Steps:
- Whisk 1/3 cup of oil, 3 tablespoons of lemon juice, fennel seeds, 3/4 teaspoon of salt, and 1/2 teaspoon of pepper in a resealable plastic bag. Add the chicken and seal the bag. Massage the marinade into the chicken. Refrigerate at least 30 minutes and up to 1 day, turning the chicken occasionally.
- Meanwhile, blend the basil, garlic, lemon peel, remaining 1/4 cup lemon juice, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth. Gradually blend in the remaining 1/3 cup oil. Season the basil sauce, to taste, with more salt and pepper, if desired.
- Prepare the barbecue for medium-high heat or preheat a grill pan over medium-high heat. Remove chicken from the marinade. Discard the marinade. Grill the chicken until just cooked through, about 8 minutes per side. Transfer the chicken to serving plates, drizzle with the basil sauce and serve.

- Whisk chicken broth, oyster sauce, soy sauce, fish sauce, white sugar, and brown sugar together in a bowl until well blended.
- Heat large skillet over high heat. Drizzle in oil. Add chicken and stir fry until it loses its raw color, 2 to 3 minutes. Stir in shallots, garlic, and sliced chilies. Continue cooking on high heat until some of the juices start to caramelize in the bottom of the pan, about 2 or 3 more minutes. - Pat chicken pieces dry with paper towels. In a medium bowl, toss chicken with cornstarch until coated; season generously with salt and pepper.

- Preheat oven to 350 degrees.
- Place milk in a shallow bowl.
- Place the bread crumbs and garlic powder in another shallow bowl.
- Dip the chicken in the milk, then coat the chicken well with the bread crumbs.
- Place the butter and olive oil in a skillet and heat till butter melts over medium heat.
- Brown the chicken over medium heat in the butter and olive oil mixture.
- Keep chicken warm in preheated oven.

- Cover each chicken breast with plastic wrap and lightly flatten with a rolling pin. Season well with freshly ground pepper.
- Melt butter in a large frying pan on medium.
- Cook chicken breasts for 3 minutes each side, until golden and almost cooked through. Remove to a platter and keep warm.

- Preheat the oven to 350 degrees.
- Remove the fat, neck, liver and gizzards from the body cavity, then rinse and pat the chicken dry.
- Gently separate the skin from the flesh, running your fingers from the front to the back of the chicken and along the leg and thigh, being careful not to rip the skin or detach it from the bird.
- Mix the butter, chopped basil, parsley, salt and pepper together in a small bowl.
- Rub half of the butter mixture under the loosened skin and then tuck 1/2 of the whole basil leaves under the skin; be sure to get it under the skin around the leg and thigh.
- Put 4 of the garlic cloves into the body cavity of the chicken and scatter the rest in the roasting pan.
- Add the lemon juice and stock.
- Place the chicken, breast-side up, on top of the garlic and stock.
- Roast in the oven, basting occasionally with the pan juices for 1 hour, or until the juices run clear when the thickest part of the thigh is pierced.
- Transfer the chicken to a heated platter and tent with foil to keep warm.
- Pour the juices with the garlic cloves into a blender and puree the mixture.
- (The garlic skins will remain whole.) Strain the puree through a sieve into a medium-sized saucepan, pressing on the garlic skins with the back of a spoon.
- Bring the liquid to a simmer over medium heat, stirring occasionally, about 3 minutes, and add salt and pepper to taste.
- Carve the chicken and serve drizzled with the sauce and garnished with fresh basil leaves.

- Preheat oven to 375 degrees F.
- Lightly grease 12 x 7 x 2-inch casserole.
- In a small frying pan cook chopped bacon until crisp.
- Drain on paper towel.
- In a small bowl, combine bread crumbs, parmesean cheese and parsley.
- Add drained bacon to bread crumb mixture.
- Set aside.
- In a shallow bowl mix vegetable oil with crushed garlic, Worcestershire sauce and mustard.

- Simmer over low heat, continue stirring until sauce just begins to bubble.
- Place egg yolk in a cup and whisk until frothy.
- Stir a tablespoon of the hot sauce into the beaten egg.
- Then whisk beaten egg yolk into saucepan.
- Stir until mixture is thickened, but DO NOT allow to boil.
- Pour hot sauce over the chicken just before serving, or serve in a separate bowl.

- Pre-heat oven to 180C / 375°F
- Mix seasoned breadcrumbs with Italian seasoning in a shallow bowl; dip chicken into beaten egg, then into breadcrumb mixture, thoroughly coating
- Heat olive oil in frying pan; cook chicken, around 7 -10 minutes depending on breast thickness; set aside on paper towel
- Return pan to heat; lightly toast chopped cashews and toss through spinach til wilted; put cashew-spinach mix in a bowl and stir through mozzarella
- Mix melted butter and minced garlic together
- Spread out two sheets of phyllo on top of each other, brush with melted butter, fold in half
- Now place one of the chicken breast halves on phyllo, top with half cashew-spinach-cheese mixture, roll up to form a parcel, brush with butter mixture again
- Place in greased oven tray; repeat with other breast half, cook in pre-heated oven for 20 minutes or til browned
- Meanwhile, make the tomato-basil sauce: In same pan (no need to clean!), pour diced tomatoes, white wine, garlic and seasoning, bring to the boil then simmer 15 minutes, stirring occasionally
- Stir though cream and shredded basil leaves and heat through for 5 minutes; season with salt and pepper as desired
- Serve over phyllo chicken with a side of veggies!
