1 pinch salt

Steps:

  • Preheat oven to 350°F
  • Melt butter in microwave.
  • Add the cocoa and stir.
  • In medium bowl beat eggs until frothy.
  • Add sugar, flour, and salt (also nuts if you are using them).
  • Pour cocoa mixture over egg mixture and stir all together.
  • Put into a greased 8 x 8 pan. Bake for 30 minutes.
  • For a doubled recipe use a 9 x 13 pan.
  • Icing, recipe below.
  • Icing for Best Ever Brownies:
  • 1 1/3 cup icing sugar.
  • 1/3 cup cocoa.
  • 3 tbsp butter or margarine.
  • 1 tbsp & 2 tsp hot water
  • Beat all ingredients together, add more liquid if necessary.
  • Spread over brownies.
