CHOCOLATE NUT ACORNS
"I love to bake, especially for friends," says Penny Clawson of Lititz, Pennsylvania. "These cookies are a particular favorite I make for gatherings in the fall. They look great and taste even better...plus, they're the first treats to disappear when I serve them!"

- In a bowl, cream butter, brown sugar and vanilla. Combine flour and baking powder; add to creamed mixture and mix well. Stir in 1/4 cup of nuts. , Shape rounded teaspoonfuls of dough into 1-1/2-in. x 1-in. ovals. Place 1 in. apart on ungreased baking sheets. Bake at 350° for 15-18 minutes or until light golden brown. Cool on wire racks. , In a saucepan over low heat, melt chocolate chips and shortening. Dip half of each cookie in chocolate. Dip chocolate ends into remaining nuts.

- Cream butter and sugar. Stir in egg yolks and then add almond extract. Add flour, stirring until all ingredients are blended. Add green food coloring to make dough a pretty light green. Preheat oven to 375 degrees. Pinch off small balls of dough, roll between palms of your hands into an acorn shape, pointed at the bottom. place on a greased and floured cookies sheet about 2 inches apart. Bake in a 375 degree oven, about 10 minutes until shininess has disappeared and cookie is solid. Remove cookie from pan and cool. Dip wide end of cookie in melted chocolate. Place on wax paper until chocolate has hardened. M

- Reserve 48 chocolate chips. In a microwave, melt remaining chocolate chips; stir until smooth. Spread the flat side of each kiss with a small amount of melted chocolate; immediately attach each to a cookie., Secure one reserved chocolate chip as a stem onto each acorn. Place on waxed or parchment-lined baking sheets; let stand until set. Store in an airtight container.

- Pipe a small amount of the chocolate onto the flat side of each cookie and immediately press a Hershey’s kiss on top to attach it. Place on the prepared baking sheet, cookie side down, and repeat with the remaining cookies and kisses; place in the freezer for 5 minutes to set.
- Pipe a smidge of the melted chocolate onto a mini chocolate chip and attach it to the top of the wafer to create the stem.
