GOBI PAKORA (CAULIFLOWER PAKODA)

Cauliflower pakoda or gobi pakora are crispy and tasty cauliflower fritters. In this North Indian recipe marinated cauliflower florets are coated with savory gram flour batter and deep fried. They make for a wonderful evening vegan snack.

1 medium sized cauliflower ((phool gobi))
2 cups gram flour ((besan))
½ tablespoon Ginger Garlic Paste
½ teaspoon carom seeds ((ajwain))
½ teaspoon red chili powder (or cayenne pepper or paprika)
¼ teaspoon Garam Masala
1 pinch asafoetida powder ((hing))
1 pinch turmeric powder ((ground turmeric))
2 to 3 pinch baking soda ((or baking powder) - optional)
water (- add as required to make a thick flowing batter)
oil (- any high smoking neutral flavored oil or mustard oil for deep frying)
rock salt (edible and food grade) (or regular salt as required)
1 teaspoon chaat masala to sprinkle from above
½ teaspoon lemon jucice to be sprinkled ((optional))
1 or 2 tablespoon chopped coriander leaves for garnish ((cilantro))

Steps:

  • In a pan, Boil enough water with salt.
  • Break or chop the cauliflower in medium sized florets.
  • Rinse them well and add them to the boiling water.
  • Switch off the flame and let the cauliflower florets be immersed in the water for 10 to 12 minutes.
  • Drain the water from the cauliflower florets. In a pan marinate the cauliflower with red chili powder, turmeric powder, ginger-garlic paste, garam masala powder. Mix very well and keep aside for 8 to 10 minutes.
  • In another bowl, make a smooth batter with the besan/gram flour, asafoetida, baking soda or baking powder, salt and water.
  • Next add carom seeds to the batter and mix well.
  • Heat oil in a kadai or deep fryer. You can use any neutral tasting oil with a high smoking point.
  • Take each marinated cauliflower and dip in the batter.
  • Coat each floret evenly with the batter and add them carefully in the medium hot oil.
  • When one side becomes slightly crisp and the batter firms up then turn over with a slotted spoon and continue to fry the other side.
  • Fry till the cauliflower fritters are crisp and golden evenly. You will have to turn the pakora a couple of times for even frying.
  • With a slotted spoon remove the pakoda and drain as much oil as possible. Then keep them on paper towels to remove excess oil.
  • Serve the cauliflower pakoda hot or warm with any green chutney or sauce, sprinkled with chaat masala, lemon juice and chopped coriander leaves. You can also have them with roti or stuff them between bread slices or dinner rolls.

1 (2 lb) fresh cauliflower (broken into about 1-1/2-inch pieces)
3 large eggs, lightly beaten
1 tablespoon fresh minced garlic (or to taste)
2 -3 tablespoons minced onions, minced (optional)
1 teaspoon lousianna hot sauce (or Tabasco to taste)
1 tablespoon flour (might need a tablespoon more to hold together)
1 teaspoon baking powder
1/2 teaspoon paprika (or to taste)
1 -2 teaspoon seasoning salt (or to taste)
1/2 teaspoon black pepper (or to taste)
1 -2 tablespoon fresh parsley, finely chopped
oil (for frying)

Steps:

  • Cook the cauliflower for about 6-8 minutes or until soft enough to mash; drain very well.
  • Place the cauliflower in a large bowl and mash with a fork.
  • Add in the eggs and all the remaining ingredients; mix to combine (adjust all seasonings and hot sauce to taste, if you find that the mixture is too wet then add in a little more flour).
  • Heat a small amount of oil in a large skillet over medium-high heat.
  • Working in batches drop about a heaping tablespoonful of batter into hot oil; brown one side then turn and brown the other side (about 3 minutes per side).
  • Remove to a paper towel.
  • Repeat with remaining batter, adding in a little more oil if needed.
  • Serve with sour cream.

6 cups cauliflower florets
½ cup all-purpose flour
3 extra large eggs
1 teaspoon baking powder
1 (.7 ounce) package dry Italian-style salad dressing mix
½ cup olive oil for frying, or as needed

Steps:

  • Process cauliflower in a food processor finely minced; transfer to a large bowl.
  • Stir flour, eggs, baking powder, and Italian dressing mix into cauliflower.
  • Heat enough olive oil to cover the bottom of a frying pan over medium heat.
  • Drop heaping tablespoons of cauliflower mixture into the hot oil; fry until golden brown, about 3 minutes per side.

1 teaspoon black pepper
2 cloves garlic, minced
½ cup onion, chopped
¼ cup fresh parsley, chopped
½ cup wheat flour, plus additional wheat flour for coating
⅓ cup grated parmesan cheese
1 egg
chive, chopped, to taste
oil, for frying
sour cream, to taste

Steps:

  • Microwave cauliflower for 15 minutes or until tender.
  • Mash cauliflower, mix in salt, pepper, garlic, onions, parsley, flour, grated parmesan and egg.
  • From patties with the mashed cauliflower mix. Coat both sides of patties with wheat flour.
  • Fry in oil until golden brown and crispy on both sides.
  • Add sour cream or chives to taste.
  • Enjoy!

I found the original recipe on another site with half the spices and reviewers said it was too bland so I'm posting it here to try myself with a little more punch. I also want to try mixing some coconut milk into the batter and frying in peanut oil. If it's worth posting I'll add it but if someone else has an opinion there first I'd love to hear it. :)

1/2 cup flour
1 1/2 cups panko breadcrumbs, divided (Japanese bread crumbs)
1 teaspoon garam masala
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon ground cayenne
1/2 teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice
3/4 cup club soda
2 large egg whites
2 (12 ounce) bags cauliflower florets, cut into bite-size pieces
1 tablespoon vegetable oil

Steps:

  • 1. Preheat oven to 475°. In a large bowl, whisk together flour, 1/2 cup panko, the garam masala, baking soda, salt, and remaining spices. Whisk in lemon juice and club soda. Set aside.
  • 2. In a small bowl, use a clean whisk to beat egg whites until foamy.
  • 3. Whisk whites into flour mixture. Using your hands or a spatula, add cauliflower and combine until all florets are coated. Place remaining panko in a medium bowl. Lift florets, 1 at a time, out of batter and toss to coat with panko.
  • 4. Place florets on a large nonstick baking sheet coated with oil. Bake until browned and crispy, about 20 minutes.

1 large head cauliflower (about 1 1/2 pounds), cut into 2-inch florets
1/2 teaspoon salt, or to taste
1/2 teaspoon , hot red pepper flake, , or to taste
1 1/2 recipe Basic Batter for Pakora Fritters
1 to 2 tablespoon garbanzo beans, flour
1/4 cup minced fresh cilantro, including soft stems
1 to 3 fresh green chili pepper, such as serrano, minced with seeds
1/4 teaspoon Garam Masala
1/2 teaspoon coarsely ground ajwain seeds
1 1/2 to 2 cups peanut oil for deep-frying
1/4 cup mustard oil for deep-frying

Steps:

  • 1. Prepare the chaat masala. Place the cauliflower florets in a bowl and toss with salt and red pepper flakes. Set aside to let the flavors blend. Prepare the basic batter. Mix in the chickpea flour, cilantro, green chile peppers, garam masala, and ajwain seeds. Add the florets to the batter. Heat the oil and fry the florets as per directions in INFORMATION AND SPECIAL TECHNIQUES: __Frying Fritters (Pakorae Talna).2. Let cool, then press each fritter between the palms of your hands to flatten. As you do this, the batter goating will break and reveal parts of the florets. Refry the dense florets in hot oil until the pakoras are lightly browned and crisp, 1 to 2 minutes. Drain on paper towels. From the cookbook Arabian Delights. This is a Saudi Arabian dish known as qarnabeed bil kuzbara. The recipe calls for Middle Eastern (also known as Turkish) red pepper and if you can get it then you are very lucky indeed. If not, substitute 3 parts paprika to 1 part cayenne. I think this would taste wonderful with either broccoflower or romanesco instead of cauliflower. Very spicy!

1 head cauliflower, cut into flowerets
1/4 cup olive oil
6 scallions, thinly sliced
3 garlic cloves, minced
1 serrano chili, seeded and minced
1/2 cup fresh cilantro leaves (NOT dried)
1 teaspoon middle eastern red pepper (or substitution)
salt
black pepper
lemon slice, for garnish

Steps:

  • In a large pot steam the cauliflower in salted water for about 6-7 minutes. Drain well.
  • In saute pan, heat the olive oil on medium-high and add the steamed cauliflower, garlic, and chili. Stir fry for about 2-3 minutes being careful not to burn. Add the scallions, the cilantro leaves and the Middle Eastern red pepper. Stir in well. Season with salt and pepper to taste.
  • NOTE: I've never used Middle Eastern red pepper. I have been informed by a kind Zaar member that harissa can be used for the Middle Eastern Pepper. Thanks, FiFi! cg 02-06-06.

1 large head cauliflower, cut into small florets
5 medium potatoes, peeled and diced
1 large onion, diced
4 medium carrots, peeled and diced
2 celery ribs, diced
1 carton (32 ounces) vegetable stock
1 teaspoon garam masala
1 teaspoon garlic powder
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon pepper
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes
Water or additional vegetable stock
Fresh cilantro leaves
Lime wedges, optional

Steps:
