1 tablespoon butter
1/3 cup onion (finely chopped)
2 garlic cloves (minced)
1/3 cup canned refried beans
2 tablespoons taco sauce
1 or 2 jalapeno peppers (minced)
1/2 teaspoon salt
1/8 teaspoon pepper
1-1/2 pounds ground chuck (85%)
4 slices Pepper Jack cheese
4 onion buns (split and toasted)
1 cup guacamole
4 slices tomato (thick)
For Toppings:
Garnish: lettuce, to liking
Garnish: mayonnaise, to liking

Steps:

  • Gather the ingredients.
  • In a small microwave-safe bowl, combine the butter, onion, and garlic. Microwave on high power for 1 minute; remove and stir. Continue microwaving for 30-second intervals on high, stirring after each interval, until the veggies are tender. Place in a large bowl.
  • Add the refried beans, taco sauce, jalapeno peppers, salt, and pepper to the onion mixture and stir. Then add the ground chuck and mix gently but thoroughly with your hands.
  • Form into 4 patties. Press your thumb into the center of each patty so the burgers don't puff up while cooking.
  • Prepare and preheat the grill. Cook the burgers for 5 to 8 minutes on each side, turning once, until a meat thermometer registers 160°F. Add the cheese slices during the last minute of cooking so it melts.
  • Assemble the burgers with the toasted buns, guacamole, tomato, lettuce, and mayonnaise.

1 medium zucchini
2 scallions, finely chopped
1 pound ground turkey (94% lean)
1 large egg, beaten
1 teaspoon chili powder
½ teaspoon Kosher salt
2 tablespoons canola oil
4 slices Monterey jack cheese
4 burger buns, split and toasted
1 cup chunky salsa

Steps:

  • 1. Place a box grater on 2 sheets of paper towels. Grate the zucchini on the large holes of the grater. Roll in the paper towels to squeeze out as much liquid as possible. Transfer to a large bowl and mix in the scallions, turkey, egg, chili powder, and salt until well combined. Form into 4 burger patties the same diameter as your buns.
  • 2. Heat the oil in a large skillet over medium heat. Add the burgers and cook until browned on the bottoms, about 7 minutes. Carefully flip and cook until cooked through, about 8 minutes. Place a slice of cheese on top of each burger, then transfer to the bottom buns. Top with the salsa and the top burger buns.
  • 3. Once the stovetop is cool, wipe up any oil splatters or meat juices that may have spilled on the counter with Clorox® Disinfecting Wipes*. Rinse hands once complete.
  • *Use as directed. For surfaces that may come in contact with food, a potable water rinse is required.

2 cups precut vegetable stir-fry mix (broccoli, bell peppers, onions and/or mushrooms)
1/4 cup extra-virgin olive oil
1 cup frozen cooked brown rice
Kosher salt
1 teaspoon ancho chile powder
1/2 teaspoon ground cumin
1 15-ounce can black beans, drained and rinsed
Freshly ground pepper
1/3 cup breadcrumbs
1 tablespoon chipotle mayonnaise, plus more for topping
4 kaiser rolls
Shredded lettuce, sliced avocado, sliced tomato and pickled jalapeños, for topping
Sweet potato chips, for serving

Steps:

  • Chop the stir-fry mix into 1/2-inch pieces. Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the vegetables, brown rice and a big pinch of salt. Cook, stirring, until the vegetables are softened, about 5 minutes. Stir in the chile powder, cumin, black beans, 3/4 teaspoon salt and a few grinds of pepper. Cook until the beans are hot and the skillet is dry, about 2 minutes.
  • Transfer the mixture to a food processor; reserve the skillet. Pulse 5 to 6 times, until the mixture holds together but is still chunky. Scrape into a large bowl and stir in the breadcrumbs and chipotle mayonnaise. Shape into 4 patties, about 4 inches wide. Place the patties on a plate, cover with plastic wrap and freeze to firm up, about 15 minutes. Meanwhile, split and toast the rolls.
  • Wipe out the reserved skillet, add the remaining 2 tablespoons olive oil and heat over medium-high heat. Add the patties and cook until heated through and a crust forms, about 2 minutes per side. Season with salt.
  • Serve the patties on the rolls with lettuce, avocado, tomato, pickled jalapenos and chipotle mayonnaise. Serve with chips.

1 1/2 teaspoons chipotles in adobo sauce (recommended: La Victoria)
3/4 cup mayonnaise (recommended: Best Foods)
1 1/2 pounds lean ground beef
2 tablespoons Tex-Mex chili seasoning (recommended: McCormick's)
2 teaspoons chipotles in adobo sauce (recommended: La Victoria)
1/4 cup beer of choice
Salt and pepper
2 slices pepper Jack cheese (recommended: Tillamook)
Hamburger buns, toasted
Lettuce, tomatoes, onions
Sliced avocado, optional

Steps:

  • For the chipotle mayonnaise: Remove peppers from can (you may want to use rubber gloves if sensitive to peppers). Carefully split open and scrape out seeds. Finely chop peppers; set aside.
  • In a small bowl, stir together 1 1/2 teaspoons chopped chipotle peppers and mayonnaise; set aside covered in refrigerator until ready to use.
  • For the burgers: In a mixing bowl, stir to combine ground beef, chili seasoning, 2 teaspoons chopped chipotles, and beer. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the buns; set aside covered in refrigerator if not cooking immediately.
  • Set up grill for direct cooking over high heat. Brush and oil grill before cooking.
  • Season burgers with salt and pepper and place on hot oiled grill. Cook 4 to 5 minutes per side for medium. Place cheese slices on burgers 2 to 3 minutes before burgers are done.
  • Serve hot on toasted bun with lettuce, tomato, onion, sliced avocado, if desired, and a dollop of chipotle mayonnaise.
  • INDOOR: Follow instructions for preparing burgers. Preheat broiler. Place burgers on wire rack over foil-lined baking sheet or broiler pan. Broil 6 inches from heat source for 4 to 5 minutes per side for medium. Place cheese slices on burger 1 to 2 minutes before done. Serve hot on toasted bun with lettuce, tomato, onion, sliced avocado (if desired), and a dollop of chipotle mayonnaise.

1 avocado, halved

Juice of 1 lime

4 sesame potato buns

Steps:

  • Combine the turkey, garlic, paprika, 3/4 teaspoon salt and a few grinds of pepper in a medium bowl; mix with your hands until just combined. Form into four 1/2-inch-thick patties; set aside.
  • Combine 1/2 avocado, the mayonnaise, lime juice and 1/4 teaspoon salt in a medium bowl; mash until smooth. Thinly slice the remaining 1/2 avocado and season with salt and pepper. Set aside for topping.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat (or preheat a grill to medium high and oil the grates). Add the burgers and cook until browned, 3 to 4 minutes per side. Top each burger with a slice of cheese; cover and cook until the cheese melts, about 30 seconds.
  • Meanwhile, split and toast the buns; spread the avocado mayonnaise on the cut sides. Serve the burgers on the buns with lettuce, the sliced avocado and tortilla chips.

4 slices pepperjack cheese
4 hamburger buns, split
4 leaves lettuce

Steps:

  • Preheat grill for medium-high heat. In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside.
  • In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, 1 tablespoon Cajun seasoning, and Worcestershire sauce using your hands. Divide into 4 balls, and flatten into patties.
  • Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. During the last 2 minutes, lay a slice of cheese on top of each patty. Spread the seasoned mayonnaise onto the insides of the buns. Put burgers in the buns, and top with lettuce and tomato to serve.

Sizzling with flavour! This Tex-Mex Burger has a lot of taste appeal and the visual isn't half-bad, either. Your mouth will explode with the flavours of spicy-hot Tex-Mex cuisine, tempered with a guacamole dressing. Members of the Kitchen Tourists suggested ingredients suitable for this delectable treat and so: Ed&Theresa - avocado; Muffin Goddess - lime; MA HIKER - hot sauce; fluffernutter - chipotle in adobo; Melody Ashcraft - tomato; Mandy from Oz - scallions; Laffer - cilantro; ms.susan - chili powder; TansGram - monterey jack cheese; and I provided the pickled jalapeno rings as per Recipe #170474. 1 avocado
1 tablespoon mayonnaise
3 teaspoons fresh lime juice (or 2 tsps fresh lemon juice)
1 dash hot sauce (not too much, more heat will come with the minced chipotle)

1 plum tomato, seeded and chopped
1 tablespoon minced chipotle chile in adobo
1/4 cup thinly sliced scallion
1 tablespoon minced fresh cilantro, to taste
1 1/2 lbs lean ground beef
1 1/2 teaspoons chili powder

4 slices monterey jack cheese or 4 slices cheddar cheese
4 whole wheat hamburger buns, we like them toasted on the grill (if you can get bakery, seeded rolls, so much the better)
pickled jalapeno pepper, rings (store bought or Pickled Jalapeno Rings)
4 buttery-crisp lettuce leaves

Steps:

  • Halve, pit and peel avocado.
  • Mash ¼ of avocado with a fork; add mayonnaise, lemon juice, hot sauce and salt to taste; mash with back of fork until smooth.
  • Stir in tomato, chipotle, scallion, cilantro, and remaining avocado, cut into ¼ inch cubes and fold together gently but thoroughly. Cover surface with plastic wrap and refrigerate until ready to use.
  • Mix chili powder, cumin, oregano and salt into beef. Handling beef as little as possible, divide it into quarters; shape each quarter into a patty.
  • Heat a well-seasoned, ridged, cast-iron pan over moderately-high heat (or grill on bbq) until hot and cook the hamburgers 5 ½ minutes per side for rare.
  • Top with cheese slices and cook, covered, for 1 minute, to melt cheese.
  • Transfer to a plate and let stand, tented loosely with foil, for 3 minutes, to finish cooking.
  • Transfer to hamburger buns; top with guacamole dressing, sliced, pickled jalapeno rings (to taste) and lettuce.

2 tablespoons vegetable oil, such as safflower, plus more for grates
3 medium zucchini or yellow squash, halved lengthwise and thinly sliced crosswise
1/2 medium red onion, finely chopped
3 tablespoons fresh lime juice
Coarse salt and ground pepper
1 1/2 pounds ground turkey (93 percent lean)
2 teaspoons chili powder
4 ounces pepper Jack cheese, thinly sliced
4 thick slices country bread, halved
1 avocado, halved, pitted, peeled, and thinly sliced
Store-bought salsa, for topping (optional)

Steps:

  • Heat grill to medium-high; lightly oil grates. In a medium bowl, combine zucchini, onion, lime juice, and oil; season with salt and pepper. Let zucchini salad marinate at room temperature, 15 minutes (or refrigerate, up to 1 day).
  • Form turkey into 4 patties (4 inches each). Using thumb, make an indentation in center to prevent burgers from rounding on top. Sprinkle with chili powder; season with salt and pepper. Cover and grill until an instant-read thermometer inserted in center of a burger reads 155 degrees, 4 to 5 minutes per side.
  • Top burgers with cheese. Cover and continue to grill until cheese has melted and internal temperature reaches 165, 2 to 4 minutes more. Meanwhile, grill bread until lightly charred. 3/4 cup chopped zucchini
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1 1/4 lbs 95% lean ground turkey or 1 1/4 lbs ground beef
1 1/2 tablespoons taco seasoning mix
3/4 cup shredded reduced-fat monterey jack cheese (or nonfat cheese) or 3/4 cup Mexican blend cheese (or nonfat cheese)
6 light hamburger buns or 6 multi-grain hamburger buns
1/4 cup salsa (or mix half and half) or 1/4 cup ketchup, plus (or mix half and half)
2 tablespoons salsa (or mix half and half) or 2 tablespoons ketchup (or mix half and half)
6 slices red onions or 6 slices sweet white onions

Steps:

  • Place the mushrooms, zucchini, onion, and red bell pepper in the bowl of a food processor and process until the vegetables are finely chopped.

1 texas sweet onions, sliced (and reserve 1/8 cup for salsa below)
1 pinch sugar
1 tablespoon adobo sauce (from the can of prepared chipotle peppers in adobo or make your own Chipotles En Adobo/ Chipotles Chili in Adobo Sauce)
1 tomatoes, diced fine
1 avocado, diced fine
1 lime, juice of
1 teaspoon tequila
2 tablespoons fresh cilantro, chopped (divided for burgers)
2 tablespoons fresh parsley, chopped (divided for burgers)
1 lb ground beef (vegetarians use tvp as described in the description)
1/3 cup corn (fresh or frozen)
1 -2 chipotle chilie in adobo seasoning (seeded for less heat and finely minced plus 2 tablespoon chipotle sauce)
2 garlic cloves, minced
1 teaspoon cumin
1/2 teaspoon Mexican oregano
5 ounces monterey jack cheese or 5 ounces queso blanco, finely diced
1 ounce light sour cream (optional) or 1 ounce fat free sour cream (optional)
4 ounces fat-free refried beans
40 tortilla chips (use No trans fat)

Steps:

  • Caramelized Adobo Onions:.
  • Heat the oil over medium high heat.
  • Add onions and reduce the heat to medium-low.
  • Cook slowly, stirring occasionally, until golden brown and caramelized, about 20 minutes.
  • Add the salt and pepper to taste, sugar and adobo sauce stir well to combine.
  • Meanwhile make Tomato and Avocado Salsa:.
  • Add all ingredients from the salsa using 1/2 the cilantro and parsley and added the 1/8 cup finely mined onion. Chill till ready to serve.
  • TEXotic-MEXotic BURGERS:.
  • Preheat oven to 375°F.
  • Mix all burger ingredients together including the remaining cilantro and parsley. Make burgers using 1 tablespoon full of meat mixture.
  • Place on a cookie sheet pan and bake for 5-10 minutes. Don`t overcook.
  • Meanwhile place chips on serving platter topping with just a tad of refried beans (used just to hold the mini burgers on).
  • Remove burgers from oven and place on beans be sure to get the cheese that oozed out (go ahead sneak some for yourself ;) ), topping with a tad of sour cream, Caramelized Adobo Onions, and salsa.

  • Alternate: Yes you can make regular sized burgers just bake a bit longer till desired doneness.

Ground turkey has it rough in the reputation department. It's notoriously dry and flavorless, especially in burger form, and it's usually only preferred to beef when healthiness is a factor. But not for long! We can finally take back the bad rap of crumbly turkey burgers everywhere with these moist and juicy Tex-Mex-inspired patties, all thanks to a humble can of creamed corn. On the flavor front, we've got spices, herbs, veggies, cheese, and a chipotle mayo, so there's no chance this formerly blank canvas is going to be a bland burger.

1/2 cup mayonnaise
2 teaspoons sauce from canned chipotles in adobo sauce
2 teaspoons fresh lime juice
1/2 teaspoon kosher salt
1 pound lean ground turkey
1/4 cup canned creamed corn (see Cook's Note)
1/4 cup breadcrumbs
1 large egg
1/4 cup minced onion
2 tablespoons chopped fresh cilantro
1 1/2 teaspoons ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
Cooking spray
4 slices Monterey Jack cheese
4 brioche hamburger buns
Lettuce, tomato, and avocado, for topping

Steps:

  • Make the mayo: In a large bowl, whisk together the mayonnaise, adobo sauce, lime juice, and salt. Cover and refrigerate for up to 2 days.
  • Make the burgers: In a large bowl, combine the ground turkey, creamed corn, breadcrumbs, egg, onion, cilantro, cumin, salt, and pepper. Using your hands, mix together the ingredients just until combined. Shape the mixture into four patties.
  • Heat a large skillet over medium heat, then coat the skillet with cooking spray. Add the patties and cook for 5 minutes on one side, then flip them and cook until they are no longer pink and have reached an internal temperature of 165 degrees F, an additional 10 minutes. Top each burger with a slice of cheese.
  • Spread a portion of the chipotle mayo on the bottom half of each bun. Top the mayo with a burger, then add lettuce, tomato, avocado, and the top half of the bun and serve.

1 jalapeno pepper, seeded and finely chopped
salt and pepper
4 soft corn tortillas
1 ripe avocado, pitted and sliced
1/2 cup shredded sharp cheddar cheese
12 plum tomatoes, seeded and diced
1/2 cup cilantro, chopped
1/2 cup vidalia sweet onion, chopped
1 tablespoon jalapeno pepper, seeded and chopped
1/4 cup fresh lime juice
salt and pepper

Steps:

  • Burgers:.
  • Preheat broiler or grill to medium high.
  • Using wooden spoon, mix together the ground beef, jalapeno, 1/4 cup of the salsa and salt and pepper in large bowl until the ingredients are well combined.
  • Form into 4 patties.
  • Broil or grill, flipping once until cooked through, about 4-5 minutes each side.
  • Place tortillas in microwave,and cook on high for about 20 seconds.
  • Arrange burger on warm totilla and top with avacodo slices, shredded cheese and salsa.
  • Wrap like burrito.
  • Salsa:.
  • Mix all ingredients in small glass bowl.
  • Can be used immediately if using for the burgers, if using as dip, let sit in fridge for at least 1 hour.
  • Make sure to wear protection on your hands when handling the jalapeno's!

1 15 1/4-ounce can whole kernel corn, drained, 1/2 cup liquid reserved
1/2 cup plus 1 tablespoon cornmeal
1/2 cup finely chopped onion
1/3 cup finely chopped red bell pepper
1/2 teaspoon grated lime peel
1/4 cup cooked white rice
3 tablespoons chopped cilantro
4 teaspoons diced jalapeño chili
1/2 teaspoon salt
1/2 teaspoon ground cumin
Nonstick vegetable oil spray
4 no-lard 9- to 10-inch-diameter flour tortillas (99% fat-free)
8 tablespoons light sour cream
8 tablespoons purchased salsa

Steps:

  • Blend 1/2 cup corn kernels and 1 tablespoon cornmeal in processor until moist clumps form. Add 3/4 cup corn kernels; process 10 seconds (reserve remaining corn for another use). Transfer corn mixture to heavy medium nonstick saucepan. Add 1/2 cup corn liquid, onion, bell pepper and lime peel. Cover and cook over very low heat until thick and firm, stirring often, 12 minutes. Mix in rice, cilantro, jalapeño, salt and cumin. Drop 1/4 of mixture onto each of 4 pieces of foil; press pieces into 3/4-inch-thick patties. Let stand until completely cool.
  • Prepare barbecue (medium heat). Spray both sides of burgers with nonstick spray; grill until crisp, about 5 minutes per side. Grill tortillas until pliable, about 30 seconds per side. Transfer tortillas to plates. On each tortilla place 1 burger, 1/4 of sour cream and 1/4 of salsa. Fold tortillas over to enclose.

1 medium onion, minced
1 (1 1/4 ounce) envelope taco seasoning, if using zaar recipe, then the equivalent, 1/4 cup
1 cup shredded lettuce
1 cup shredded cheddar cheese
1 large tomatoes, thinly sliced
taco sauce (not picante, but the smooth sauce)
6 hamburger buns

Steps:

  • Brown ground chuck and onions in skillet on medium high till meat is no longer pink.
  • Add taco seasoning (do not add water to mix) and toss with the meat to coat, cooking for about 5 more minutes.
  • Lightly butter the inside of the buns and toast in skillet or under broiler till nice and brown.
  • Spread the taco sauce on the inside of each bun, add taco meat, shredded lettuce, cheese and tomato.
  • Enjoy!
