Found this years ago in a magazine, I have added the coconut to it so if you are not keen on that ingredient just leave it out. In The Netherlands I have a hard time finding mini marshmallows so I cut up large ones. Chilling time not included.

16 ounces dark chocolate or 16 ounces milk chocolate, whatever you prefer.
3 cups mini marshmallows
1 cup walnuts or 1 cup pecans
1/2 cup desiccated coconut (dried, shredded)

Steps:

  • Melt the chocolate in the top of a double boiler.
  • Line an 8x8 tin with foil (you can butter one but this is easy to lift out and peel away).
  • In a large bowl mix the marshmallows, nuts and the coconut.
  • Add the melted chocolate, mix well.
  • Spread into the prepared tin.
  • Chill, when firm cut into small pieces.

  • Line a 9 x 13 inch pan with wax paper.
  • In a microwave-safe bowl, microwave chocolate and butter until melted. Stir occasionally until chocolate is smooth. Stir in condensed milk. Combine peanuts and marshmallows; stir into chocolate mixture. Pour into prepared pan and chill until firm. Cut into squares.

I found this recipe on the inside label of EAGLE brand sweetened condensed milk about 15 years ago and have been making these ever since. You can still find the recipe on the EAGLE web site, but it no longer calls for the 2 types of chocolate chips...I think that's what makes it stand out. ENJOY

1 cup semi-sweet chocolate chips
1 cup milk chocolate chips
2 tablespoons butter
1 can eagle brand sweetened condensed milk
2 cups peanuts
1 (10 1/2 ounce) bag miniature marshmallows

Steps:

  • In heavy saucepan, over low heat, melt chocolate chips and butter with EAGLE BRAND®; remove from heat. You can also do this in the microwave with the same results. Set power to 50% and stir after every minute.
  • In large bowl, combine peanuts and marshmallows; stir in chocolate mixture.
  • Spread on waxed paper-lined 13x9-inch baking pan. Chill 2 hours or until firm.
  • Remove from pan; peel off paper and cut into squares.
  • Store leftovers loosely covered at room temperature.

Great for a bake sale, a gift, or simply an afternoon treat to enjoy with a cuppa, this rocky road is quick to make and uses mainly storecupboard ingredients.

200g digestive biscuits (Rich Tea can also be used)
135g butter or margarine
200g dark chocolate (70% cocoa works best)
2-3 tbsp golden syrup
100g mini marshmallows (chopped regular marshmallows work too)
icing sugar, to dust
raisins, dried cranberries or any dried fruit
nuts
popcorn
honeycomb, broken into pieces

Steps:

  • Grease and line an 18cm square brownie tin with baking paper.
  • Place 200g digestive biscuits in a freezer bag and bash with a rolling pin or just the side of your fist until they're broken into a mixture of everything between dust and 50p-sized lumps. Set aside.
  • In a large saucepan melt 135g butter or margarine, 200g dark chocolate and 2-3 tbsp golden syrup over a gentle heat stirring constantly until there are no or almost no more lumps of chocolate visible, then remove from the heat. Leave to cool.
  • Take the biscuits, 100g mini marshmallows and up to 100g of additional ingredients (dried fruit, nuts, popcorn, honeycomb), if you like, and stir into the chocolate mixture until everything is completely covered.
  • Tip the mixture into the lined baking tin, and spread it out to the corners. Chill for at least 2 hrs then dust with icing sugar and cut into 12 fingers.

8 oz/230 g ((1 and 1/3 cups) chopped bittersweet or semi-sweet chocolate)
½ cup (1 stick/115 g) unsalted butter
1/2 teaspoon vanilla extract
1 and ½ cups miniature marshmallows ((if you only have large marshmallows, cut them into small pieces))
¾ cup (75 g) hazelnuts (or use your favorite - salted peanuts, walnuts, almonds, pecans)
¾ cup (75 g) digestive biscuits or cookies (any kind)

Steps:

  • Line an 8x8-inch baking pan with foil or parchment paper. Set aside.
  • In a medium heatproof bowl, combine chocolate and butter. Heat in the microwave for 30 seconds. Heat more, at 20-second intervals, stirring in between each interval, until melted. Stir in vanilla extract. Fold in marshmallows, nuts, and cookies.
  • Spread mixture into prepared pan. Refrigerate for at least 2 hours, or until set. Lift from pan using the foil or parchment paper, and cut into squares. Keep in the fridge. I like to take it out of the fridge 15 minutes before serving.

1 cup crunchy peanut butter
1 tablespoon butter

Steps:

  • Grease 8 by 9 or 9 inch metal baking pan;line with plastic wrap.
  • In a 4 quart saucepan, combine chocolate chips, butterscotch chips, peanut butter, and butter.
  • Cook over medium heat 2-3 minutes or just until ingredients are melted, stirring constantly.
  • Remove from heat.
  • Stir marshmallows into fudge mixture.
  • Pour into lined pan; spread evenly.
  • Cover pan with plastic wrap and refrigerate fudge until firm, at least 3 hours.
  • Invert fudge onto cutting board; remove plastic wrap.
  • Turn fudge top side up.
  • Cut fudge into 36 pieces.
  • If not serving right away, store in refrigerator.

Steps:

  • Gather the ingredients.
  • Prepare an 8 x 8-inch or 9 x 9-inch pan by lining it with aluminum foil and spraying the foil with cooking spray .
  • Combine chocolate chips, condensed milk, and butter in a large microwave-safe bowl. Microwave in 1-minute increments until melted, about 2 to 3 minutes.
  • Stir to ensure all chocolate is melted, then add vanilla and salt. Stir until fudge is smooth and well mixed. Add 1 cup of the marshmallows and 1 cup of the nuts and stir until well combined.
  • Pour fudge into the prepared pan and smooth it into an even layer.

20 g coconut oil (optional (see notes))
200 g marshmallows (chopped)
20 g (1/4 cup) desiccated coconut
110 g raspberry lollies (chopped in half (see notes))
75 g (1/2 cup) peanuts (chopped (see notes))

Steps:

  • Line the base and sides of an 20cm x 20cm square baking tray with baking paper.
  • Place the chocolate and coconut oil (optional) into a heatproof, microwave-safe bowl. Heat, uncovered, on 50% power, in 30 second bursts, stirring every time with a metal spoon, for 4-5 minutes or until the chocolate and coconut oil melts.Remove from the microwave and stir until smooth.
  • Stir through the chopped marshmallows, coconut, raspberry lollies and peanuts.
  • Spread the mixture into the prepared baking tray and place in the fridge for 2 hours or until completely set.
  • Use a sharp knife to cut into slices (if you are having trouble cutting the slice, run your knife under hot water and then dry completely before cutting - the heat will help to cut the slice evenly).
  • Line the base and sides of an 20cm x 20cm square baking tray with baking paper.
  • Place the chocolate and coconut oil (optional) into a clean and dry Thermomix bowl. Melt for 3-4 minutes, 50 degrees, Speed 2 or until melted.
  • Add the marshmallows, coconut, raspberry lollies and peanuts and mix for 5-10 seconds, Reverse, Speed 3 (using the spatula to help mix), or until completely combined.
  • Spread the mixture into the prepared baking tray and place in the fridge for 2 hours or until completely set.
  • Use a sharp knife to cut into slices (if you are having trouble cutting the slice, run your knife under hot water and then dry completely before cutting - the heat will help to cut the slice evenly).
