CHICKEN WITH ROASTED PEPPERS

- Preheat grill or broiler. Season chicken to taste with salt and pepper, and lightly brush with olive oil. Grill or broil, skinside down first, about 10 minutes per side.
- Melt butter in a medium skillet over moderate heat. Cook onions with salt and pepper until soft and clear. Add garlic and paprika, and cook an additional minute, stirring constantly. Add remaining ingredients, bring to a boil, reduce to a simmer, and cook, uncovered, about 5 minutes.
- Place chicken over individual beds of bulgur wheat, rice or pasta. Ladle on sauce and serve.

- Heat oven to 200C/180C fan/gas 6. Place the chicken, onions, potatoes and peppers in a large bowl and season. in another bowl, mix together the garlic, spices, oil, and lemon zest and juice. Pour this over everything and spread the mixture between 2 baking trays.
- Roast for 40 mins, turning over after 20 mins, until the chicken is cooked through. Add the almonds for the final 8 mins of cooking. Serve in bowls with a big dollop of Greek yogurt and some chopped parsley or coriander.

LIME & CORIANDER CHICKEN

- First, spatchcock the chicken so that it will sit flat on the barbecue. All this means is using a pair of kitchen scissors or a sharp kitchen knife to cut down either side of the parson's nose to completely remove the backbone. Then, place the chicken, breast side up, on a chopping board and push down hard to flatten with your hands. Use a sharp knife to make lots of deep slashes in the chicken, about three in each breast and two in each leg.
- In a mortar and pestle, crush the garlic and peppercorns together to a grey, mushy paste. Stir the lime juice into the paste, then the chopped coriander. Put the chicken in a dish and massage the marinade into the chicken. Cover with cling film and refrigerate for at least 2 hours, but preferably overnight.
- To cook the chicken, fire up the barbecue. When the flames die down and the coals are hot and glowing, lay the chicken on the barbecue, skin side up, and sprinkle with salt. You will be tempted to keep prodding it and lifting it up, but leave it alone. After 25 mins, the chicken will look like it's cooked through, but flip it over and give the skin side 10 mins to brown. Lift the chicken onto a chopping board and leave to rest for a few minutes.
- You can now carve conventionally but I like to get a cleaver and chop it straight down into thick slices. Pile it up on a platter and serve scattered with fresh coriander and lime wedges.

- Preheat oven to 450°F. Grate lemon zest into a small bowl; cut 1 lemon in half. Reserve remaining lemon for serving or another use. Add oil, coriander, garlic, several grinds of pepper, and 1 tablespoon plus 1 teaspoon salt to zest in bowl; whisk to combine.
- Place chickens, breast side up, on a rimmed baking sheet fitted with a wire rack. Pat dry with paper towels. Using your fingertips, loosen skin from breasts, being careful not to tear. Season cavities evenly with several grinds of pepper and remaining ½ teaspoon salt.
- Rub lemon-coriander oil all over chickens, including under loosened skin. Stuff each cavity with 1 lemon half and 1 onion half. Tie legs together with kitchen twine and tuck wing tips under.
- Roast for 20 minutes. Reduce oven temperature to 350°F. Continue roasting until chickens are golden brown and crispy and a thermometer inserted in thickest portion of thighs registers 165°F, 1 hour, 5 minutes to 1 hour, 15 minutes. Let chickens rest for 10 minutes. Discard lemon and onion halves. Carve and serve.

- To begin, make the marinade. Finely mince the garlic and coriander stems. Dissolve the sugar in the warm water, then combine all the ingredients for the marinade in a bowl, stirring to mix well. Rub all over the chicken and let the chicken sit in the marinade in a large ziplock bag overnight. Turn the bag occasionally so that all sides stay coated with the marinade
- Take the chicken out of the fridge and let it come back up to room temperature. Pat with paper towels to remove the marinade and place on a roasting tray
- Drizzle lightly with oil, place on the oven’s middle rack and roast for 2 hours, basting it regularly with its own juices. Turn the oven up to 220°C/gas mark 8 and let the chicken cook for another 15–20 minutes, or until golden brown
